  • 1 ½ teaspoon Italian Seasoning
  • ½ teaspoon Oregano
  • 2 teaspoons Garlic Powder (or 2 cloves minced garlic)
  • ¼ – ½ teaspoon Red Pepper Flakes
  • ½ teaspoon Kosher Salt (or 1/4 tsp table salt)
  • ¼ teaspoon Pepper
  • 1 Red Bell Pepper (optional) or green pepper, chopped
  • 6 oz Mushrooms (optional) sliced
  • 4 cups Low Sodium Chicken Broth (or water)
  • 16 oz Rotini (or penne, ziti, etc)
  • 24 oz jar Marinara Sauce
  • 8 oz Mozzarella Cheese, shredded (plus more for garnish, if desired)
  • 5 oz Pepperoni Slices (about 20-30 slices)

  1. Note: I used the 6-quart Instant Pot, but you can also use a 5qt or 8 qt model with similar results.
  2. Turn the Instant Pot on to the Sauté setting (Normal or Medium). Add the Italian sausage and diced onion to the pot. Cook until the meat is thoroughly browned, breaking it apart with a wooden spoon or spatula as it cooks.
  3. Once the meat is cooked, add the Italian seasoning, oregano, garlic powder (or minced fresh garlic), red pepper flakes (adjust to your heat preference), kosher salt, pepper, and any optional bell pepper and mushrooms you are using. Stir well to combine all the spices and vegetables with the meat.
  4. Pour in the chicken broth or water. Stir the mixture, ensuring you scrape the bottom of the pot thoroughly to deglaze it. This step is crucial for lifting any browned bits stuck to the bottom, which prevents a “Burn” notice and adds great flavor.
  5. Evenly add the dry pasta over the meat and liquid mixture. Do not stir the pasta into the liquid. It should form a layer on top.
  6. Carefully pour the marinara sauce over the pasta, making sure to cover it completely. Again, do not stir the sauce into the pasta or liquid layers.
  7. Cancel the Sauté function. Secure the lid on the Instant Pot and turn the steam release knob to the Sealing position. Press the Pressure Cook (or Manual) button, then use the +/- buttons to select a cook time of 4 minutes (this is ideal for rotini). If using a different pasta shape, set the cook time to half of what the pasta package directions suggest for al dente.
  8. Once the cook cycle is finished, perform a Quick Release of the pressure/steam. Carefully turn the steam release knob to the Venting position, keeping your hands and face clear of the escaping steam.
  9. When the float valve (pin) in the lid drops down, indicating all pressure has been released, carefully open the lid. Gently stir the pasta to combine all the ingredients and distribute the sauce. Stir in half of the shredded mozzarella cheese and ¾ of the pepperoni slices.
  10. If using, stir in black olives or any other optional add-ins you’ve chosen to include at this stage.
