Essential Ingredients for the Flavorful Chicken Soup Base

The foundation of any great chicken and dumplings dish is a deeply flavorful soup base. Here’s what you’ll need, along with tips for selecting the best ingredients:

Chicken and dumpling ingredients laid out on a countertop, including chicken, vegetables, and broth
  • Chicken: For convenience and incredible flavor, we highly recommend using 4 cups of cooked and shredded chicken. This can be pre-cooked chicken breasts (boiled, baked, or pan-fried), or for the ultimate time-saver, a rotisserie chicken. Simply shred the meat from a store-bought rotisserie chicken, and you’re halfway there!
  • Chicken Stock: The quality of your stock significantly impacts the final taste. Opt for a high-quality, delicious-tasting chicken broth or stock. Always double-check labels to ensure it’s certified gluten-free. If preferred, a rich vegetable broth can also be used as a substitute.
  • Evaporated Milk: This ingredient is key to achieving that signature creamy, slightly sweet, and rich consistency that makes chicken and dumplings so irresistible. For a dairy-free version, use homemade cashew cream (instructions provided in our Expert Tips) or an unsweetened milk of choice, like almond milk.
  • Aromatics & Vegetables (Mirepoix): Celery, Onion, and Carrots: This classic trio forms the aromatic base of the soup, adding essential texture, depth of flavor, and a boost of nutrition. Dice them evenly for consistent cooking.
  • Fresh Garlic: Minced fresh garlic adds a pungent, savory kick that elevates the entire dish. Garlic powder can be used in a pinch, but fresh is always recommended for the best flavor.
  • Butter: We love the rich flavor that real butter contributes to sautéing the vegetables and creating the roux. If you’re making this recipe dairy-free, a good quality vegan butter alternative will work beautifully.
  • Gluten-Free Flour: A small amount of gluten-free all-purpose flour blend is used to create a roux, which thickens the soup base to a wonderfully luscious consistency. Any gluten-free flour blend you typically use for baking should suffice.
  • Fresh Herbs & Spices:
    • Thyme: Fresh thyme offers an earthy, slightly lemon-peppery note that complements chicken wonderfully. If fresh isn’t available, dried thyme is a suitable alternative (use 1 teaspoon dried for every 1 tablespoon fresh).
    • Fresh Parsley: Chopped fresh parsley adds a vibrant burst of freshness and color, making it an excellent garnish for the finished dish. It can also be incorporated into the dumpling dough for extra flavor.
    • Salt and Pepper: Essential for seasoning the soup to perfection. Remember to taste and adjust at the end!

Foolproof Ingredients for Tender Gluten-Free Dumpling Dough

Here’s what you’ll need for those incredibly light and fluffy gluten-free dumplings, featuring our star ingredient:

Dumpling ingredients on a counter top, including Bisquick mix, milk, eggs, and parsley
  • Gluten-Free Bisquick Pancake and Baking Mix: This is our winning ingredient! It contains a precise blend of gluten-free flours, leavening agents, and fats that are perfectly formulated for tender baked goods, including dumplings. It ensures a consistent, fluffy texture that’s hard to achieve with regular gluten-free flour blends alone.
  • Milk: Whole milk provides the best richness for the dumpling dough. However, if you’re making a dairy-free version, unsweetened almond milk or another dairy-free milk substitute works just as well.
  • Large Eggs: Eggs act as a binder and add structure and richness to the dumplings. For the best results, use room temperature eggs, as they mix more evenly into the batter.
  • Fresh Parsley: While optional, incorporating chopped fresh parsley into the dumpling dough adds a subtle herby flavor and beautiful flecks of green, enhancing both the taste and presentation.

Step-by-Step Guide: Crafting Your Gluten-Free Chicken and Dumplings

Making this hearty meal is a straightforward process, broken down into two main parts: preparing the flavorful soup base and then dropping in those perfect gluten-free dumplings.

Part 1: Preparing the Rich Chicken Soup Base

The key to a delicious chicken and dumpling dish starts with a robust and aromatic soup. Follow these steps for a perfectly creamy and flavorful base:

Sauteed veggies in a pot, followed by adding garlic to the pot
  • Step 1: Sauté the Aromatics. In a large, heavy-bottomed pot or Dutch oven, melt the butter (or vegan butter) over medium heat. Once melted, add the diced onion, carrots, and celery. Sauté for 8-10 minutes, stirring occasionally, until the vegetables have softened and the onion is translucent. This step builds the flavor foundation.
  • Step 2: Add the Garlic. Stir in the minced garlic and cook for just another minute. Be careful not to burn the garlic, as this can make it bitter. You want it fragrant, not browned.
Flour being added to the pot, then chicken stock slowly poured into the pot while whisking
  • Step 3: Create the Roux. Sprinkle the gluten-free all-purpose flour over the sautéed vegetables. Cook for 2-3 minutes, stirring constantly. This cooks out the raw flour flavor and allows the flour to absorb the butter, forming a roux that will thicken your soup. For more on this technique, see our guide on making a gluten-free roux.
  • Step 4: Gradually Add Stock. While continuously whisking, slowly pour in the gluten-free chicken stock. Add a little at a time, whisking vigorously after each addition to prevent lumps and ensure a smooth, creamy base. Continue whisking until the mixture is well combined and slightly thickened.
Evaporated milk and other ingredients simmering in a pot, and gluten-free dumpling batter in a mixing bowl
  • Step 5: Incorporate Remaining Ingredients. Once the chicken stock is fully incorporated and the soup is beginning to thicken, stir in the evaporated milk (or cashew cream, if using). Add the shredded cooked chicken, fresh or dried thyme, and cracked black pepper.
  • Step 6: Simmer the Soup. Bring the soup to a gentle simmer over medium-low heat. Let it continue to simmer gently while you prepare the dumpling dough. This allows the flavors to meld beautifully.

Part 2: Crafting and Cooking the Gluten-Free Dumplings

Now for the star of the show – the tender gluten-free dumplings, made incredibly easy with Bisquick!

  • Step 7: Prepare the Dumpling Dough. In a medium-sized mixing bowl, combine the gluten-free Bisquick pancake & baking mix with the chopped fresh parsley (if using). In a separate small bowl, whisk together the milk and eggs. Add the wet ingredients to the dry ingredients, then stir gently until the dough is just combined. Be careful not to overmix; a few lumps are perfectly fine for tender dumplings.
  • Step 8: Prepare for Dropping. Give the simmering chicken soup mixture a final good stir. Ensure the heat is set to low to maintain a gentle simmer. This creates the ideal environment for the dumplings to cook evenly without breaking apart.

  • Step 9: Drop the Dumplings. Using a large or medium cookie scoop (the size depends on your preference for dumpling size), scoop portions of the dough and gently drop them directly into the simmering soup. Arrange them evenly around the pot, leaving a little space between each dumpling as they will expand significantly while cooking.
  • Step 10: Simmer and Cover. Once all the dumplings are in the pot, cover it tightly with a lid. Allow the dumplings to simmer on low heat for 15 minutes. The steam trapped inside the pot will cook the dumplings through, making them wonderfully fluffy.
  • Step 11: Flip and Finish. Very carefully, using a spoon or spatula, gently turn over each dumpling in the pot. Be gentle to avoid breaking them apart. Continue to cook, uncovered this time, for an additional 2-3 minutes. This final uncovered simmering helps ensure they are cooked evenly and can slightly firm up their exterior.
  • Step 12: Season and Serve. Taste the soup and season generously with additional salt and pepper as needed. This final seasoning step is crucial for balancing all the flavors. Serve hot, garnished with extra fresh parsley if desired. Enjoy your homemade, comforting, and absolutely delicious gluten-free chicken and dumplings!

Storage and Reheating Tips for Gluten-Free Chicken and Dumplings

Leftover chicken and dumplings make for a fantastic next-day meal. To store, transfer the cooled leftovers to an airtight container and refrigerate for up to five days. When reheating, the dumplings may absorb more of the broth and become even softer, which is a delightful change for some. For best results, gently reheat on the stovetop over low heat, adding a splash of chicken stock or milk if the soup has become too thick. Avoid vigorous boiling, which can break down the dumplings.

Frequently Asked Questions About Gluten-Free Chicken and Dumplings

What are gluten-free dumplings made of?

Our incredibly tender gluten-free drop dumplings are primarily made using gluten-free Bisquick mix, combined with eggs and milk. This combination ensures a light and fluffy texture that rivals traditional wheat-based dumplings. For those following a dairy-free diet, the recipe can easily be adapted by substituting cow’s milk with unsweetened almond milk or another dairy-free alternative.

Are any dumplings naturally gluten-free?

Most traditional dumplings, especially those found in chicken and dumplings recipes, are made with wheat flour and therefore are not gluten-free. However, the good news is that you can absolutely make delicious gluten-free dumplings! Our recommended method involves using gluten-free Bisquick mix, which simplifies the process and consistently yields excellent results, ensuring everyone can enjoy this classic comfort food.

How do you thicken chicken and dumplings without traditional wheat flour?

When preparing a gluten-free chicken and dumpling soup, there are several effective ways to thicken the broth without using traditional wheat flour. In our recipe, we use a gluten-free all-purpose flour blend to create a roux, which provides a rich and creamy consistency. Alternatively, you can use cornstarch (mixed with a little cold water to create a slurry before adding to the hot soup), arrowroot powder, or even mashed potato flakes, which dissolve to create a thicker texture. Each method offers a slightly different result, so experiment to find your preferred thickening agent.

Can I freeze gluten-free chicken and dumplings?

Freezing chicken and dumplings is possible, though the dumplings may change texture slightly upon thawing and reheating, often becoming a bit softer. For best results, freeze the soup and dumplings separately if possible, or freeze the combined dish in an airtight, freezer-safe container for up to 2-3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop, adding extra broth or milk as needed to restore consistency.

What can I serve with gluten-free chicken and dumplings?

This hearty dish is a meal in itself, but it pairs wonderfully with a simple green salad with a light vinaigrette to cut through the richness. Other great accompaniments include roasted asparagus, steamed green beans, or a side of gluten-free cornbread for an extra touch of Southern comfort.

Expert Tips & Tricks for Perfect Gluten-Free Chicken and Dumplings

Elevate your gluten-free chicken and dumplings with these insider tips and tricks:

  • Effortless Dairy-Free Option: Making this recipe dairy-free is simpler than you think! For the soup base, swap regular butter for vegan butter, and instead of evaporated milk, use homemade cashew cream. To make cashew cream: soak 1 cup of raw, unsalted cashews in water (microwave on high for 3 minutes to quickly soften, then drain). Blend the softened cashews with 1 cup of fresh water in a high-speed blender until completely smooth and creamy. This yields a rich, dairy-free alternative that’s incredibly delicious! For the dumpling batter, use unsweetened almond milk or your preferred dairy-free milk substitute. Avoid using cashew cream for the dumplings, as its thick consistency isn’t ideal for the batter.
  • Ultimate Time-Saving Secret: Rotisserie Chicken: Don’t hesitate to use a store-bought rotisserie chicken for this recipe. It’s an absolute game-changer for cutting down prep time without compromising on flavor. The moist, seasoned chicken from a rotisserie bird integrates perfectly into the soup, and no one will ever know it wasn’t cooked from scratch!
  • Don’t Overmix the Dumpling Dough: For the most tender dumplings, mix the dough just until the ingredients are combined. Overmixing develops gluten (even in gluten-free flours, it can make things tough), leading to dense, chewy dumplings rather than light and fluffy ones.
  • Ensure a Gentle Simmer: When dropping the dumplings, make sure the soup is at a gentle simmer, not a rolling boil. A gentle simmer allows the dumplings to cook evenly and absorb moisture without disintegrating.
  • Season Generously and Taste as You Go: Salt and pepper are critical for bringing out all the flavors in this dish. Taste the soup base before adding the dumplings, and then again after the dumplings are cooked. Adjust seasonings as needed to achieve your desired flavor profile.

  • 1 cup carrots matchstick sliced or pre-shredded
  • 1 cup celery diced
  • 2 cloves garlic minced
  • 2 tablespoons gluten-free all purpose flour
  • 32 oz quart chicken stock
  • 12 oz can evaporated milk, (or 1 ½ cups unsweetened milk of choice)
  • 4 cups shredded cooked chicken
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • ½ teaspoon pepper
  • ½ teaspoon salt

For the Gluten-Free Dumplings:

  • 1 1/2 cups gluten-free Bisquick pancake & baking mix
  • 1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley
  • cup milk of choice
  • 2 eggs
  • More fresh parsley for topping

Instructions

Make the Chicken Soup

  1. In a large heavy-bottomed pot or Dutch oven, melt the butter over medium-high heat. Add the onion, carrots and celery. Cook for 8-10 minutes, until softened.
  2. Add the garlic and cook for another minute.
  3. Sprinkle the gluten-free flour over the vegetables and cook for 2-3 minutes, stirring often. (You want to cook out any raw flour flavor.)
  4. While whisking, slowly pour in the chicken stock. Whisk in a little at a time to avoid any lumps.
  5. Once the chicken stock has been added, stir in the evaporated milk (or cashew cream if using). Stir in the shredded chicken, thyme and cracked pepper.
  6. Bring to a simmer, and let cook while you make the dumplings.

Make the Gluten-Free Dumplings

  1. For the Dumplings: In a medium bowl, combine the gluten-free Bisquick pancake & parsley. Add the milk and egg, then stir until the dough is evenly combined.
  2. Give the chicken mixture a good stir and make sure the heat is set to low before scooping the dumplings.
  3. Using a large or medium cookie scoop (either will work! just depends on what size you like the dumplings), scoop the dough and drop directly into the simmering soup. Place them all around the pot and leave space between the dumplings. They will spread as they cook.
  4. Cover the pot with a lid and allow the dumplings to simmer on low heat for 15 minutes.
  5. Very carefully turn over each dumpling in the pot (being careful not to break them apart) and continue to cook, uncovered, for an additional 2-3 minutes.
  6. Season to taste with salt and pepper (this is important!) and serve. Enjoy!

Notes

RECIPE NOTES

  • After testing making gluten-free dumplings many times, I’ve found they turn out best when you make them with gluten-free Bisquick pancake and baking mix rather than gluten-free flour.
  • Dairy-free option: I love making cashew cream to keep this recipe dairy-free. Here’s how: Place 1 cup of raw, unsalted cashews in a microwave-safe bowl and cover with water. Microwave on high for 3 minutes to soften. Then drain and add to a high-speed blender with 1 cup of fresh water. Blend until smooth. Use in place of the evaporated milk–it’s so delicious! You can also use vegan butter in place of the butter and almond milk or your milk of choice for the dumpling batter. (Don’t use cashew cream for the dumpling batter, as it’s too thick.)
  • Time-saving tip: I use rotisserie chicken in this recipe to save time. No one will know the difference!
