Understanding Potatoes and Gluten-Free Diets

A common question many people have, especially those adhering to a gluten-free diet, is “Are potatoes gluten-free?”. The simple answer is a resounding yes! Potatoes, in their natural, unprocessed form, are entirely gluten-free. They are tubers, not grains, and therefore do not contain gluten proteins like wheat, barley, or rye. This makes them an excellent and versatile carbohydrate source for anyone avoiding gluten.

However, it’s crucial to be mindful of how potatoes are prepared or what they are served with. For instance, french fries might be cross-contaminated if fried in the same oil as breaded items, or seasoned potato dishes might use spice blends containing gluten. For these Make-Ahead Breakfast Potato Bowls, as long as you use fresh, whole ingredients and ensure any seasonings are gluten-free, the entire meal remains safe and delicious for a gluten-free lifestyle.

If you’re looking for more gluten-free breakfast ideas or want to explore other savory options, this recipe is a fantastic starting point. It offers comfort, taste, and peace of mind for those with dietary restrictions.

Ingredients

For the Potatoes:

  • 2 pounds red-skinned potatoes washed and cut into 1-inch chunks
  • 1 small or 1/2 a large onion cut into 1-inch chunks
  • 1/2 green bell pepper cut into 1-inch chunks
  • 1/2 red bell pepper cut into 1-inch chunks
  • 2 1/2 tablespoons olive oil or avocado oil
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon onion powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • pinch of cayenne

For the Eggs:

  • 12 eggs
  • 2-3 tablespoons butter optional
  • salt & pepper to taste

Optional:

  • Freshly grated sharp cheddar cheese
  • hot sauce for serving

Instructions

  1. Preheat your oven to 425°F (220°C). On a large baking sheet, combine the diced red-skinned potatoes, chopped onion, green bell pepper, and red bell pepper. Drizzle generously with olive oil or avocado oil, then sprinkle over the salt, pepper, onion powder, garlic powder, paprika, and a pinch of cayenne. Mix thoroughly to ensure all vegetables are evenly coated with the oil and seasonings. Spread the mixture into a single, even layer for optimal roasting.
  2. Bake for 50-55 minutes, or until the potatoes are beautifully golden brown, tender on the inside, and slightly crispy on the edges. To achieve even browning and prevent sticking, make sure to stir the vegetables every 15 minutes. A sturdy metal spatula with a sharp edge can be very helpful for getting underneath the potatoes without breaking their delicious crispy bits.
  3. While the potatoes are cooling slightly, prepare your scrambled eggs. In a bowl, beat the 12 eggs until they are smooth and uniformly colored. Heat a large non-stick pan over medium-low heat and add 2-3 tablespoons of butter (or your preferred dairy-free alternative or oil if omitting butter). Once the butter is melted, pour in the beaten eggs. Cook, stirring gently, until the eggs are just set and still moist. It’s crucial not to overcook the eggs at this stage, especially if you plan on reheating them later, as they will continue to cook slightly when reheated. Season the scrambled eggs to taste with salt and pepper.
  4. Once both the potatoes and eggs have cooled enough to handle, divide them evenly among 6 individual meal prep containers. If desired, sprinkle each portion with freshly grated sharp cheddar cheese.
  5. When you’re ready to enjoy a bowl, simply reheat the potato and egg mixture in the microwave. For best results, use 50% power for 1-1 1/2 minutes, or until warmed through. For an extra kick, top with your favorite hot sauce before serving. These delicious make-ahead breakfast bowls will keep well in the refrigerator for up to 4 days. Enjoy your healthy and satisfying meal prep!

Notes

MAKE IT DAIRY-FREE: To make these breakfast bowls dairy-free, simply omit the butter when cooking the eggs (use olive oil or avocado oil instead) and skip the cheese.
