Pressure Cooker Spaghetti Bolognese

Serves 6 in about 43 minutes. A pressure cooker recipe built around ground pork and heavy cream.

Ingredients

  • 2 tablespoons olive oil
  • 1 lb ground pork (or lean ground beef)
  • ½ medium yellow onion, diced
  • 1 medium carrot, diced
  • 1 celery rib, diced
  • 2 tablespoons minced garlic
  • ½ cup white wine (or use more broth)
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon italian seasoning
  • 2 cups beef broth
  • 12 oz spaghetti pasta, uncooked
  • 1 28-oz can crushed tomatoes, with juice
  • 2 tablespoons tomato paste
  • ⅓ cup heavy cream

Method

  1. Turn on the pot to the sauté setting. Once the pot is hot, add the oil, then add the ground pork. Brown the meat, breaking it up as you stir it.
  2. Tip in the onion, carrots, celery, and garlic and continue to sauté for 5 minutes, while stirring now and then. Drain excess fat if you want it.
  3. Stir in the white wine to deglaze the pot (using a wooden spoon to scrape up all of the browned bits from the bottom of the pot).
  4. Stir in the salt, pepper, and Italian seasoning, and beef broth. Mix well. Cancel the Sauté setting.
  5. Break the spaghetti noodles in half and add on top of the meat mixture in a random pattern (so all of the noodles aren't laying side by side against each other. See article for photo). Helps prevent clumping.
  6. Stir in the crushed tomatoes over the top of the noodles, covering them as much as possible, and Do Not Stir.
  7. Tip in the tomato paste on top of the tomatoes and again, Do Not Stir (this prevents the Burn Error).
  8. Close the lid and turn the steam release valve to the Sealing position, if not self-sealing.
  9. Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 7 minutes (8 minutes for softer noodles). High Pressure. The pot will take several minutes to come to pressure.
  10. When the cook cycle has finished, turn the steam release valve to the Venting position to Quick Release the steam/pressure. When the pin in the lid drops back down, open the lid. Mix well to separate any noodles that may have stuck together.
  11. Mix in the heavy cream and let sit for 3 minutes.
  12. Plate as-is or garnish with grated parmesan cheese.
