Ingredients

  • 1 lb 93% Lean Ground Beef or Ground Turkey (no draining typically required due to low fat content)
  • 1 Onion, chopped
  • 1 Bay Leaf
  • ½ cup Celery, chopped
  • 1 Tablespoon Mild Chili Powder
  • 1 Tablespoon Cumin
  • 2 teaspoons Dried Oregano
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Chipotle Powder (optional, or use cayenne pepper for extra heat)
  • 1 ½ teaspoons Kosher Salt (or 1 teaspoon table salt)
  • ½ teaspoon Black Pepper
  • 4 cloves Garlic, minced
  • 2 ½ cups Beef or Chicken Broth
  • 1 (4 oz) can Green Chiles (mild, fire-roasted varieties work wonderfully)

  4. Pour in the beef or chicken broth, green chiles, and rinsed and drained kidney beans. Stir all the ingredients together to combine them well. Allow the contents to come to a gentle simmer.
  5. Carefully add the elbow pasta to the pot. Do not stir the pasta into the mixture. Instead, gently press the pasta down with your spoon to submerge it slightly in the liquid.
  6. Press the Cancel/Keep Warm button to turn off the Sauté mode.
  7. Layer the drained and chopped roasted red bell peppers, the can of diced tomatoes (with juice), and the can of tomato sauce on top of the pasta. It is crucial not to stir these ingredients in.   3. Once the cooking time ends and the unit beeps, perform a Controlled Quick Release (QR) of the steam. To do this, slowly turn the steam release knob to the “Venting” position in small bursts.   4. When all the steam has been released and the float valve (pin) on the lid drops down, carefully open the lid, always facing it away from your face to avoid residual steam. Stir the contents of the pot thoroughly to combine everything.
