Instant PotServes 4Prep 5 minutes1 hour

Serves 4 in about 1 hour. The pot starts with poultry seasoning, then flour.
Ingredients
- 1 cup water
- 1 tablespoon olive oil
- 2 teaspoons poultry seasoning
- 3 teaspoons rubbed sage
- 1 teaspoon coarse salt
- ½ teaspoon black pepper
- 1 2-6 lb turkey breast (or whatever will fit in your pot)
- 3-4 large potatoes
- 1 small onion, chopped
- 2 garlic cloves, minced
- ⅓ cup butter
- ⅓ cup flour
Method
- Put the water in the inner liner of the pressure cooker, and put the wire rack/trivet in also.
- Rub the turkey breast with the olive oil and rub the spices all over it.
- Set the turkey breast in the pressure cooker, however it fits best. Also add in the onion and garlic, if using.
- Put the lid on the IP and set the steam release knob to the Sealing position.
- Press the Pressure Cook, or Manual button, and then the + or - button to choose the time in minutes. High pressure.
- When the cooking cycle has ended, let the pot sit and naturally release for 15 minutes. Then manually release the remaining steam. When the pin in the lid drops, open the pot.
- Take the temperature and determine if it is fully cooked. If it is below 165 degrees F, put the lid back on the pot and set the IP to cook for a couple more minutes and let it naturally release for 10 minutes.
- Lift out the turkey breast to a baking pan. Also remove the wire rack/trivet.
- Put the whole potatoes in the pot, close the lid and set the steam release knob to the Sealing position.
- Press the Manual, or Pressure Cook button, and then the + or - button to choose 10 minutes. When cooking cycle is done, do a Quick Release of the pressure (Carefully turn the steam release knob immediately after the pot beeps to release the pressure)
- Lift out potatoes and keep it nearby while you make the gravy.
- Set your oven rack to the lowest position. Turn on your broiler to 425 degrees F to begin warming up.
- Set the baking pan with the turkey breast, skin side up, under the broiler. Leave it to it brown a few minutes (depending on the size of the turkey breast, you might need to turn it to get all of it browned).
- Press the Sauté button (Normal heat) on the pressure cooker.
- In a microwave safe dish, mix the butter and flour and microwave for about 20-25 seconds.
- When the drippings in the pot start to simmer, stir in the butter/flour mixture. Keep stirring until the gravy thickens.
- Serve!
