Ground Beef Cabbage with Tomato Sauce

Serves 6 in about 40 minutes. The skillet brings paprika and tomatoes together.

Ingredients

  • 1 pound lean ground beef
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 ½ teaspoons italian seasoning
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon balsamic vinegar (optional, but very good)
  • 1 cup beef broth
  • 1 15-ounce can diced tomatoes
  • 1 15-ounce can tomato sauce
  • 1 head green cabbage, chopped

Method

  1. In a large skillet, brown the ground beef until mostly done. Then add the onion and cook until softened. Drain any grease.
  2. Stir in the garlic, salt, black pepper, paprika, Italian Seasoning, Worcestershire, and balsamic, if using. Mix well.
  3. Tip in the can of diced tomatoes, tomato sauce, and beef broth. Heat to a low simmer and cook about 10 minutes, while stirring now and then so nothing sticks. The sauce should reduce a little.
  4. Tip in the chopped cabbage on top and press it down into the sauce with a spoon. Then put the lid on the pan and bring back to a low simmer.
  5. When the cabbage starts to cook down, you should be able to stir the mixture carefully without it spilling over. Just cook and stir occasionally, until the cabbage is soft to your liking.
  6. Plate over rice.
