Pressure Cooker Country Style Ribs
Instant PotServes 4Prep 10 minutes50 minutes

Serves 4 in about 50 minutes. Spice rub goes in first, and barbecue sauce finishes the pot.
Ingredients
- 3-4 lbs country style pork ribs* (boneless or bone-in)
- ⅓ cup spice rub (something smoky is really good. check out my recipe - see notes)
- 2 cups apple juice (or water, beer, broth, etc.)
- 1 tablespoon liquid smoke
- ¼ cup apple cider vinegar
- 1-2 cups barbecue sauce (your favorite brand or homemade)
Method
- Rub the ribs with the spice rub on all sides. Leave it to the ribs sit while you prepare the pressure cooker.
- Tip in the apple juice, liquid smoke, and apple cider vinegar to the inner liner pot of the pressure cooker. Set the metal trivet/rack in the pot.
- Set the ribs on the trivet, trying not to overlap by much.
- Set the lid on the pot and set the steam release knob to the Sealing position. Then press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 25 minutes.
- When the cook time is finished, let the pot sit undisturbed for 10 minutes (10 instant Natural Release). After that 10 minutes, immediately release the remaining steam/pressure manually (avoids overcooking the ribs).
- When the pin in the lid drops down, open the lid.
- Use tongs to remove the ribs to a foil lined baking pan. Slather barbecue sauce all over them.
- Set the oven broiler to 350° - 400° F to start heating it up.
- Set ribs under the broiler for a few minutes to caramelize the sauce. Watch them carefully to make sure they don't burn or get dried out.
- Plate with a little extra bbq sauce for dipping.
