Instant Pot Candied Yams – Sweet Potatoes are the perfect Holiday side dish to make in your Pressure Cooker. With brown sugar and seasonal spices, these just need a quick broil to brown the marshmallows!

Ingredients

  • 1.5 cups Water, for the pressure cooker
  • 3 lbs Yams or Sweet Potatoes, Fresh (about 4 medium, weighing about 12oz ea.)
  • 5 Tbsp Butter, softened, divided
  • ½ to ¾ cup Brown Sugar (adjust to your preferred sweetness)
  • ¾ tsp Vanilla extract
  • Small pinch of Ground Cloves
  • ½ tsp Ground Cinnamon
  • ½ tsp Ground Nutmeg
  • 1 ½ cups Mini Marshmallows

Garnish

  • Toasted Pecans (optional, for serving)

Instructions

  1. Add 1.5 cups of water and a trivet (or rack) to the inner pot of your Instant Pot.
  2. Thoroughly scrub the sweet potatoes (or yams) and pierce them several times with a fork. Carefully place them on the trivet inside the Instant Pot.
  3. Close the Instant Pot lid and ensure the steam release knob is set to the Sealing position (for Ultra models, simply close and lock the lid).
  4. Select the “Pressure Cook” (or “Manual”) setting and set the cooking time to 20 minutes on High Pressure. If your sweet potatoes are smaller, you can reduce the time to 15 minutes. The Instant Pot will take a few minutes to build pressure before the cooking cycle begins.
  5. While the sweet potatoes are pressure cooking, prepare the sweetening mixture: In a medium mixing bowl, cream together 4 tablespoons of the softened butter with the brown sugar, vanilla, ground cloves, cinnamon, and nutmeg until well combined. Set this mixture aside.

  10. Using a fork or your hands (once cool enough to handle), scrape away the skins from the sweet potatoes. Then, use the fork to thoroughly mash the cooked sweet potatoes directly in the baking dish.
  11. Add the prepared butter and spice mixture to the mashed sweet potatoes and mix well until everything is evenly combined and smooth.
  12. Dot the top of the mashed sweet potatoes with small bits of the remaining 1 tablespoon of butter. Then, spread the mini marshmallows over the top in an even layer, completely covering the sweet potatoes.
