Instant Pot Popcorn: A Modern Twist on a Classic Snack

The idea of making popcorn in a pressure cooker might sound unconventional, but it’s a technique that has surprisingly deep roots. My Nana, for instance, perfected her popcorn in a stovetop pressure cooker long before electric multicookers like the Instant Pot became household staples. The principle remains the same: high, sustained heat is key to achieving that perfect pop.

While the Instant Pot might seem like a gadget primarily designed for pressure cooking stews and roasts, its powerful sauté function is perfectly suited for popcorn. This method leverages the Instant Pot’s ability to reach and maintain high temperatures, creating an environment ideal for corn kernels to expand into fluffy, delicious popcorn. However, it’s crucial to understand that we won’t be using the pressure cook setting for this recipe. Instead, we’ll harness the direct heat of the sauté function, mimicking the conditions of a traditional stovetop pot but with the added convenience and contained mess of your Instant Pot liner.

Making popcorn in your Instant Pot is surprisingly straightforward, though a few simple tricks can elevate your results from good to absolutely fantastic. This method offers several advantages. Firstly, it’s incredibly clean; the deep pot contains the kernels, preventing any stray popcorn from flying across your kitchen. Secondly, it’s efficient; once the pot is hot, the popping process is quick. Thirdly, and perhaps most importantly, the consistent heat distribution often leads to fewer unpopped kernels and a wonderfully uniform batch. Get ready to discover your new favorite way to make popcorn!

Mastering Instant Pot Popcorn: A Step-by-Step Guide

Achieving perfect Instant Pot popcorn is all about proper heat management and timing. Follow these simple steps, and you’ll be enjoying a fresh, homemade snack in no time. Remember, the goal is to create a hot, oil-coated environment that quickly and efficiently pops your kernels.

add oil to pot, turn on pot, display reads hot
**Step 1: Preheat the Pot and Oil.** Begin by adding your chosen oil to the inner pot of your Instant Pot. Select the ‘Sauté’ setting and then adjust the heat level to ‘MORE,’ which is the highest sauté setting available. This ensures the pot gets sufficiently hot to pop the kernels effectively. Allow the pot to preheat for approximately 2-3 minutes. You’ll know it’s ready when the display reads ‘HOT’ – a clear indicator that the oil has reached the ideal temperature for popping.

pour kernels into pot, stir kernels, put lid on pot
**Step 2: Add Kernels and Cover.** Once the pot is hot, carefully pour the popcorn kernels into the heated oil. Give them a quick stir to ensure each kernel is evenly coated in the oil. This coating is crucial for uniform heat transfer and optimal popping. Immediately place a clear glass lid on the Instant Pot. Using a clear lid is highly recommended as it allows you to observe the popping process without releasing heat or risking flying popcorn. If you don’t have a glass lid, you can use the Instant Pot’s own lid, but be sure to set the vent to ‘Venting’ to prevent pressure buildup, and rely on your ears to monitor the popping.

As the kernels heat up, you’ll soon hear the delightful sounds of popping. The process usually takes about 5 minutes from the first pop until the popping slows down significantly. Once the rapid popping subsides, turn off the Instant Pot to prevent burning. The residual heat will continue to pop any remaining kernels. Transfer your freshly popped corn to a large bowl, season to your liking, and enjoy!

Choosing the Best Oil for Perfectly Popped Popcorn

The type of oil you use for your Instant Pot popcorn plays a significant role in both the popping efficiency and the final flavor. The key is to select an oil with a high smoke point, meaning it can withstand high temperatures without burning or producing unpleasant flavors. Using an oil with a low smoke point will not only result in burnt-tasting popcorn but can also release harmful compounds.

  • Refined Coconut Oil: This is often my top choice for popcorn. Refined coconut oil has a high smoke point and, crucially, doesn’t impart a coconut flavor, making it perfect for those who prefer a neutral base. It contributes to a wonderfully crisp texture.
  • Avocado Oil: Another excellent option, avocado oil boasts an exceptionally high smoke point and a very mild flavor. It’s a fantastic healthy choice for popcorn.
  • Grapeseed Oil: Light in flavor and with a high smoke point, grapeseed oil also performs admirably for popcorn.
  • Other High Smoke Point Oils: You can also consider canola oil, sunflower oil, or peanut oil. These are all suitable for high-heat cooking and won’t overpower the popcorn’s natural taste.
  • **Oils to Avoid (or use with caution):** Extra virgin olive oil, for example, has a lower smoke point and can easily burn, imparting a bitter taste. While some prefer its flavor, it’s generally not ideal for popping popcorn at high heat.

Beyond the type of oil, the quantity matters too. Using too little oil can lead to unpopped kernels and potential burning, while too much can make the popcorn greasy. The recommended amount in the recipe card ensures optimal popping and a delightful texture.

Can Popcorn Be Made in the 3-Quart Instant Pot?

Many Instant Pot users wonder if the smaller 3-quart model is suitable for making popcorn. While technically possible, my tests and experience lead me to conclude that the results are generally not ideal compared to larger 6-quart or 8-quart models.

The primary reason for this diminished performance lies in the wattage. Smaller Instant Pots, like the 3-quart version, typically have lower wattage heating elements. This means they don’t get quite as hot, or maintain that high temperature as consistently, as their larger counterparts. For popcorn, consistent and intense heat is paramount. If the pot doesn’t reach and sustain the optimal temperature, the kernels won’t pop as efficiently or completely.

Each time I attempted popcorn in the 3-quart pot, I ended up with a significantly higher number of unpopped kernels, often referred to as “old maids.” The lower wattage simply struggles to provide enough sustained heat to ensure a great batch. While you might get some popped kernels, you’ll likely be left feeling disappointed with the overall yield and quality.

For the best Instant Pot popcorn experience, I strongly recommend using a 6-quart or 8-quart model. If a 3-quart is all you have, you might still get some popcorn, but be prepared for less-than-perfect results and consider adjusting expectations. For smaller batches, a traditional stovetop pot or an air popper might actually yield better results if your only Instant Pot option is the 3-quart.

Essential Tips for Perfect Instant Pot Popcorn Every Time

Beyond the basic steps, these expert tips will help you consistently achieve perfect, fluffy, and delicious popcorn in your Instant Pot, minimizing unpopped kernels and maximizing flavor.

  • Invest in a Clear Glass Lid: This is perhaps the most crucial tip. Using a clear glass lid allows you to visually monitor the popcorn as it pops. You can see when it starts, how rapidly it’s popping, and most importantly, when it’s slowing down. This visual cue is invaluable for preventing burnt popcorn. If you don’t have a glass lid, you can use the standard Instant Pot lid, but make sure the vent is set to ‘Venting’ and rely solely on the sound of the popping. However, without the visual, there’s a higher risk of overcooking or burning the kernels.
  • Always Use Fresh Popcorn Kernels: The age and storage of your popcorn kernels significantly impact their popping ability. Older kernels tend to dry out, losing the internal moisture essential for popping. This results in more “old maids” or kernels that don’t pop at all. Store your popcorn kernels in an airtight container in a cool, dark place to maintain their freshness. A fresh bag of kernels will give you the best yield and fluffiest results.
  • Shake for an Even Pop: Once the popping begins, gently shake your Instant Pot periodically. This simple action helps redistribute the kernels, ensuring that unpopped ones move from underneath already-popped kernels and come into direct contact with the hot bottom of the pot. This maximizes heat exposure for all kernels, leading to a more even and complete pop and significantly reducing the number of unpopped kernels left behind.
  • Customize Your Toppings: While plain popcorn is delicious, a touch of seasoning can elevate it to a gourmet snack.
    • Buttery Perfection: For classic buttery popcorn, melt 2 tablespoons of butter (or more, to taste) and drizzle it over your freshly popped kernels. A little salt goes a long way here.
    • Savory Enhancements: Sprinkle with nutritional yeast for a cheesy, umami flavor, garlic powder, onion powder, or a dash of smoked paprika. Finely grated Parmesan cheese is also a fantastic addition.
    • Sweet Treats: For a sweet twist, lightly dust with cinnamon sugar or a sprinkle of powdered sugar.
  • Don’t Overfill the Pot: Resist the temptation to double the recipe, especially if you’re new to Instant Pot popcorn. Overfilling can lead to uneven popping, a higher number of unpopped kernels, and a greater chance of burning due to overcrowding. Stick to the recommended ½ cup of kernels for most 6-quart and 8-quart models.
  • Listen for the Lull: The sound of popping will start rapidly and then slow down. Once you hear a significant lull, with only a few pops every couple of seconds, it’s time to turn off the Instant Pot. The residual heat will continue to pop any stragglers, but waiting too long will inevitably lead to burnt popcorn.
  • Easy Cleanup: Popcorn leaves minimal residue, making cleanup a breeze. Simply wipe out the inner pot with a paper towel once cooled, or wash with warm soapy water.

Ingredients

  • 3 Tablespoons Refined Coconut Oil*
  • ½ cup Popcorn Kernels

Optional Flavorings

  • 2 Tablespoons Butter, melted
  • Salt, to taste
  • Grated Parmesan Cheese

Instructions

  • Set the pot to the sauté setting, then Adjust to ‘MORE’ (which is the highest heat for sauté). Add the oil to the pot.
  • Allow the oil to heat up for about 2 minutes, or until your instant pot displays the word “hot”. Then add the popcorn kernels to the pot and place the lid on.
  • Shake the pot a little to get the kernels in a single layer.
  • In about 2-3 minutes of heating while covered, you will start to hear the popcorn kernels popping.
  • Let it pop for about 5 minutes or until ¾ of the kernels have popped. Turn off the pot so it doesn’t burn. The remaining kernels will continue to pop in the residual heat.
  • Turn off the pot and remove the lid. Transfer the popcorn to a large bowl.
  • Sprinkle on some salt and melted butter, if desired. Serve and enjoy!

Notes

*Which Oil is Best for Popping Popcorn?

  • I like to use refined coconut oil as it is great in high heat. It doesn’t taste like coconut if you get the refined version.
  • Avocado oil is also great for popcorn. You can use any oil that can withstand high heat. Grapeseed oil works well, too.

Tips For IP Popcorn

  • Use a clear glass lid. You’ll want to be able to see the popcorn kernels popping to ensure they don’t burn. If you don’t have a glass lid, find some other kind of lid or there will be kernels flying!
  • Use fresh popcorn kernels. If your popcorn kernels are older they may not pop well, if at all.
  • To get a more even pop, shake your instant pot to move around the popcorn. Unpopped kernels sometimes rest on already popped kernels, which results in them not getting enough heat to pop. Moving the popcorn around helps these unpopped kernels get more heat.
  • If you want buttery popcorn, you can melt 2 tablespoons of butter and pour it over the popcorn.
