Unearthing Culinary Roots: My Mom’s Global German Flair
Growing up, my mother’s kitchen was a vibrant hub of international flavors, a culinary passport that took our taste buds on adventures across continents. Her passion for exploring diverse cuisines was truly infectious, and it’s from her that I inherited my boundless love for cooking anything and everything. Among the many global delights, German-inspired recipes always held a special place at our dinner table, evoking warmth and tradition with every bite.
This particular slow cooker pork and sauerkraut is a testament to her unique style. While many versions of this popular dish exist, hers carries a distinctive personal touch. She wasn’t confined by strict culinary rules, having embraced influences from various cultures throughout her life, which she skillfully integrated to elevate traditional flavors. This recipe, therefore, might “veer” slightly from the most rigid German traditions, but trust me, it’s for the better – resulting in a richer, more nuanced taste experience that truly stands out.
Why the Slow Cooker is Your Best Friend for Pork and Sauerkraut
The beauty of making pork and sauerkraut in a crock pot lies in its simplicity and the incredible results it yields. This method allows the humble ingredients to meld and deepen in flavor over several hours, creating a complex taste profile with minimal effort. The low, slow heat of the crock pot is perfectly suited for transforming tougher cuts of pork, like country-style ribs, into incredibly tender, succulent meat that practically melts in your mouth.
Beyond the tenderization, slow cooking ensures that the savory pork juices infuse into the tangy sauerkraut, and vice versa. This continuous simmering creates a rich, cohesive dish where every component enhances the other. It’s a truly hands-off approach, allowing you to go about your day while your kitchen fills with the enticing aromas of a home-cooked meal, culminating in a hassle-free dinner that tastes like it took hours of painstaking effort.
This Crock Pot Pork and Sauerkraut recipe is inherently simple, calling for straightforward ingredients you can easily find at any grocery store. You won’t need to hunt for exotic items; even the “most exotic” ingredient, caraway seeds, is a common spice in German cooking and readily available.

Key Ingredients for an Unforgettable Slow Cooker Pork and Sauerkraut
While simple, the right ingredients make all the difference in this German pork and sauerkraut recipe. Let’s delve into what makes each component essential:
- Country Style Boneless Ribs: These are the star of the show. Despite their name, country-style ribs are actually cut from the pork shoulder or loin, offering a wonderful balance of lean meat and marbling. This makes them ideal for slow cooking, as the fat renders down, contributing to the rich flavor and ensuring extreme tenderness. If you can’t find country-style ribs, pork shoulder (Boston butt) cut into large chunks is an excellent alternative.
- Good German Sauerkraut: The quality of your sauerkraut is paramount. Look for a brand that is naturally fermented and made with simple ingredients (cabbage, water, salt). Avoid heavily processed or overly sweet varieties. The natural tang of quality sauerkraut is crucial for balancing the richness of the pork. Remember, we’ll drain about half the juice to control the tartness, giving you flexibility to adjust to your preference.
- Caraway Seeds: Often considered the signature spice of German cuisine, caraway seeds add an unmistakable warm, slightly peppery, and anise-like flavor that pairs exquisitely with both pork and sauerkraut. Don’t skip these! They elevate the dish from good to truly authentic.
- Yellow Onion & Garlic: These aromatic staples form the foundational layer of flavor, providing sweetness and depth that slowly infuse into the entire dish during cooking.
- Apple: This might seem like an unusual addition, but a diced apple is a secret weapon in this recipe. It introduces a subtle sweetness that beautifully balances the sauerkraut’s tartness, adding a layer of complexity without making the dish overtly fruity.
- Apple Juice: A splash of apple juice complements the fresh apple and adds moisture to the slow cooker environment. Its mild sweetness and acidity also contribute to the overall flavor balance, helping to tenderize the pork and round out the dish.
- Olive Oil, Kosher Salt, and Pepper: Essential for browning and seasoning, these basic ingredients lay the groundwork for a flavorful meal.
The Non-Negotiable Step: Browning the Pork Ribs
One Pro Tip: Please, for the love of incredible flavor, do not skip browning the pork ribs! This seemingly small step is a game-changer for the ultimate flavor profile of your slow cooker pork and sauerkraut. Browning the meat before adding it to the crock pot kickstarts the Maillard reaction – a chemical process responsible for creating those complex, savory, and irresistible flavors we associate with perfectly cooked meat.
I’ve tested this recipe multiple times, once without browning, and the difference was night and day. Without browning, the dish was merely “okay,” lacking the depth and richness that truly makes it shine. My husband and I both agreed it was missing something vital. While it adds a few minutes to your prep time, searing the country-style ribs creates a beautifully caramelized crust that locks in juices and develops a wonderful foundation of flavor that permeates the entire dish. It’s an investment of effort that pays off exponentially in taste, so I wholeheartedly urge you not to bypass this crucial stage!

Ingredients
- 2 Tbsp Olive Oil
- 3 lbs Country Style Boneless Ribs
- 1 tsp Kosher Salt
- ½ tsp Pepper
- 1 Yellow Onion, thick sliced
- 3 cloves Garlic, pressed or finely minced
- 1 Apple, diced large
- 1 (24 oz) jar Good German Sauerkraut
- 1 Tbsp Caraway Seeds
- ½ cup Apple Juice
Instructions
- Heat a 12″ skillet over medium-high heat. When hot, add the olive oil, then all of the ribs. Let them brown on one side for 4 minutes or long enough to get some beautiful color. Season generously with salt and pepper.
- Flip the ribs over and brown the other side for another 4 minutes, or until nicely seared.
- Carefully transfer the browned ribs, along with any delicious juices from the skillet, to a 6-quart (or larger) slow cooker.
- Layer the thick-sliced yellow onion and pressed or minced garlic over the top of the ribs.
- Evenly sprinkle the caraway seeds over the pork and onion mixture.
- Drain about half of the sauerkraut juice and set it aside. This gives you control over the final tartness. Dump the sauerkraut and the remaining juice over the meat and onions.
- Add the diced apple, then pour in the apple juice.
- Cover the slow cooker and cook on Low for 8 hours or on High for 4 hours, or until the pork ribs are absolutely fall-apart tender.
- Before serving, taste the dish for salt and tartness. If you prefer a more pronounced tangy flavor, stir in some of the reserved sauerkraut liquid, a little at a time, until it reaches your desired tartness.
- Serve hot and enjoy this hearty, comforting meal!

A hearty rye bread on the side is also wonderful for dipping.

Variations and Customizations for Your Slow Cooker Pork and Sauerkraut
While this recipe provides a perfectly balanced and flavorful foundation, feel free to experiment and customize it to your personal taste. Here are a few ideas:
- Add More Vegetables: For a heartier one-pot meal, you can add chopped carrots or small potato chunks directly to the slow cooker along with the onions. They will cook down beautifully and absorb the delicious flavors.
- Spice It Up: If you enjoy a deeper, more aromatic flavor, consider adding a few juniper berries or a bay leaf to the slow cooker. These spices are common in traditional German dishes and will complement the caraway seeds.
- Smoked Paprika: A teaspoon of smoked paprika can add a lovely smoky depth to the pork, creating another layer of savory flavor.
- Sweetness Adjustment: If you prefer a slightly sweeter sauerkraut, you can increase the amount of apple juice or add a tablespoon of brown sugar or maple syrup along with the apple. Conversely, if you want it extra tart, you can use less apple juice or add more of the reserved sauerkraut liquid at the end.
- Mustard Power: A tablespoon of Dijon or whole-grain mustard mixed into the apple juice before adding to the slow cooker can add a wonderful tangy complexity and help emulsify the juices.
Storage and Reheating Tips
Leftovers of this slow cooker pork and sauerkraut are often even better the next day as the flavors continue to meld. Store any remaining portions in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm on the stovetop over medium-low heat until heated through, or microwave in individual portions. You might need to add a splash of water or apple juice to loosen it up if it has thickened too much.
