If you appreciate the robust taste of Italian sausage (whether you prefer sweet, mild, or a fiery hot variety) and the sweet, crisp freshness of bell peppers, then this recipe is tailor-made for you!

Why Choose the Instant Pot for Sausage and Peppers?

The Instant Pot is a game-changer for dishes like Sausage and Peppers. Its pressure cooking function drastically cuts down on cooking time while infusing every ingredient with deep, concentrated flavors. The sealed environment locks in moisture, ensuring the sausages remain tender and juicy, and the bell peppers break down just enough to create a wonderfully thick and aromatic sauce without becoming mushy. Plus, it’s largely a one-pot meal, which means less cleanup and more time to enjoy your culinary masterpiece.

Serving a Crowd with Ease

This generous Instant Pot Sausage and Peppers recipe is designed to serve approximately 10 people, assuming each person enjoys one hearty sausage. It’s perfect for family gatherings, dinner parties, or simply ensuring you have delicious leftovers for meal prep throughout the week. The substantial yield and straightforward preparation make it an ideal choice when you need to feed many without spending hours in the kitchen.

Adjusting the Recipe: Halving and Cook Times

Yes, this versatile recipe can absolutely be scaled down to suit smaller appetites or fewer servings! You can halve all the ingredients with one key exception: the thin liquid (broth/water). For a 6-quart Instant Pot, only reduce the total thin liquid by about ½ cup. If you’re using an 8-quart pot, reduce it by ¼ cup. This specific amount of liquid is crucial for the Instant Pot to properly build pressure, ensuring your dish cooks efficiently and safely. Rest assured, the core cook time for the pressure cooker remains the same regardless of whether you halve the recipe or make the full batch.

Should you find the sauce a little too thin after cooking, a simple solution is to stir in an extra tablespoon or two of tomato paste. This will quickly thicken the sauce to your desired consistency, enhancing its body and richness without altering the core flavor profile.

Perfect Pairings: What to Serve with Instant Pot Sausage and Peppers

The beauty of Instant Pot Sausage and Peppers lies in its versatility. The savory sausages, tender peppers, and rich tomato-based sauce complement a wide array of side dishes. Here are some fantastic suggestions to complete your meal:

  • Fresh Green Salad: A light, crisp salad with a vinaigrette dressing offers a refreshing contrast to the hearty main dish.
  • Fruit Salad: For a touch of sweetness and vibrant freshness, a simple fruit salad can be a delightful accompaniment.
  • Crusty Bread (French Bread is Ideal): Don’t underestimate the power of good bread! French bread is perfect for soaking up every last drop of the incredible sauce, ensuring no flavor goes to waste.
  • Gnocchi: Soft, pillowy gnocchi provides a wonderful texture and acts as an excellent base for the flavorful sauce.
  • Fried Potatoes: Crispy fried potatoes offer a satisfying, comforting side that pairs wonderfully with the robust flavors of the sausage and peppers.
  • Over Pasta: A classic choice! Serve over your favorite pasta – penne, spaghetti, or rigatoni work beautifully.
  • Over Rice: Fluffy white or brown rice is a fantastic absorbent base for the rich sauce.
  • Over Quinoa: For a nutritious, gluten-free option, quinoa is an excellent alternative to rice or pasta.
  • On a Hoagie Roll: Our personal favorite! This transforms the dish into a hearty sandwich, perfect for a casual meal. Load it up with extra sauce for the ultimate experience.
  • Over Cauliflower Rice: A great low-carb alternative for those mindful of their carb intake, allowing you to enjoy all the flavors guilt-free.

With such a generous amount of delicious sauce, you can confidently add a lavish serving to whatever side dish you choose, ensuring a satisfying and flavor-packed meal every time. The options are truly endless, allowing you to customize your dining experience to your exact preferences!

Mastering Instant Pot Sausage and Peppers: Step-by-Step Guide

Creating this flavorful dish in your Instant Pot is surprisingly simple, but a few key steps and tips will ensure a perfect result. Let’s walk through the process:

1. The Art of Mise en Place (Preparation)

Before you even turn on your Instant Pot, the first crucial step is to gather and prepare all your ingredients. This practice, known as “mise en place,” involves chopping all the vegetables, opening any canned goods, and measuring out your spices. This strategic preparation prevents any last-minute rushing, reduces the chances of burning your food while you’re scrambling for an ingredient, and ultimately makes the entire cooking process smoother and more enjoyable. A well-prepped kitchen is a happy kitchen!

2. Achieving Perfect Sausage Browning

Begin by browning the Italian sausages in your Instant Pot using the Sauté function. It’s best to do this in two batches to avoid overcrowding the pot, which can steam the sausages instead of browning them. You’re not aiming to cook them all the way through at this stage; rather, the goal is to develop a beautiful golden-brown color on the exterior. This browning process creates a rich depth of flavor and texture that is essential for the best possible outcome. Each batch should only take a few minutes per side.

3. Sautéing Onions and Deglazing for Flavor

After removing the browned sausages, add your sliced red onion to the pot and sauté until it begins to soften. If the pot seems a little dry at this point, feel free to add about ¼ cup of the chicken broth or water earlier than instructed. This liquid is key for a crucial step: deglazing. Use a sturdy wooden or silicone spoon to scrape up all the flavorful browned bits that have stuck to the bottom of the pot. This not only adds immense flavor to your sauce but also prevents a potential “BURN” error during pressure cooking. Once deglazed, add the minced garlic and sauté for just about a minute until fragrant; be careful not to burn it.

4. The Importance of Layering Tomato Products

When incorporating tomato products into your pressure cooker, employing a strategic layering method is paramount. Tomatoes contain natural sugars that can easily scorch and stick to the bottom of the pot, leading to a “BURN” error. Since the Instant Pot’s heating element is at the bottom and you cannot stir the contents once the lid is sealed, you want to ensure tomato-based ingredients are not directly touching the bottom. After adding the remaining broth and seasonings, layer the bell peppers, then the browned sausages, and finally, pour in the diced tomatoes, tomato sauce, and spoon the tomato paste on top. Resist the urge to stir everything together at this point.

5. Pressure Cooking and Natural Release

Once your ingredients are layered, secure the lid, and set the vent to sealing (if your model doesn’t do so automatically). Select the Pressure Cook (or Manual) setting for 10 minutes on High pressure. The pot will take several minutes to build pressure, so be patient. While burn errors are less common with proper deglazing and layering, it’s always good practice to stay nearby during the pressure-building phase, especially with newer, more sensitive Instant Pot models.

After the cooking cycle completes, allow the Instant Pot to perform a 4-minute Natural Release (NR). This means you simply let the pot sit undisturbed for four minutes after the cook time finishes. This brief natural release helps tenderize the ingredients further and prevents sudden pressure changes. Following the 4 minutes, carefully manually release any remaining pressure. Once the float valve drops, it’s safe to open the lid.

6. Finishing Touches: The Sauce

Upon opening the lid, gently remove the cooked sausages to a plate and cover them lightly to keep them warm. Then, carefully stir the sauce in the pot. The bell peppers will be exceptionally soft, which is intentional! As they break down slightly, they release their sweet, savory juices, contributing significantly to the depth and richness of the sauce. This gentle stirring will incorporate the tomato paste, naturally thickening the sauce to a perfect consistency without making it watery.

Variations to Customize Your Sausage and Peppers

While the classic Instant Pot Sausage and Peppers recipe is perfection itself, feel free to experiment and make it your own! Here are a few ideas:

  • Spice it Up: Add a pinch of red pepper flakes with the other seasonings for a little kick.
  • Add More Veggies: Sauté mushrooms with the onions, or stir in some zucchini or spinach during the final stirring phase for extra nutrition and flavor.
  • Herb Boost: Fresh basil or parsley stirred in at the end can brighten the flavors considerably.
  • Cheese Please: A sprinkle of freshly grated Parmesan or mozzarella cheese over individual servings takes this dish to the next level.
  • Different Sausages: While Italian sausage is traditional, feel free to try chicken or turkey sausage for a lighter alternative. Adjust browning time as needed.

Can Instant Pot Sausage and Peppers be Frozen?

Absolutely! This recipe freezes beautifully, making it an excellent option for meal prepping or having a ready-to-go dinner on busy nights. Once the dish has cooled completely, transfer individual or family-sized portions into airtight, plastic freezer bags or freezer-safe containers. Press out any excess air from the bags to prevent freezer burn. It can be stored in the freezer for up to 3 months.

To reheat, simply thaw the frozen sausage and peppers in the refrigerator overnight. Then, gently warm it on the stovetop over medium-low heat, stirring occasionally until heated through. Alternatively, you can reheat it in the microwave. Reheating slowly helps maintain the integrity of the sauce and the tenderness of the ingredients.

Equipment

  • 6 qt or 8 qt Electric Pressure Cooker

Ingredients

  • 1 Tablespoon Olive Oil
  • 2 -19 oz packages Italian Sausages (I like the Johnsonville® Sweet Italian Mild)
  • 1 lg Red Onion sliced
  • 4 lg cloves Garlic, minced
  • 1 ¼ cup Chicken Broth or Water, divided
  • 1 Tablespoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Coarse Salt
  • ½ teaspoon Black Pepper
  • 4 Bell Peppers, different colors, sliced lengthwise, about 1 inch wide
  • 1 -14.5 oz can Diced Tomatoes, with juice
  • 1 -15 oz can Tomato Sauce
  • 1 -6 oz can Tomato Paste

Instructions

  • Gather all of your ingredients and prepare them (chop the veggies, open the cans, measure the spices, etc.). This “mise en place” makes the cooking process much smoother.
  • Turn on the Sauté setting on your pressure cooker (e.g., Instant Pot). When it indicates “Hot,” add the olive oil, then one package of the Italian sausages (typically 5 per package). Brown them for about 4 minutes on both sides until they have a nice golden color, then remove them to a clean plate. Repeat this process with the second package of sausages to ensure even browning and rich flavor development.
  • Add the sliced red onions to the pot and stir, cooking until they begin to soften, usually about 3-5 minutes. To deglaze the pot, add ¼ cup of the chicken broth or water. Use a sturdy wooden or silicone spoon to scrape the bottom of the pot thoroughly, releasing all the delicious browned bits. This step is crucial for flavor and to prevent a “BURN” error.
  • Stir in the minced garlic and sauté for just one minute until it becomes fragrant. Be careful not to burn the garlic, as it can turn bitter.
  • Pour in the remaining chicken broth or water, Italian seasoning, garlic powder, onion powder, coarse salt, and black pepper. Stir everything together to combine the seasonings with the onions and broth.
  • Carefully add the sliced bell peppers to the pot, spreading them out evenly over the seasoned liquid. At this stage, do not stir the contents.
  • Place the browned sausages back into the pot, arranging them on top of the bell peppers. Again, do not stir the layers.
  • Pour in the can of diced tomatoes (with their juice) and the can of tomato sauce over the sausages and peppers. Spoon the tomato paste directly on top of these layers. It is very important not to stir at this point, as tomato products can easily cause a “BURN” error if they settle at the bottom.
  • Close the Instant Pot lid and make sure the sealing vent is set to the “Sealing” position (some models do this automatically). Cancel the Sauté setting.
  • Press the “Pressure Cook” (or “Manual”) button or dial. Use the +/- buttons to select a cook time of 10 minutes. Ensure “High Pressure” is selected. The pot will now take several minutes to build pressure before the cooking countdown begins. It’s advisable to stay near the pot during this phase to monitor for any potential “BURN” errors, although proper deglazing and layering significantly reduce this risk.
  • Once the 10-minute cook time is finished, allow the pot to naturally release pressure for 4 minutes. This means doing nothing and letting the pot sit undisturbed for four minutes. After 4 minutes, manually release any remaining pressure by carefully turning the sealing vent to the “Venting” position (use a long handle utensil to protect your hand from the steam).
  • When the float valve (pin) in the lid drops down, indicating all pressure has been released, carefully open the lid. Remove the cooked sausages to a plate and cover them lightly to keep them warm while you finish the sauce.
  • Gently stir the peppers and sauce in the pot, incorporating the tomato paste. The bell peppers will be very soft and will break down further as you stir; this is intentional, as their breakdown contributes significantly to the flavor and body of the sauce, thickening it naturally and preventing it from being too watery.
  • Serve the Instant Pot Sausage and Peppers hot, with a generous portion of the rich, flavorful sauce, over your choice of rice, quinoa, pasta, or nestled in a warm hoagie roll. Enjoy this comforting and delicious meal!
