Instant Pot Tomato Soup: Your Go-To Recipe for Ultimate Comfort

As an avid cook, I often find myself juggling a busy schedule, and sometimes, even the most passionate chefs need a little help in the kitchen. My friends and family know I love to cook, but what they don’t always realize is when I leverage smart shortcuts to create amazing meals. And honestly, as long as the food tastes fantastic, who really cares about the how?

Enter the humble canned tomato. Far from being a “lesser” ingredient, canned tomatoes are an absolute godsend in the kitchen. They are picked at peak ripeness and canned immediately, locking in a consistent, vibrant flavor that can often surpass out-of-season fresh tomatoes found in grocery stores. While I adore growing a bountiful crop of tomatoes in my garden each summer, there are years – like this one, when I was busy with work and recovering from an injury – where it just isn’t feasible. Even relying on my favorite local farmers’ market for fresh produce becomes challenging once fall arrives and the tomato season ends.

That’s where the magic of delicious, readily available canned tomatoes truly shines. They provide a robust, tangy base that is perfect for soups, sauces, and stews all year long, ensuring that a comforting bowl of tomato soup is never out of reach. Incorporating them into this Instant Pot recipe is a game-changer, guaranteeing a perfect, consistently flavorful result every time.

Beyond the Basics: Enhancing Your Instant Pot Tomato Soup Experience

While the recipe itself is straightforward, there are many ways to elevate this Instant Pot Tomato Soup to an even higher level of culinary delight. Consider adding a touch of sweetness with a pinch of sugar or a splash of balsamic vinegar to balance the acidity of the tomatoes. For an extra layer of umami, a tablespoon of tomato paste, sautéed with the onions, can deepen the soup’s flavor profile significantly. Don’t be afraid to experiment with your broth choice; a rich homemade chicken broth will always yield superior results, but a good quality store-bought vegetable broth makes this soup vegetarian-friendly and equally delicious.

The texture of your soup is also key. While an immersion blender makes quick work of pureeing the soup directly in the Instant Pot, don’t rush this step. Blend until silky smooth for a classic creamy texture, or leave it slightly chunky if you prefer more body. Remember to exercise extreme caution if transferring hot soup to a stand blender, blending in small batches to avoid overflows and steam buildup.

Serving Suggestions: The Perfect Accompaniments

While the grilled cheese sandwich is a timeless companion, don’t limit your options! This versatile soup pairs wonderfully with a variety of sides. Think about a crusty loaf of artisan bread for dipping, a light green salad with a vinaigrette dressing to cut through the richness, or even a simple side of garlic bread. For a more substantial meal, you could swirl in some cooked pasta, like small shells or ditalini, to create a heartier soup. A dollop of pesto, a sprinkle of fresh chives, or a swirl of sour cream can also add visual appeal and a burst of flavor as a garnish.

Equipment

  • 6-quart Electric Pressure Cooker

Ingredients

  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Butter
  • 1 Onion, chopped
  • 4 Cloves of Garlic, pressed or minced
  • ¼ teaspoon Red Pepper Flakes (optional)
  • 3 15-ounce cans Diced or Crushed Tomatoes, with juice
  • 4 cups Broth, chicken or vegetable
  • 1 teaspoon Kosher Salt, or ½ teaspoon table salt (or to taste)
  • ½ teaspoon Pepper
  • 1 teaspoon Italian Seasoning
  • 1 Tablespoon Fresh Basil, (chopped) or 1 teaspoon dried

To Finish (Optional, but really makes this soup extra special!)

  • ½ cup Grated Parmesan Cheese (or more to taste)
  • ½ cup Heavy Cream

Garnish

  • Croutons
  • Fresh Basil
  • Parmesan Cheese

Instructions

  1. Press the Sauté button on your Instant Pot. Once the display indicates “Hot,” add the olive oil and butter to the pot.
  2. Add the chopped onion to the pot and sauté until it becomes translucent and lightly browned, approximately 7 minutes. Stir occasionally to prevent sticking. Browning the onion slightly adds a richer flavor to the soup.
  3. Stir in the minced garlic and red pepper flakes (if you’re using them for a touch of heat). Cook for an additional 30 seconds, stirring continuously to prevent the garlic from burning.
  4. Carefully add the canned diced or crushed tomatoes (with their juice), broth (chicken or vegetable), kosher salt, pepper, Italian seasoning, and fresh or dried basil to the pot. Stir all the ingredients well to combine. Close the lid of the Instant Pot and secure it in the locked position. Ensure the steam release knob is set to the “Sealing” position.
  5. Press the “Cancel” button to end the Sauté mode. Then, select the “Manual” (or “Pressure Cook”) button and use the “+” or “-” buttons to adjust the cooking time to 5 minutes on High pressure.
  6. Once the pressure cooking cycle is complete, allow the Instant Pot to naturally release pressure for 15 minutes. After 15 minutes, carefully turn the steam release knob to the “Venting” position to manually release any remaining pressure.
  7. When the floating pin on the lid drops down, it indicates that all pressure has been released. Carefully open the lid and stir the fragrant soup.
  8. Use an immersion blender to puree the soup directly in the pot until it reaches your desired creamy consistency. Alternatively, if you don’t have an immersion blender, carefully transfer the soup in batches to a standard blender and blend until smooth. *Always use caution when blending hot liquids.*
  9. Stir in the grated Parmesan cheese and allow it to melt completely into the warm soup, adding a rich, savory depth.
  10. Gently stir in the heavy cream. This step adds a beautiful richness and velvety texture, making the soup incredibly decadent.
  11. Taste the soup and adjust the seasoning (salt and pepper) if desired, to ensure it perfectly suits your palate.
  12. Garnish as you wish with croutons, fresh basil, or extra Parmesan cheese, and serve hot. Enjoy your comforting, homemade Instant Pot Tomato Soup!

Notes

The quality of your canned tomatoes significantly impacts the final flavor of your tomato soup. Opt for a good brand of whole peeled, diced, or crushed tomatoes for the best tasting results.
