Condensed Cream of Chicken Soup with Flour

Serves 6 in about 25 minutes. The pot starts with milk, then garlic powder.

Ingredients

  • 4 cups chicken broth
  • ¼ cup chicken breast, diced
  • 2 ½ cups whole milk
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • ¾ teaspoon garlic powder (or onion powder)
  • 1 ¼ cup all-purpose flour

Method

  1. Stir in the broth and diced chicken to a medium saucepan and bring to a simmer. Take pan off of the heat.
  2. Lift out 1 cup of the broth and add to a mixing bowl. Stir in the milk, spices, and flour to the bowl and whisk until combined and smooth.
  3. Tip in flour mixture into the saucepan over a medium flame and stir slowly and continually for 6 minutes. The mixture will thicken. Once soup thickens to coat the back of a spoon, it's done.
  4. Lift out from the heat and use immediately or store in an air-tight container.
