Ingredients

For the Pork:

  • 2 pounds pork tenderloin (I use 2 pork tenderloins)
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon cinnamon
  • 2 tablespoons olive oil
  • 1/2 cup chicken stock

For the Sauce:

  • 1/2 of a fresh pineapple (peeled, cored, and roughly chopped)
  • 1/4 cup chopped red onion
  • 1/4 cup brown sugar (or coconut sugar)
  • 1-2 chipotles in adobo sauce (I use 1 – use 2 for spicy tacos)
  • the juice of 1 lime
  • 1 tablespoon white vinegar
  • 2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt

For Serving:

  • corn tortillas
  • garnishes: diced fresh pineapple, feta cheese, pickled onions (see note below) or finely chopped red onion, guacamole, fresh cilantro, lime wedges.

Instructions

  1. For the pork: Combine the salt, pepper, cumin, chili powder, and cinnamon in a small bowl. Pat the pork dry with paper towels and rub the spice mixture evenly over the pork tenderloins. Heat the olive oil over medium-high heat in a large skillet. Add the pork and brown on all sides, about 4-5 minutes per side, until a golden crust forms.
  2. Carefully transfer the browned pork to the slow cooker. In the now empty hot pan, add the chicken stock and use a wooden spoon to scrape up any browned bits from the bottom of the pan – these bits add tremendous flavor. Pour the chicken stock mixture into a blender.
  3. Add the remaining ingredients for the sauce (fresh pineapple, chopped red onion, brown sugar, chipotles in adobo sauce, lime juice, white vinegar, chili powder, and cumin) to the blender. Blend until the sauce is completely smooth and uniform. Pour this vibrant sauce over the pork in the slow cooker and cook on low for 4-6 hours, or until the pork is fork-tender and easily shreds.
  4. Once cooked, carefully remove the pork from the slow cooker and place it on a clean cutting board. Shred the meat using two forks, then return the shredded pork to the slow cooker and mix it thoroughly with the rich pineapple chipotle sauce. Taste the mixture; if it tastes a bit too tart or bitter, add a little more sugar. Adjust salt to taste if needed. Serve warm on tortillas with your favorite garnishes and enjoy!

Notes

*For the pickled onions: Combine 1/4 cup red wine vinegar, 1 tablespoon sugar, 1 1/2 teaspoons salt, and 1/2 cup water in a small bowl and stir until dissolved. You can heat this mixture slightly on the stove or in the microwave to help the sugar and salt dissolve more thoroughly. Add 1/2 cup thinly sliced red onions and let sit at room temperature for at least 30 minutes, or for a few hours in the fridge for a deeper pickle. Drain the onions before serving. Chill any leftovers in the fridge for up to 2 weeks.

Make sure the chipotles in adobo sauce you use are gluten-free, if adhering to a strict gluten-free diet. They are typically found in a can on the Mexican food aisle of most supermarkets. I usually add just 1 adobo pepper for a flavorful but not overly spicy result. You can certainly add 2 if you really enjoy a bolder, spicier kick!
