Instant Pot Vanilla Extract is a wonderful homemade vanilla that is incredibly easy to make from vanilla beans. This pressure cooker vanilla extract is exceptionally delicious and makes fantastic gifts, especially for the Holidays!

  • 6 qt or 8 qt Electric Pressure Cooker w/Trivet/Rack
  • 2 16-ounce Canning Jars w/Lids
  • 8 4-ounce Glass Bottles w/Lids (for gifting)

Ingredients 

  • 24 Vanilla Beans (extract grade “B” or Grade “A” for best results)
  • 4 cups Vodka (any inexpensive brand, or food-grade Vegetable Glycerin for an alcohol-free version)
  • 1 ½ cups Water (increase to 2 ½ cups if using an 8 qt pressure cooker)

Instructions 

  • Begin by preparing your vanilla beans. Using a sharp knife, carefully cut all the vanilla beans in half crossways. Then, split each half lengthwise about ¾ of the way, leaving a small portion attached at one end. This method, similar to peeling a banana, exposes more surface area of the beans to the alcohol, greatly enhancing the extraction of flavor.
  • Place 12 prepared vanilla bean halves into each pint-sized canning jar. If you’re using jars of a different size, adjust the number of beans accordingly to ensure a good ratio. The goal is to have enough beans to infuse a strong vanilla flavor into the liquid.
  • Carefully pour the vodka (or vegetable glycerin) into each jar. Fill the jars only to the bottom thread of the lid. This leaves approximately ¾ inch or more of headspace, which is important for safety during pressure cooking as it allows for expansion.
  • Secure the lids onto your jars finger-tight. This means tightening them just enough to be secure, but not as tightly as you would for long-term storage or canning. This allows for proper pressure equalization during the cooking cycle.
  • Pour the specified amount of water into the stainless steel inner pot of your pressure cooker. Then, place the metal trivet or rack at the bottom of the pot. Carefully set your filled vanilla jars on the metal rack, ensuring they do not touch each other or the sides of the pot to allow for even heating.
  • Close the lid of your pressure cooker and set the steam release knob to the Sealing position, preparing it for the pressure cooking cycle.

It’s essential not to strain the vanilla or discard the beans! The beans will continue to flavor the extract for years. Simply top off with more vodka whenever the liquid level runs low.
  • For gifting purposes, I recommend using the 4-ounce or 5-ounce glass bottles. For an attractive presentation and continued flavor extraction, add 2 or 3 of the vanilla bean halves to each smaller bottle before sealing. This thoughtful touch enhances both the appearance and the potency of your homemade gift.
