Essential Ingredients for Your Bacon-Wrapped Dates
Crafting these sensational appetizers requires only a few key ingredients. Here’s a detailed look at what you’ll need to ensure the best possible flavor and texture:

- Dates: The foundation of this recipe! For optimal results, select plump, fresh dates. They offer a naturally softer, chewier texture and a richer, more concentrated sweetness. Medjool dates are highly recommended due to their large size, moist flesh, and distinctly caramel-like flavor, which holds up beautifully during baking. While you can pit them yourself, using pre-pitted dates is a fantastic time-saver.
- Hot Honey (or Regular Honey): This ingredient is optional but highly encouraged if you want to elevate the dish. The subtle heat of hot honey provides an incredible contrast to the sweetness of the dates and the saltiness of the bacon, adding a layer of complexity. If hot honey isn’t available or preferred, regular honey works wonderfully to add an extra touch of sweetness and gloss. We highly recommend Mike’s Hot Honey for its perfect balance of sweet and spicy.
- Goat Cheese: Choose a creamy, plain goat cheese (chèvre) that is soft and easy to spread or crumble. Its distinctive tangy flavor provides a beautiful counterpoint to the sweetness of the dates and the richness of the bacon, preventing the appetizer from being overly sweet.
- Bacon: The type of bacon is crucial for achieving that perfect crispy exterior. I strongly recommend using regular, thinner-sliced pork bacon. Avoid thick-cut bacon, as it tends to take longer to crisp up and may not render its fat sufficiently, leaving the dates greasy or the bacon undercooked. Center-cut bacon can also be a good choice as it often has a more even ratio of meat to fat.
- Toothpicks: A simple yet essential tool! Toothpicks serve the important function of holding the bacon securely around the dates as they bake, preventing them from unraveling. They also make the finished bacon-wrapped dates much easier for guests to pick up and enjoy.

Step-by-Step Guide: How to Make Bacon-Wrapped Dates with Goat Cheese
Creating these appetizers is surprisingly simple, following just a few easy steps:
- Step 1: Preheat Your Oven. Begin by preheating your oven to 350°F (175°C). Ensuring your oven is at the correct temperature before placing the dates in helps the bacon cook evenly and become perfectly crispy.

- Step 2: Prepare the Dates. Carefully slice each date lengthwise down one side, being careful not to cut all the way through. This creates a convenient pocket for the goat cheese. If your dates are not pre-pitted, this is also the ideal time to remove the small, hard pit from the center.

- Step 3: Stuff with Goat Cheese. Gently fill each opened date pocket with a small amount of creamy goat cheese. Don’t overfill, as the cheese can ooze out during baking. A teaspoon or less per date is usually sufficient.

- Step 4: Wrap with Bacon. Take your bacon slices and cut them in half crosswise, yielding pieces roughly 5 inches long. Place one cheese-filled date in the center of a bacon strip, then carefully wrap the bacon around the date, ensuring it’s snug. Secure the bacon tightly by piercing it through the date with a toothpick. This keeps everything in place during baking.
These savory-sweet treats share a similar crowd-pleasing quality with bacon-wrapped smokies – another fantastic appetizer idea!

- Step 5: Arrange and Bake. Place the assembled bacon-wrapped dates seam-side down on a rimmed baking sheet. A rimmed sheet is important to catch any rendered bacon fat. Repeat the wrapping process with the remaining dates until your tray is full.

- Step 6: Bake to Perfection. Bake the dates for 10 minutes, allowing the bacon to start crisping. Then, carefully flip each date to the other side and continue baking for another 5 minutes. For even crispiness all around, flip the dates one more time and bake for a final few minutes, until the bacon is golden brown and delightfully crisp. Total baking time can vary slightly depending on your oven and bacon thickness, typically ranging from 18-25 minutes.
- Step 7: Cool and Serve. Once baked, remove the dates from the oven and let them cool on the baking sheet for about 5 minutes. This cooling period allows the bacon to firm up further and the cheese to set slightly. Just before serving, drizzle with regular or hot honey if desired. Enjoy these incredible sweet and savory bites!

Storage and Make-Ahead Tips
Planning ahead for parties or saving leftovers is easy with these bacon-wrapped dates:
To store: While these appetizers are absolutely at their best when enjoyed fresh out of the oven, any leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, place them on a baking sheet in a preheated oven (around 300°F/150°C) for 5-10 minutes until warmed through and the bacon re-crisps.
To make ahead: This recipe is perfect for advance preparation. You can assemble the bacon-wrapped dates exactly as directed, securing them with toothpicks, up to two days before you plan to bake them. Simply arrange them on a baking sheet, cover loosely with plastic wrap, and refrigerate. When ready to serve, transfer them directly from the fridge to the preheated oven and follow the baking instructions.

Frequently Asked Questions About Bacon-Wrapped Dates
Bacon-wrapped dates are wonderfully versatile. They shine as a standalone appetizer or an afternoon snack. If you’re serving them as part of a larger meal or alongside other appetizers, their tangy goat cheese, chewy date, and savory bacon profile pairs beautifully with fresh green salads, roasted Brussels sprouts, creamy mashed potatoes, or warm dinner rolls. For main courses, they complement lean proteins like pork tenderloin, grilled chicken, or baked salmon exquisitely, adding a gourmet touch to your spread.
Sweet dates are a fantastic partner for a variety of creamy and savory cheeses. Beyond classic plain goat cheese (chèvre), which provides a lovely tang, consider herbed goat cheese for an extra layer of flavor. Bold blue cheese offers a sharp, piquant contrast that many adore, while milder options like cream cheese or mascarpone can create a wonderfully rich and subtle filling.
Generally, fresh, soft dates (especially Medjool dates) do not need to be soaked before baking. They are naturally moist and tender enough. However, if your dates appear hard or dry, a quick soak can revive them. Simply place them in warm water for 20-30 minutes, then drain and pat them dry before proceeding with the recipe. This step helps ensure a deliciously chewy texture in the final appetizer.
Yes, bacon-wrapped dates can be successfully made in an air fryer! Preheat your air fryer to 350°F (175°C). Arrange the assembled dates in a single layer in the air fryer basket, ensuring they are not overcrowded to allow for even crisping. Cook for 10-15 minutes, flipping halfway through, until the bacon is crispy and golden brown. Cooking times may vary depending on your air fryer model.
Expert Tips & Tricks for Perfect Bacon-Wrapped Dates
Achieve appetizer perfection with these insider tips:
- Choose the Right Bacon: This is paramount for crispiness. Absolutely avoid thick-cut bacon, as it struggles to crisp evenly and can leave the dates greasy. Opt for regular, thinner-sliced bacon (like center-cut) for that ideal crispy texture.
- Select Fresh, Plump Dates: The quality of your dates directly impacts the final taste and texture. Always choose fresh, soft dates. Medjool dates are the gold standard for this recipe due to their size, sweetness, and moistness. Using pre-pitted dates will certainly save you prep time!
- Master the Make-Ahead: These appetizers are a dream for entertaining because they can be largely prepared in advance. Assemble the bacon-wrapped dates up to two days ahead of time. Simply wrap them, secure with toothpicks, refrigerate, and bake them fresh just before your guests arrive for the best experience.
- Don’t Overfill the Dates: While tempting to stuff them generously, too much goat cheese can easily ooze out during baking, making a mess and potentially burning. A modest, balanced amount is key.
- Even Bacon Crispiness: To ensure the bacon is crisp on all sides, don’t skip the flipping steps during baking. Rotating the dates allows for even cooking and a uniformly golden, crunchy exterior. You can also rotate your baking sheet halfway through if your oven has hot spots.
- Optional Glaze Variation: Beyond hot honey, consider brushing a touch of maple syrup or balsamic glaze over the dates during the last few minutes of baking for a different sweet and savory finish.
