Easy Instant Pot Stuffed Cabbage Rolls: A Delicious Comfort Food Classic

While I appreciate the speed of a quick-prep meal, there’s a unique satisfaction that comes from investing a little extra time and effort into crafting something truly special. Stuffed cabbage rolls, with their multiple components and layers of flavor, perfectly fit this description. The Instant Pot, or any reliable pressure cooker, dramatically simplifies the process, making this incredible dish a reality for even busy home chefs.

If the thought of making cabbage rolls has always seemed daunting or too complicated, this recipe is designed to change your mind. We’ll break down each step into clear, manageable instructions, ensuring a smooth and successful cooking experience. Get ready to impress your family and friends with a dish that tastes like it took hours, but thanks to your pressure cooker, comes together with surprising ease.

Why Choose the Instant Pot for Stuffed Cabbage Rolls?

The Instant Pot is a game-changer for dishes like stuffed cabbage rolls. Traditionally, softening the cabbage leaves can be a messy and time-consuming affair, often involving blanching in large pots of boiling water. The Instant Pot streamlines this step beautifully, using steam to gently tenderize the cabbage, making the leaves pliable and easy to work with.

Beyond softening the cabbage, the pressure cooking function significantly reduces the overall cooking time for the stuffed rolls themselves. Instead of hours of simmering on the stovetop or baking in the oven, your Instant Pot will cook these savory parcels to tender perfection in a fraction of the time, allowing the flavors of the meat filling and rich tomato sauce to meld harmoniously under pressure. This method not only saves time but also ensures that every component of the dish, from the outer cabbage leaves to the hearty filling, is cooked evenly and thoroughly, resulting in consistently delicious, melt-in-your-mouth pressure cooker stuffed cabbage rolls every time.

The Heart of the Meal: Crafting the Perfect Cabbage Roll Filling

The filling is undoubtedly what makes stuffed cabbage rolls so irresistible. This recipe features a robust and incredibly flavorful meat mixture that’s designed to satisfy. We combine ground beef (or ground turkey for a leaner option, or even a mix including ground sausage for extra depth) with a host of aromatic vegetables and savory seasonings. The addition of cooked rice provides a comforting texture and helps bind the filling together, absorbing all the delicious juices as it cooks. Finely grated carrots, onions, and celery introduce subtle sweetness and essential moisture, while fresh garlic, thyme, Italian seasoning, and garlic powder infuse the mixture with classic, home-style flavors. Each ingredient plays a crucial role in creating a balanced and deeply satisfying interior for your cabbage rolls.

Assembling Your Instant Pot Cabbage Rolls: A Step-by-Step Guide

Once your cabbage leaves are perfectly softened and your filling is seasoned to perfection, it’s time for the fun part: assembly! Rolling cabbage leaves might seem tricky at first, but with a simple technique, you’ll become a pro in no time. We’ll guide you through gently spooning the meat mixture onto each leaf, folding in the sides, and then rolling tightly to create neat, secure parcels. If a roll feels a bit loose, a toothpick can be your best friend to keep everything intact during cooking. Don’t worry about perfection; rustic charm is part of the appeal of these stuffed cabbage rolls. Any remaining cabbage that isn’t used for rolling will be chopped and added to the delectable tomato sauce, ensuring no part of your cabbage goes to waste and contributing even more flavor to the overall dish.

The remaining cabbage is chopped and cooked down with onions, forming a rich, flavorful base for the tomato sauce. This step adds depth and ensures all parts of the cabbage contribute to the final taste.

The final touch before pressure cooking is layering. After preparing your savory sauce—a blend of crushed tomatoes, tomato sauce, beef bouillon for richness, balsamic vinegar for tang, and a hint of Worcestershire for umami—you’ll create alternating layers of rolls and sauce in the Instant Pot. This layering technique ensures that every cabbage roll is bathed in the luscious sauce, allowing them to absorb the incredible flavors as they cook. The pressure cooker then works its magic, tenderizing the rolls and melding all the components into a cohesive, deeply satisfying comfort food dinner. Once cooked, these delightful parcels can be served directly from the pot, or elegantly transferred to a serving platter, ready to be devoured.

Tips for Instant Pot Stuffed Cabbage Roll Success

  • Cabbage Selection: Choose a firm, fresh head of green cabbage with large, intact outer leaves. The larger the leaves, the easier they are to roll.
  • Perfectly Cooked Rice: Ensure your rice for the filling is fully cooked and cooled before mixing. Undercooked rice can absorb too much moisture from the meat, leading to dry rolls.
  • Flavor Customization: Feel free to adjust the seasonings in the meat filling to your preference. A pinch of paprika or a dash of hot sauce can add a delightful kick.
  • Make-Ahead & Storage: Cabbage rolls are fantastic for meal prepping! You can assemble the rolls a day in advance and store them in the refrigerator before cooking. Leftovers store beautifully in an airtight container in the fridge for 3-4 days, or can be frozen for up to 3 months. Thaw overnight and reheat gently on the stovetop or in the microwave.
  • Serving Suggestions: These comfort food cabbage rolls are a complete meal on their own, but they pair wonderfully with a side of crusty bread to soak up the extra sauce, or a simple green salad for freshness. A dollop of sour cream or a sprinkle of fresh dill can elevate the flavors even further upon serving.

Enjoy this truly comforting, home-cooked meal that is both satisfying and surprisingly easy to make with your Instant Pot. Instant Pot Stuffed Cabbage Rolls are destined to become a cherished family favorite, bringing warmth and smiles to your dinner table for years to come!

Equipment

  • 6 qt or 8 qt Pressure Cooker
  • Trivet

Ingredients

  • 1 cup Water
  • 1 med Head of Cabbage, core removed

Meat Filling

  • 1 ½ lbs Ground Beef or Ground Turkey (can also use part ground sausage)
  • 1 lg Egg
  • 1 tsp Kosher Salt
  • ½ tsp Pepper
  • ¼ cup Grated Carrot
  • ¼ cup Grated Onion
  • ¼ cup Grated Celery
  • 2 cloves Garlic, pressed
  • ¼ tsp Thyme Leaves (or 1/8 tsp ground)
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1 cup Cooked Rice

Tomato Sauce

  • 2 Tbsp Olive Oil
  • 2 Tbsp Butter, unsalted
  • Remaining Cabbage, chopped
  • 1 ½ Onions, chopped
  • 1 (14 oz) can Crushed Tomatoes
  • 1 (14 oz) can Tomato Sauce
  • 1 tsp Beef Bouillon
  • 1 Tbsp Balsamic Vinegar
  • 1 tsp Worcestershire Sauce
  • 1 cup Water

Instructions

Soften the Cabbage

  • Place the trivet and 1 cup of water in the stainless liner of the pressure cooker. Then place the cored cabbage on the trivet, cored side down.
  • Cook at High pressure for 6 to 8 minutes, depending on the size of the cabbage. Then do a quick release.
  • Remove the cabbage to a plate and set aside. Empty the inner pot and dry it.

Make the Meat Filling

  • In a large mixing bowl, add the meat, egg, salt, pepper, carrot, onion, celery, garlic, Thyme, Italian Seasoning, and garlic powder. Mix well to combine.
  • Mix in the cooled cooked rice. Set mixture aside.

Make the Cabbage Rolls

  • Remove the outer leaves of the softened cabbage and fill each one with about 2-3 Tbsp of the meat filling. Fold the sides over the meat, then the other two ends over to create a sealed cabbage roll. Secure with a toothpick, if necessary. Make as many rolls as you can until the filling is used up. Set the rolls aside.
  • Chop the remaining cabbage into 1/2″ pieces and set aside.
  • Turn on the sauté setting of your Instant Pot. Add the olive oil, butter, chopped cabbage, and onion. Cook, stirring occasionally, until cabbage and onion are softened. Turn off the sauté function and remove the mixture to a large bowl.
  • Add the crushed tomatoes, tomato sauce, bouillon, balsamic vinegar, and Worcestershire to the chopped cabbage/onion mixture. Mix well to create the sauce.
  • Add the cup of water to the Instant Pot. Place the trivet in the pot.
  • Place a single layer of the cabbage rolls on the trivet. Cover with a couple cups of the prepared sauce mixture.
  • Add another layer of cabbage rolls, and another layer of sauce. Repeat if there are any remaining rolls, always ending with a layer of sauce on top.
  • Close the lid and ensure the sealing valve is in the sealed position. Press the Pressure Cook/Manual button, then use the +/- button to select 20 minutes cook time on High pressure. The pot will take several minutes to come to pressure before cooking begins.
  • Once the cook time is complete, allow the pot to naturally release pressure for 15 minutes (NPR). After 15 minutes, carefully turn the steam release knob to the Venting position to release any remaining pressure. When the float valve (pin) in the lid drops back down, it is safe to open the lid.
  • Serve these delicious stuffed cabbage rolls directly from the pot, or carefully transfer them to a serving platter. Garnish with fresh herbs if desired.
