Ingredients

  • 2 (1 oz) packets Taco Seasoning, divided
  • 2 (8 oz) Chicken Breasts
  • 1 (15 oz) can Black Beans, drained and rinsed
  • 1 (15 oz) can Red Kidney Beans, drained and rinsed
  • 1 (15 oz) can Garbanzo Beans, drained and rinsed
  • 1 (14 oz) can Diced Tomatoes, with juice
  • 1 (10 oz) can Diced Tomatoes and Green Chiles (such as Rotel®)
  • 1 (14 oz) can Chicken Broth, low sodium (1 ¾ cups)
  • 1 (15 oz) can Corn, drained (or 2 cups frozen)

Instructions

Season the Chicken

  1. Place the chicken breasts in a large plastic zip closure bag. Sprinkle 1 of the taco seasoning packets over all sides of the chicken. Close the bag and rub the seasoning into the meat. Set aside.

Start Heating the Pot

  1. Press the Pressure Cook/Manual button on the pressure cooker, then press the +/- button or dial to select 4 minutes. Ensure High Pressure is selected. This will start the pot and get it warming up.
  2. Add all of the other ingredients, except the corn, to the pot. Stir well to combine.
  3. Carefully add the seasoned chicken breasts to the pot and gently press them down to submerge them in the liquid.
  4. Close the lid securely and set the steam release knob to the Sealing position.

Cook the Soup

  1. The Instant Pot will take several minutes to come to pressure before the 4-minute cook timer begins.
