  • 1 Tbsp Olive Oil
  • 2 Tbsp Unsalted Butter
  • 1 med Onion, chopped
  • 1 ½ lbs Chicken Breast, cubed
  • 1 ¼ tsp Kosher Salt (or 3/4 tsp table salt)
  • ½ tsp Pepper
  • 1 tsp Garlic Powder
  • ½ tsp Onion Powder
  • ¼ tsp Thyme Leaves (dried, not ground)
  • 3 cloves Garlic, finely minced
  • 1 ½ cups Long Grain White Rice, well rinsed
  • 2 ½ cups Chicken Broth, low sodium
  • 2 ½ cups Shredded Cheddar Cheese, (I like sharp)
  • 2 lbs Frozen Broccoli Florets

Instructions

  • Turn on the Sauté setting of your Instant Pot. Once it indicates it’s hot, add the olive oil and butter.
  • Add the chopped onion to the pot and cook for approximately 3 minutes, stirring occasionally, until the onion begins to turn translucent and softens.
  • Add the cubed chicken breast to the pot. Sprinkle generously with salt, pepper, garlic powder, onion powder, and thyme. Stir everything together to coat the chicken evenly.
