Instant Pot Cheesy Taco Pasta

Ingredients

  • 1 lb Lean Ground Beef or Lean Ground Turkey (80%-93% lean)
  • 2 ½ Tablespoons Taco Seasoning (see my recipe for homemade, or use 1 packet of store bought)
  • 1 (16 oz) Container of Salsa
  • 16 oz Pasta Shells*, medium (or use 16 oz rotini)
  • 4 cups Broth, (low sodium beef or chicken)
  • 2 cups Shredded Cheese (I use 1 cup Monterey Jack and 1 cup sharp Cheddar)

Instructions

Brown the Meat

  • Turn your Instant Pot on to Sauté mode (Normal or Medium setting if adjustable). Allow it to heat up fully.
  • Once the display reads “Hot,” add the ground meat (lean ground beef or turkey). If using ground turkey, a small amount of olive oil may be beneficial to prevent sticking. Break up the meat with a wooden spoon and cook until it’s mostly browned, but not fully cooked through.
  • Drain any excess fat from the pot. Then, add the taco seasoning to the meat. Stir well to combine, ensuring the seasoning is evenly distributed as the meat finishes cooking.
  • Pour in the salsa and broth. Using a wooden spoon, scrape the bottom of the pot thoroughly to remove any browned bits of meat that may be stuck (this crucial step is called deglazing and prevents a “Burn” notice).
  • Place a glass lid (or any lid that fits loosely) on the pot. If using the pressure cooker lid, ensure the steam release knob is set to the “Venting” position. Allow the broth mixture to heat up and begin to simmer. This pre-heating step helps in more even pressure cooking.
  • Add the pasta to the pot and gently stir to ensure it’s submerged in the liquid. Do not stir excessively after adding pasta to avoid it clumping.
  • Press “Cancel” to turn off the Sauté mode.
  • Secure the pressure cooker lid on the Instant Pot. Rotate the steam release knob to the “Sealing” position.

Pressure Cook

  • Press the “Manual” (or “Pressure Cook”) button. Use the “+/-” buttons to select a cooking time: 5 minutes for softer pasta, or 4 minutes for a more al dente texture. As a general guideline, you can also use half the lowest cook time recommended on your pasta package.
  • Once the cooking cycle finishes, the Instant Pot will beep. Turn off the pressure cooker by pressing “Cancel” or unplugging it.
  • Perform a controlled Quick Release of the pressure. To do this safely, turn the steam release knob to “Venting” in short bursts initially, especially if you see sauce sputtering. Once you’re sure no sauce will spew, turn the knob fully to “Venting” and allow all the remaining steam and pressure to escape.
  • When the float valve (pin) on the lid drops down, indicating that all pressure has been released and it’s safe to open, carefully remove the lid. Tilt the lid away from your face to avoid any lingering steam.
  • Give the pasta a good stir to mix everything thoroughly. Add the shredded cheese, stirring again until it’s completely melted and creamy. Serve immediately and enjoy!
