Serves 6 in about 35 minutes. Ground turkey beef goes in first, and tomato paste finishes the pot.
Ingredients
- 2 tbsp olive oil
- ½ onion, diced
- 1 lb lean ground turkey or beef (97% lean)
- 3 cloves garlic, pressed
- 2 tsp ginger powder
- 1 tsp chili powder
- 2 tsp smoked paprika
- ¼ - ½ tsp red pepper flakes
- ½ tsp salt
- ¼ tsp pepper
- 2 tbsp soy sauce
- 2 tsp dijon mustard
- 2 tsp apple cider vinegar
- ¼ cup teriyaki sauce
- 2 tbsp brown sugar
- 1 (20 oz) can crushed pineapple (with juice)
- ½ cup ketchup
- 1 (6 oz) can tomato paste
- 6 pineapple rings
- 6 hawaiian or whole wheat hamburger buns
Method
- Turn on the pot's Sauté setting. When it is hot, add the olive oil and the onion and cook for two minutes, while stirring now and then.
- Tip in the ground meat and stir, breaking it up. Simmer about 3 minutes.
- Stir in the garlic and stir.
- Tip in the ginger, chili powder, smoked paprika, red pepper flakes, salt, and pepper. Mix well.
- Stir in the soy sauce, Dijon, vinegar, teriyaki sauce, and brown sugar. Mix well, and cook for 1 instant, while stirring often.
- Stir in the crushed pineapple and stir.
- Tip in the ketchup and tomato paste, but do not stir. Leave it sitting on top. Turn off the Sauté setting.
- Close the lid and set the steam release knob to the Sealing position.
- Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 4 minutes. High Pressure. The pot will take several minutes to come to pressure.
- When the cook cycle has finished, turn off the pot and let it sit undisturbed for 5 minutes. Then turn the steam release knob to the Venting position to release the remaining steam/pressure.
- When the pin in the lid drops back down, open the lid.
- Mix the sloppy joe mixture.
- Plate on Hawaiian or whole wheat hamburger buns and top with a pineapple ring before adding the top bun. Aloha!
