  • 1 lb Black Beans, unsoaked, rinsed
  • 1 lg Yellow Onion, whole
  • 2 Jalapeños, deseeded
  • 8 cloves Garlic, leave whole
  • 2 Bell Peppers, 1 green and 1 red, whole
  • 1 teaspoon Oregano
  • ½ teaspoon Cumin
  • ¼ teaspoon Cinnamon
  • 1 Cinnamon Stick
  • 2 Bay Leaves
  • 3-4 cups Vegetable Broth*, low sodium (or Chicken Broth)

To Finish

  • 2 tsp Kosher Salt (or more to taste)
  • 1 Tablespoon Sugar
  • cup Olive Oil

Instructions 

  • Prepare the vegetables:

    For this “dump and start” recipe, you’ll need to minimally prepare the whole vegetables. Peel the yellow onion but leave it whole. Carefully cut the jalapeños in half lengthwise and scrape out the seeds for less heat. Peel all the garlic cloves, keeping them whole. Trim the tops off the bell peppers and shake out any seeds, leaving the peppers otherwise uncut.

  • Add all the prepped ingredients to the Instant Pot liner. This includes the rinsed black beans, the whole onion, jalapeños, garlic, bell peppers, along with the dried oregano, cumin, cinnamon powder, the cinnamon stick, and bay leaves. Pour in the chicken or vegetable broth, ensuring that all the beans are fully submerged in the liquid. If they are not, add a little more broth or water until they are.

  • Secure the Instant Pot lid, ensuring it’s properly sealed. Rotate the steam release knob to the “Sealing” position to build pressure effectively.
  • Select the “Pressure Cook” or “Manual” button/dial (depending on your Instant Pot model). Adjust the +/- buttons or dial to set the cooking time to 25 minutes. Ensure the pressure level is set to “High Pressure.” The pot will now take several minutes to come up to full pressure before the cooking countdown begins.
  • Once the 25-minute cook cycle has completed, turn off your Instant Pot. It is crucial to allow a natural pressure release (NPR) for 15 minutes. During this time, the pressure will gradually decrease, and the beans will continue to cook gently, resulting in a more tender texture and preventing foaming. After 15 minutes, carefully turn the steam release knob to the “Venting” position to quick release any remaining steam/pressure.

  • Using a slotted spoon, scoop out the softened whole onion, jalapeños, garlic, and bell peppers from the pot. Transfer these cooked vegetables to a blender. Add about ¼ cup of the cooked black beans and ¼ cup of the flavorful liquid from the pot to the blender as well. This creates a rich, thick base for your beans.
  • Carefully blend the mixture until it is completely smooth and creamy. Pour this flavorful blended mixture back into the Instant Pot with the remaining beans. Stir well to combine.
