Why This Gluten-Free Angel Food Cake Roll is a Must-Try
Angel food cake has always been celebrated for its incredibly light, airy texture and delicate flavor. Making it gluten-free opens up a world of possibilities for those with dietary restrictions, allowing everyone to enjoy this classic dessert. Our special recipe for this gluten-free cake roll is an adaptation of my beloved Gluten-Free Angel Food Cake recipe. Instead of the traditional tube pan, which yields a tall, round cake, this version is baked in a cake roll pan. This rectangular pan allows the cake to bake into a thin, pliable sheet, perfect for rolling.
The magic happens post-baking: the warm cake is carefully rolled up in a thin, powdered-sugar-dusted dish towel as it cools. This crucial step trains the cake to maintain its rolled shape, preventing cracks when you later unroll and fill it. Once completely cooled, the cake is gently unfurled and generously spread with a delightful whipped cream cheese and fresh berry filling. The contrast between the cloud-like cake and the rich, tangy, fruit-studded cream cheese is simply irresistible, creating a harmonious balance of flavors and textures.

The Art of Making a Perfect Gluten-Free Angel Food Cake Roll
Creating an angel food cake from scratch, especially a gluten-free version, might seem intimidating, but with the right techniques and a little patience, you’ll achieve a light, spongy cake that’s perfect for rolling. The key to its signature ethereal texture lies in whipping egg whites to perfection and carefully folding in the dry ingredients.
Key Steps for the Angel Food Cake:
- Room Temperature Egg Whites: This is perhaps the most critical tip. Egg whites at room temperature whip up with significantly more volume and stability, leading to a much lighter cake. Allow them to sit out for at least 30 minutes after separating.
- Whipping Process: Begin by beating the egg whites until they start to foam, then introduce stabilizers like salt and cream of tartar. Cream of tartar helps to create a more stable meringue, preventing it from collapsing. Vanilla and almond extracts are added for a delicate flavor profile that complements the berries beautifully.
- Gradual Sugar Addition: Slowly adding granulated sugar, a tablespoon at a time, ensures that the sugar dissolves properly and integrates into the egg whites, creating a glossy, firm meringue with stiff peaks. This structure is essential for the cake’s rise and texture.
- Gentle Folding of Dry Ingredients: The dry ingredients—a blend of gluten-free 1:1 baking flour, cornstarch, and powdered sugar—must be folded into the whipped egg whites with the utmost care. This step is crucial for maintaining the volume and airiness of the meringue. Overmixing will deflate the egg whites, resulting in a dense cake. Use a spatula and a light hand, folding in about a third of the dry mixture at a time until just combined.
- Baking in a Cake Roll Pan: A 10x15x1-inch cake roll pan is essential for this recipe, allowing the cake to bake thin enough to be pliable for rolling. It’s important not to grease the pan; the cake needs to cling to the sides to climb and achieve its height. Lining the bottom with parchment paper is sufficient.
- The Rolling Technique: As soon as the cake emerges from the oven, gently loosen its edges. Immediately invert it onto a clean, thin dish towel (preferably a flour sack towel, free of scented detergent) that has been generously dusted with powdered sugar. The powdered sugar prevents sticking and adds a subtle sweetness. While still warm, carefully roll the cake up with the towel inside it, starting from a short end. This step “trains” the cake to hold its shape, making it much easier to handle once cooled.

Crafting the Luscious Cream Cheese and Berry Filling
The creamy, tangy filling is truly a match made in heaven for the delicate, airy angel food cake. This delightful blend of whipped cream cheese and fresh berries not only adds a burst of flavor but also contributes to the cake’s patriotic aesthetic. You have the freedom to customize the filling with any combination of berries you prefer. For a classic red, white, and blue theme, a mix of vibrant raspberries, sweet blueberries, and juicy diced strawberries is ideal. I also recommend reserving some fresh berries to elegantly top the decorated cake, enhancing its visual appeal.
Tips for the Perfect Filling:
- Softened Cream Cheese: Ensure your cream cheese is at room temperature for easy blending and a smooth, lump-free filling.
- Gradual Mixing: Beat the cream cheese until smooth, then gradually add powdered sugar and vanilla extract. Slowly incorporate the heavy cream while beating on low speed, then increase speed to whip until stiff peaks form. This method ensures a light, fluffy, yet stable filling.
- Berry Choices: While raspberries, blueberries, and strawberries are fantastic for their color and flavor, feel free to experiment with other seasonal berries like blackberries or sliced cherries. Gently fold them into the finished cream cheese mixture to avoid crushing them.
Serving and Storage Suggestions
This Gluten-Free 4th of July Dessert is best served within 24 hours of assembly to ensure the cake remains fresh and the filling maintains its perfect consistency. If you plan to make it ahead, you can bake the angel food cake a day in advance, roll it up, and store it tightly wrapped at room temperature. Prepare the filling and assemble the cake roll on the day of your event for optimal freshness. Store any leftovers loosely covered in the refrigerator. The vibrant colors of the berries, combined with the pristine white cake and filling, make for an unforgettable presentation.

Ingredients
For the Angel Food Cake:
- 1 1/2 cups egg whites from 10-11 large eggs
- 3/4 cup gluten-free 1:1 baking flour
- 1/4 cup cornstarch
- 3/4 cup powdered sugar
- 3/4 cup + 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons cream of tartar
- 1 tablespoon vanilla extract
- 1/4 teaspoon almond extract
- 1 cup powdered sugar for dusting the cloth to roll up the cake
For the Filling:
- 1 (8 oz) package cream cheese, softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream
- 1 1/2 cups raspberries
- 1 1/2 cups blueberries
- 1 1/2 cups strawberries, diced
Instructions
For the Angel Food Cake:
- Separate the egg whites and allow them to sit at room temperature for at least 30 minutes. Line the bottom of a 10x15x1 cake roll pan with parchment paper. Do not grease.
- Preheat the oven to 350°F (175°C). In the bowl of a food processor, process the gluten-free flour, cornstarch, and 3/4 cup powdered sugar together until smooth, about 30 seconds. Set aside.
- Process the granulated sugar slightly, about 5-7 pulses. You don’t want to turn it into powdered sugar, just a little finer than it is normally. Set aside.
- Place the room temperature egg whites in the bowl of a stand mixer fitted with the whisk attachment. Beat on high speed until starting to foam, then add the salt and cream of tartar. Add the vanilla and almond extracts and continue whipping on high speed.
- Gradually add the processed granulated sugar slowly, about 1 tablespoon at a time, to the egg whites while they are whipping. Continue whipping until stiff, glossy peaks form. The meringue should be firm and hold its shape.
- Slowly and gently fold in the dry ingredients (flour, cornstarch, powdered sugar mixture) 1/3 at a time with a rubber spatula. Do this very carefully and slowly using a lifting motion to avoid deflating the egg whites. This careful folding is the key to a light and airy angel food cake. Scoop the batter into the prepared cake roll pan and spread evenly.
- Bake at 350°F (175°C) for 30 minutes, or until the cake is lightly golden and springs back when lightly touched. Meanwhile, lay out a clean, thin dishcloth or flour sack towel on a flat surface. Generously sprinkle 1 cup of powdered sugar over the dishcloth in an area slightly larger than your cake roll.
- Immediately after pulling the cake out of the oven, use a knife or thin spatula to gently pull the cake away from the edges of the pan. Invert the hot cake directly onto the powdered sugar-dusted towel. Carefully peel off the parchment paper. Immediately roll up the cake starting at a short end, WITH the towel inside. Let it cool completely at room temperature for 1-2 hours. This step is crucial for the cake to learn its rolled shape.
For the Filling:
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the 3/4 cup powdered sugar and 1 teaspoon vanilla extract, beating on low speed until just combined. While continuing to beat on low, slowly pour in the heavy cream. Once all the cream has been added, increase the mixer speed to high and beat for 3-4 minutes, or until the mixture forms stiff peaks, similar to whipped cream.
- Carefully unroll the completely cooled cake from the towel. Leave the cake on the towel while you spread half of the prepared cream cheese filling evenly over the surface. Then, artfully arrange half of the fresh raspberries, blueberries, and diced strawberries over the filling. Carefully roll the cake back up, this time WITHOUT the towel, and transfer it to a serving plate or platter.
- Spread the remaining cream cheese filling over the top and sides of the cake roll. Decorate with the remaining fresh berries for a truly festive and patriotic finish.
- Serve immediately and enjoy this spectacular Gluten-Free 4th of July Dessert! This cake is best enjoyed within 24 hours of making it for peak freshness.

Be sure to use a very thin, clean flour sack towel that hasn’t been washed with scented detergent for best results. Scented detergents can impart unwanted flavors to your delicate cake. I recommend these specific towels for their ideal thickness and absorbency.
