Discovering the Delight of Instant Pot Southwest Corn Pudding

There’s something inherently comforting about a warm, savory corn dish, isn’t there? For many of us, cornbread holds a special place in our hearts and on our dinner tables. I fondly recall my Mom often making cornbread muffins, typically from a simple box mix. We’d eagerly place them at the bottom of our bowls, ready to be generously covered with her hearty homemade chili. That combination was pure bliss!

This Instant Pot Southwest Corn Pudding takes that nostalgic cornbread comfort and elevates it with a Tex-Mex twist, transforming a humble mix into something truly extraordinary. It’s a delightful departure from typical sweet corn puddings, offering a rich, savory profile that perfectly complements a wide array of main courses. While it carries the name “pudding,” don’t expect a creamy, custard-like consistency. Instead, picture a dense, incredibly moist cornbread, infused with bold flavors, making it a perfect hearty side.

Unlike traditional, sweeter corn puddings often made with creamed corn and a hint of sugar, our Southwest version embraces a savory essence. It incorporates a harmonious blend of vegetables, spices, and cheese, creating a taste experience that is robust and satisfying. This isn’t just a side dish; it’s a flavorful bread-like accompaniment designed to enhance your meal, adding a touch of Tex-Mex flair without being overly rich or sweet.

Why the Instant Pot is Perfect for This Recipe

Cooking this Southwest Corn Pudding in your Instant Pot is a game-changer. The electric pressure cooker creates an ideal moist environment for baking, preventing the pudding from drying out and ensuring a consistently tender and perfectly cooked result every time. This method locks in moisture and flavor, yielding a pudding that’s wonderfully soft and never crumbly. Plus, it’s a fantastic way to keep your oven free for other dishes, especially when entertaining or preparing a multi-course meal.

The Instant Pot streamlines the cooking process, taking the guesswork out of baking and delivering a delicious side dish with minimal hands-on time. It’s the kind of dish that truly shines when cooked under pressure, allowing the flavors to meld beautifully and the texture to reach its optimal moistness. Whether you’re an Instant Pot veteran or just starting out, you’ll appreciate how effortlessly this recipe comes together.

Ingredients: Crafting the Southwest Flavor Profile

The beauty of this Instant Pot Southwest Corn Pudding lies in its simple yet impactful ingredients, many of which you likely already have in your pantry. We start with a foundational cornbread mix, which provides a convenient base while allowing us to customize the flavor. The addition of a Southwest vegetable blend, typically featuring corn, black beans, red pepper, and onion, injects both texture and a burst of regional taste. Canned green chiles add a mild, earthy heat that is quintessential to Southwest cuisine.

For richness and tang, sour cream and milk are incorporated, contributing to the pudding’s luxurious moisture. Beaten eggs act as a binder, giving the pudding its cohesive structure. The savory depth is further enhanced by Monterey Jack cheese, which melts beautifully and adds a creamy, slightly tangy element. A carefully chosen blend of spices – chili powder, kosher salt, garlic powder, onion powder, and Mexican oregano – ties all the Tex-Mex flavors together, creating a well-rounded and irresistible profile. A few dashes of hot sauce at the end can kick up the heat to your preference, making this dish truly your own.

Tips for Ingredient Selection:

  • Cornbread Mix: While any standard cornbread mix works, choose one you enjoy. Some mixes are sweeter than others; opt for a less sweet variety for a more savory pudding.
  • Southwest Vegetable Blend: Frozen blends are convenient, just make sure to thaw and drain them well. Canned options work too, simply drain them thoroughly to avoid excess moisture.
  • Green Chiles: A mild variety is usually preferred, but if you love heat, feel free to use a hotter type.
  • Cheese: Monterey Jack melts wonderfully, but cheddar, Colby Jack, or a Mexican blend would also be delicious substitutions.
  • Mexican Oregano: This herb has a distinct, more earthy flavor than Mediterranean oregano, which enhances the Southwest profile. If you only have regular oregano, use half the amount as specified.

Serving Suggestions for a Complete Tex-Mex Feast

While this Instant Pot Southwest Corn Pudding is absolutely delicious on its own, it truly shines as part of a larger meal. It’s an excellent companion to a hearty bowl of chili, soaking up all those rich flavors, just like those cornbread muffins from my childhood. But the versatility doesn’t stop there!

  • Serve it with a generous dollop of cool sour cream to balance the savory notes.
  • Add a spoonful of your favorite salsa for a fresh, zesty kick.
  • A sprinkle of chopped green onion provides a fresh, aromatic garnish.
  • For those who love extra heat, a few dashes of your favorite hot sauce will elevate the experience.
  • Pair it alongside my Instant Pot Black Bean Soup for a comforting and complete Tex-Mex feast.
  • It also makes a fantastic side for grilled chicken, barbecued ribs, or even a simple roasted pork loin.

Ingredients

For the Pressure Cooker (preferably use a tall trivet/rack with 2 1/2″ to 3″ legs)

  • 2 ½ cups Water

Corn Pudding

  • 1 (8 1/2) oz Box of Corn Bread Mix
  • 1 cup Southwest Vegetable Blend (frozen-thawed or canned-drained) (corn, black beans, red pepper, onion, etc)
  • ½ (4 oz) can Green Chiles (drained)
  • ½ cup Monterey Jack Cheese (Shredded)
  • 1 tsp Chili Powder
  • ½ tsp Kosher Salt (or 1/4 tsp table salt)
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder
  • cup Sour Cream
  • 2 Eggs (beaten)
  • cup Milk
  • 1 tsp Mexican Oregano (or 1/2 tsp regular oregano) dried
  • A few dashes Hot Sauce

Garnish with Any of These

  • Sour Cream
  • Salsa
  • Green Onion
  • Hot Sauce

Instructions

  • Lightly grease a 1 to 1 1/2 quart oven-safe dish with cooking spray. For easier removal, consider lining the bottom with a 7″ parchment round if using a metal pan like a 7″ stackable stainless pan.
  • Pour 2 ½ cups of water into the inner pot of your Instant Pot pressure cooker. Carefully place a tall trivet or rack (with 2 1/2″ to 3″ legs) into the Instant Pot liner. This setup allows for steaming the pudding without it sitting directly in the water.
  • In a large mixing bowl, combine the cornbread mix, Southwest vegetable blend, drained green chiles, shredded Monterey Jack cheese, chili powder, kosher salt, garlic powder, onion powder, sour cream, beaten eggs, milk, Mexican oregano, and a few dashes of hot sauce. Mix thoroughly until all ingredients are well combined and a smooth batter forms. Be careful not to overmix.
  • Pour the prepared corn pudding batter into your greased (and parchment-lined, if using) dish. Cover the dish tightly with aluminum foil. This prevents condensation from dripping onto the pudding during pressure cooking.
  • Using a foil sling or trivet handles, carefully lower the covered pan onto the rack inside the Instant Pot. Ensure the pan is stable and centered.
  • Secure the lid on your Instant Pot and lock it into place. Twist the steam release knob to the “Sealing” position, ensuring it’s fully closed to build pressure effectively.
  • Select the “Pressure Cook” (or “Manual”) button. Use the “+” or “-” buttons to adjust the cooking time to 50 minutes on high pressure. The Instant Pot will take some time to come to pressure before the cooking countdown begins.
  • Once the cooking cycle is complete, allow the Instant Pot to naturally release pressure for 5 minutes (Natural Release, NR). This gentle release helps the pudding set properly and prevents it from cracking. After 5 minutes, carefully turn the steam release knob to the “Venting” position for a Quick Release (QR) to release any remaining pressure. Stay clear of the steam.
  • Once the float valve (pin in the lid) has dropped, indicating all pressure has been released, carefully open the lid. Using the sling, gently lift the corn pudding pan out of the Instant Pot and transfer it to a wire cooling rack.
  • Allow the pudding to cool on the rack with the foil still in place. This helps it retain moisture and continue to set. Let it cool for at least 15-20 minutes, or until it’s comfortably warm to handle, before serving.
  • To serve, carefully remove the foil. If desired, you can invert the corn pudding onto a serving plate. Gently shake the pan if needed to help release it. If you used a parchment round, peel it off the bottom before slicing and serving.
  • Serve warm and garnish with your choice of sour cream, fresh green onion, a dollop of salsa, or an extra dash of hot sauce. Enjoy this flavorful and moist Southwest Corn Pudding!

Frequently Asked Questions About Instant Pot Southwest Corn Pudding

Here are answers to some common questions you might have about making this delicious Instant Pot Southwest Corn Pudding:

Q: Can I use fresh or canned corn instead of a frozen vegetable blend?

A: Absolutely! If using fresh corn, you’ll need about 1 to 1.5 cups of kernels. If using canned corn, drain it very well before adding it to the mixture to prevent excess moisture in your pudding. The key is to ensure any added vegetables are well-drained.

Q: What if I don’t have a tall trivet for my Instant Pot?

A: A tall trivet (2.5-3 inches) is ideal to keep the pan elevated above the water. If you only have a shorter trivet, you might need to use slightly less water in the Instant Pot liner to ensure it doesn’t touch the bottom of your pudding pan. However, a taller trivet is highly recommended for best results and ease of removal.

Q: Can I make this corn pudding ahead of time?

A: Yes, you can! You can prepare the entire dish, cook it in the Instant Pot, and then let it cool completely. Store it covered in the refrigerator for up to 3-4 days. To reheat, you can gently warm slices in the microwave, or cover the pan with foil and warm it in the oven at 300°F (150°C) until heated through.

Q: How do I prevent the corn pudding from sticking to the pan?

A: Generously spraying your baking dish with cooking spray is crucial. For extra insurance, especially with metal pans, lining the bottom with a parchment paper round can make removal incredibly easy. Make sure to choose a pan that fits comfortably inside your Instant Pot and leaves enough room for the lid to seal.

Q: Can I adjust the spice level?

A: Definitely! If you prefer a milder flavor, you can reduce the amount of chili powder and hot sauce. For more heat, add extra hot sauce or a pinch of cayenne pepper to the batter. The beauty of this recipe is its flexibility to suit your taste preferences.

Q: What kind of dish should I use for cooking the pudding in the Instant Pot?

A: You’ll need an oven-safe, heat-proof dish that fits inside your Instant Pot, such as a stainless steel pot-in-pot insert, a heat-safe ceramic bowl, or a glass baking dish. A 1 to 1.5-quart capacity dish is typically perfect for this recipe.

We hope these FAQs help you confidently prepare this delightful Instant Pot Southwest Corn Pudding. It’s a versatile, flavorful, and easy-to-make side dish that’s bound to impress!
