- 4 Ripe Bananas, divided
- 2 Eggs
- ⅓ cup Brown Sugar, or real maple syrup
- 1 ½ teaspoons Baking Powder
- ½ teaspoon Salt
- 2 teaspoons Cinnamon
- ½ teaspoon Nutmeg
- 1 ½ teaspoons Vanilla
- 1 ½ cups Milk (or almond milk)
- 2 ½ cups Old Fashioned Oats (not quick)
- ½ cup Chopped Pecans, (or walnuts)
- ¼ cup Pecan Halves (or walnuts)
Instructions

Preheat your oven to 375° F (190°C). Lightly grease or spray an 8″x8″ baking dish with non-stick cooking spray. Set this aside.

In a small bowl, thoroughly mash 3 ½ of the ripe bananas using a fork until smooth. Keep the remaining ½ banana whole, as it will be used for topping. Set aside.
