Instant Pot Beef and Broccoli: Your Effortless Path to Authentic Takeout Flavor

If you’re a fan of classic Chinese American dishes, particularly the ever-popular broccoli beef, preparing it at home in your Instant Pot is a revelation. This recipe isn’t just about recreating a takeout favorite; it’s about elevating it with fresh ingredients and the magic of pressure cooking. While it involves a couple of distinct stages, the process is surprisingly straightforward, culminating in a deeply flavorful and satisfying dish that tastes like it came from your favorite local spot, but with the added pride of having made it yourself. Get ready to impress your family and friends with this delicious, wholesome, and incredibly easy Instant Pot beef and broccoli.

Despite its gourmet taste, this Instant Pot Beef and Broccoli is remarkably simple to prepare, making it an ideal choice for home cooks looking for efficiency without compromising on flavor. The secret lies in the Instant Pot’s ability to tenderize beef quickly and infuse every ingredient with the savory, umami-rich sauce. The result is a meal that truly satisfies, hitting all the right notes of sweet, salty, and a hint of spice, all while being an incredibly convenient one-pot solution.

The Unbeatable Advantages of Making Beef and Broccoli in Your Instant Pot

This pressure cooker beef and broccoli recipe offers numerous benefits that make it a standout choice for any meal rotation:

  • One-Pot Wonder: The most significant advantage is that this entire meal, including the beef, the flavorful sauce, the crisp broccoli, and even the rice (if you choose the optional pot-in-pot method), comes together in a single pot. This drastically reduces cleanup time, allowing you to spend less time scrubbing and more time enjoying your delicious creation. It’s the ultimate convenience for busy individuals and families.
  • Minimal Chopping: Unlike many elaborate recipes, this Instant Pot beef and broccoli requires very little chopping. You’ll only need to prep the beef, onion, broccoli, and garlic. This streamlined prep work means you can get started on cooking much faster, eliminating one of the biggest deterrents to cooking from scratch on hectic days.
  • Flavorful Sauce with Common Ingredients: The star of this dish is its perfectly balanced, savory sauce. Crafted from readily available pantry staples like low-sodium soy sauce, rich beef broth, aromatic sesame oil, a touch of brown sugar for sweetness, ginger (powder or fresh), and a hint of red pepper flakes for warmth, it delivers an authentic Chinese takeout flavor profile. These common ingredients ensure you likely won’t need a special trip to the grocery store.
  • Uses Chuck Roast for Unrivaled Tenderness: We recommend using chuck roast or flank steak, sliced thinly against the grain, for this recipe. Chuck roast, in particular, is known for its deep, beefy flavor and its ability to become incredibly tender under pressure. The Instant Pot transforms this cuts into melt-in-your-mouth strips of beef, ensuring every bite is a delightful experience.
  • Quick & Convenient: Despite its rich flavor and tender texture, this meal doesn’t take long to prepare. From start to finish, you can have this delectable Instant Pot beef and broccoli on your table in approximately an hour. This makes it a perfect weeknight dinner solution that rivals the speed of ordering takeout.
  • Layers of Irresistible Flavor and Texture: The combination of deeply flavored, tender beef, vibrant and perfectly cooked crisp-tender broccoli, and fluffy, absorbent rice creates a symphony of textures and tastes. Each component is cooked to its ideal consistency, contributing to a harmonious and incredibly satisfying dish.

Customizing Your Meal: Rice and Broccoli Options

While this recipe promotes a one-pot approach, it’s incredibly flexible to suit your preferences and kitchen setup. You don’t have to cook the rice directly with the meat if you prefer. Feel free to use your preferred method for preparing rice, whether it’s on the stovetop, in a dedicated rice cooker, or even a separate Instant Pot. The key is to time its completion to be roughly within a few minutes of the beef for optimal serving temperature.

Similarly, for the broccoli, if you have strong preferences for its texture or simply wish to steam it separately, that’s perfectly fine. Some home cooks prefer steaming their broccoli in a microwave or a stovetop steamer basket to ensure precise control over its crispness. The beauty of this Instant Pot Beef and Broccoli recipe lies in its adaptability, allowing you to integrate elements that best fit your cooking style.

The final steps involve carefully removing the cooked rice (if using the pot-in-pot method) and the trivet from the Instant Pot. Then, you’ll add the fresh or frozen broccoli florets and pour in the cornstarch slurry, which will magically thicken the sauce to a luscious, glossy consistency. A quick “0-minute” pressure cook followed by a Quick Release ensures the broccoli is perfectly tender-crisp without turning mushy. Meanwhile, remember to gently fluff your freshly cooked rice with a fork to maintain its light and airy texture, preparing it for the flavorful beef and broccoli to be served alongside.

Tips for Perfect Instant Pot Beef and Broccoli

  • Slice Beef Against the Grain: This is crucial for tenderness. Slicing against the grain shortens the muscle fibers, making the beef easier to chew. Partially freezing the beef for about 20-30 minutes before slicing can make it much easier to get thin, even strips.
  • Don’t Overcrowd When Browning: Brown the beef in batches to ensure a good sear. Overcrowding the pot will steam the meat instead of browning it, preventing that delicious caramelized flavor from developing.
  • Deglaze the Pot: After browning the beef and sautéing the aromatics, use a splash of beef broth or water to scrape up any browned bits from the bottom of the pot. This is vital to avoid a “BURN” warning from your Instant Pot and adds extra flavor to your sauce.
  • “0-Minute” Cook for Broccoli: The 0-minute pressure cook cycle for broccoli means the Instant Pot heats up, comes to pressure, and then you immediately do a Quick Release. The residual heat and steam are enough to perfectly cook the broccoli to a crisp-tender state, preventing it from becoming soggy.
  • Adjust Sweetness and Spice: The brown sugar and red pepper flakes can be adjusted to your taste. For a sweeter sauce, add a bit more brown sugar. For more heat, increase the red pepper flakes or add a dash of sriracha.
  • Rinse Rice Thoroughly: If you’re cooking rice using the pot-in-pot method, thoroughly rinsing the rice removes excess starch, leading to fluffier grains that are less likely to stick together.

Serving Suggestions and Variations

This delightful pressure cooker beef and broccoli is a wonderful way to enjoy authentic Chinese flavors in your own home. Serve it hot over a bed of the fluffy white rice cooked alongside, or substitute with brown rice, quinoa, or even cauliflower rice for a low-carb option. Garnish generously with toasted sesame seeds and freshly sliced green onions for an extra burst of flavor and a touch of vibrant color. For a complete meal, consider adding a side of steamed dumplings or a light cucumber salad. You can also experiment with different vegetables – snap peas, carrots, or bell peppers can be added along with the broccoli during the 0-minute pressure cook for extra crunch and nutrition.

Storage and Reheating

Leftovers of Instant Pot Beef and Broccoli store beautifully. Transfer any remaining portions to an airtight container and refrigerate for up to 3-4 days. To reheat, you can use the microwave for quick individual servings or gently warm it on the stovetop over medium-low heat, adding a splash of beef broth or water if the sauce has thickened too much. The beef remains tender and the broccoli retains its pleasant texture, making it an excellent meal prep option for lunches throughout the week.

Instant Pot Beef and Broccoli

By Sandy Clifton
Instant Pot Beef and Broccoli is a one-pot Chinese style meal that is as good as take out! Lots of flavor, with tender strips of beef, broccoli, and rice.
Prep: 15 mins
Cook: 45 mins
Natural Release: 5 mins
Total: 1 hr 5 mins
Servings: 4 – 6

Equipment

  • 6-quart or larger Electric Pressure Cooker
  • 7-inch round pan (for rice, if making)
  • Metal Trivet/Rack (if making rice)

Ingredients

Sauce

  • ½ cup Soy Sauce, low sodium
  • 1 cup Beef Broth, low sodium
  • 1 ½ Tablespoons Sesame Oil
  • 3 Tablespoons Brown Sugar (or to taste)
  • 1 teaspoon Ginger Powder (or 1 Tablespoon fresh grated)
  • ¼ teaspoon Red Pepper Flakes

To Sauté

  • 2 Tablespoons Peanut or Canola Oil
  • 2 lbs Chuck Roast or Flank Steak, sliced thinly against the grain
  • 1 medium Onion, sliced into half moon shapes
  • 5 cloves Garlic, pressed or finely minced (2 Tbsp)
  • 1 ½ lbs Broccoli Florets, fresh or frozen

To Thicken

  • 3 Tablespoons Corn Starch
  • ¼ cup Cold Water

Optional – If you want to cook rice with the beef (you’ll need a tall trivet and 7″ pan)

  • 2 cups Long Grain White Rice, well rinsed
  • 2 cups Water

Garnishes

  • 1 Tablespoon Sesame Seeds
  • 2 Green Onions, sliced

Instructions

Prep

  • Gather all of your ingredients together and have everything chopped, measured, and ready to go before you start cooking. This “mise en place” makes the cooking process much smoother.

Make the Sauce

  • In a large measuring cup or a medium-sized mixing bowl, combine the low-sodium soy sauce, beef broth, sesame oil, brown sugar, ginger powder (or fresh grated ginger), and red pepper flakes. Whisk all the ingredients together thoroughly until well combined and the brown sugar has dissolved. Set this flavorful sauce aside.

Brown the Meat

  • Activate the Sauté setting on your Instant Pot and allow it to heat until the display reads “Hot.” Add the peanut or canola oil. Once shimmering, add half of the thinly sliced beef strips to the hot oil. Brown them for a couple of minutes on each side until nicely seared, but do not cook them through completely. Remove the browned beef to a clean plate and repeat with the remaining second half of the beef strips. This ensures proper browning and flavor development.
  • Once the second batch of beef has browned, return the first batch to the pot, joining the second. Add the sliced onion and minced garlic to the pot. Cook for approximately 2-3 minutes, stirring frequently, until the onions soften slightly and the garlic becomes fragrant.
  • Turn off the Sauté setting. Carefully pour the prepared sauce mixture into the pot, stirring well to combine it with the beef, onions, and garlic. Ensure to scrape up any browned bits from the bottom of the pot with your spoon to prevent a “BURN” warning and incorporate all the delicious flavors.

Prep the Rice, if Making

  • If you are opting to cook rice simultaneously with the beef using the pot-in-pot method, place a tall metal trivet into the Instant Pot over the beef and sauce. Then, carefully place a 7-inch round, oven-safe pan containing the well-rinsed long-grain white rice and 2 cups of water onto the trivet.

Pressure Cook

  • Securely close the Instant Pot lid and ensure the steam release knob is set to the Sealing position.
  • Press the Pressure Cook (or Manual) button or dial, then use the +/- button or dial to select a cooking time of 10 minutes on High Pressure. The pot will take some time to come to pressure before the cooking countdown begins.
  • Once the cooking cycle has completed, allow the Instant Pot to naturally release pressure for 5 minutes (a 5-minute Natural Release). After 5 minutes, carefully perform a Quick Release of any remaining pressure/steam by turning the steam release knob to the Venting position. Once the float valve (pin) in the lid drops down, it is safe to open the lid.

Mix the Cornstarch Slurry

  • While the beef is cooking under pressure, you can prepare the cornstarch slurry. In a small bowl, whisk together the 3 tablespoons of cornstarch and ¼ cup of cold water until smooth and no lumps remain. Set this aside, as it will be used to thicken the sauce at the end.

Cook the Broccoli and Finish

  • With caution, remove the pan of cooked rice (if applicable) and the metal trivet from the Instant Pot. Set them aside carefully.
  • Add the fresh or frozen broccoli florets directly into the pot with the beef and sauce. Stir in the prepared cornstarch slurry, ensuring it’s well distributed throughout the sauce. Close the lid again, set the steam release knob to Sealing, and pressure cook for 0 minutes* (refer to the Note below for alternative). As soon as the Instant Pot signals the end of the 0-minute cooking cycle, perform a Quick Release immediately.
  • While the broccoli cooks, gently fluff the rice with a fork and transfer it to a serving bowl or individual plates.
  • After opening the Instant Pot, stir the beef and broccoli mixture thoroughly. The sauce will have thickened to a beautiful, glossy consistency. Serve this delicious Instant Pot Beef and Broccoli generously over the hot rice. Garnish with sesame seeds and sliced green onions as desired for enhanced flavor and visual appeal. Enjoy your homemade Chinese takeout masterpiece!

Notes

*Optionally, instead of the 0-minute pressure cook for the broccoli, you can turn the Instant Pot’s Sauté setting on the Low/Less mode after adding the broccoli and cornstarch slurry. Simmer the mixture, stirring frequently, until the sauce has thickened to your desired consistency and the broccoli is tender-crisp. Be sure to stir continuously to prevent any burning at the bottom of the pot.

Frequently Asked Questions (FAQs)

  • Can I use a different cut of beef?
Yes, while chuck roast and flank steak are recommended for their flavor and texture, you can use other cuts like sirloin steak. Just ensure it’s sliced thinly against the grain, and note that cooking times might vary slightly depending on the thickness and type of beef.
  • What if I don’t have all the sauce ingredients?
The sauce ingredients are fairly standard for Chinese cuisine. Low-sodium soy sauce is preferred to control saltiness. Fresh ginger can be substituted for ginger powder (1 tablespoon fresh grated for 1 teaspoon powder). Sesame oil is crucial for authentic flavor, but if absolutely unavailable, you can omit it. Brown sugar can be replaced with honey or maple syrup for sweetness.
  • Can I add other vegetables?
Absolutely! This recipe is very adaptable. Feel free to add sliced carrots, snap peas, or bell peppers along with the broccoli during the 0-minute pressure cook cycle. Keep in mind that denser vegetables might require a slightly longer cook time if you prefer them very soft.
  • My sauce isn’t thick enough. What happened?
Ensure your cornstarch slurry is well-mixed with cold water before adding it to the pot. If the sauce is still too thin after the 0-minute pressure cook, you can turn on the Sauté (Low/Less) setting and simmer the sauce for a few minutes, stirring constantly, until it thickens to your desired consistency.
  • Can I make this ahead of time?
Yes, this Instant Pot Beef and Broccoli is excellent for meal prep. You can prepare the entire dish and store it in airtight containers in the refrigerator for up to 3-4 days. It reheats well in the microwave or on the stovetop.
