Baked Salsa Chicken with Tomatoes

Serves 6 in about 35 minutes. A stove recipe built around taco seasoning.

Ingredients

  • 3 large chicken breasts skinless-boneless
  • 2 packets taco seasoning
  • 1 15-ounce can diced tomatoes (or diced tomatoes with green chiles)
  • 2 cups salsa

Method

  1. Spray the baking dish with cooking spray.
  2. Tip in the chicken and season both sides with 1 of the taco seasoning packets.
  3. Tip in the diced tomatoes over the chicken.
  4. Scatter the remaining taco seasoning packet over the tomatoes.
  5. Tip in the salsa over the chicken.
  6. Cook uncovered for 25-35 minutes or until the internal temperature of the chicken is 165°F in the thickest part. Don't overbake!
  7. Lift out from the oven and use 2 forks to shred the chicken and mix with the sauce (Be careful of the hot pan!).
  8. Plate on tortillas, taco shells, over rice, or even a salad. Load up with any of your favorite garnishes.
