It’s a testament to how simple ingredients, when combined thoughtfully and cooked low and slow, can create culinary magic.

Meanwhile, the carrots absorb all the rich, aromatic spices, becoming soft, sweet, and bursting with Moroccan-inspired goodness. Every bite is a harmonious blend of savory chicken, earthy vegetables, and sweet, tangy dried fruits.

How to Master Your Slow-Cooker Moroccan Chicken
Crafting this succulent Moroccan chicken dish in your slow cooker is a breeze. Follow these straightforward steps to achieve a meal that tastes like it took hours of complex preparation, but truly required minimal hands-on time:
- Prepare the Chicken: Begin by seasoning your boneless, skinless chicken thighs generously with salt and pepper on both sides. This initial seasoning is key for building layers of flavor.
- Sear for Flavor: In a large skillet, heat 1 tablespoon of olive oil or avocado oil over medium-high heat. Once hot, add half of the chicken thighs and sear them for 3-4 minutes per side. The goal here isn’t to cook the chicken through, but to achieve a beautiful golden-brown crust, which locks in moisture and adds a significant depth of flavor. Transfer the browned chicken to your slow cooker, and repeat with the remaining chicken thighs.
- Sauté Aromatics: Using the same skillet, reduce the heat to medium. Add the thinly sliced onions and cook them, scraping up any delicious brown bits from the bottom of the pan, until they soften, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Deglaze and Build Sauce: Pour in the chicken stock to deglaze the pan, scraping up any remaining flavorful fond. Whisk in the almond butter until smooth, then add the salt, brown sugar (or coconut sugar), cumin, ginger, coriander, cinnamon, and a pinch of cayenne pepper. Stir well to combine all these wonderful Moroccan spices into a rich, aromatic sauce.
- Combine in Slow Cooker: Pour the onion and spice mixture over the chicken in the slow cooker. Give it a gentle stir to ensure the chicken is coated. Arrange the baby carrots on top. Cover and cook on low for 4 hours. This initial cooking phase allows the chicken to become incredibly tender and the flavors to meld beautifully.
- Add Dried Fruits: After 4 hours, stir in the dried apricots and dried cherries. Continue cooking for another 1-2 hours on low. Adding the dried fruits later prevents them from becoming overly soft or disintegrating, ensuring they retain their delightful chewiness and bursts of sweetness.
- Serve and Enjoy: Once cooked, the chicken should be fall-apart tender. You can gently shred the meat with two forks directly in the slow cooker. Serve this exquisite Moroccan chicken over a bed of fluffy quinoa, allowing the sauce to coat everything beautifully. Garnish with fresh cilantro or parsley if desired, and prepare to savor every mouthful!

Unlock Maximum Flavor: Essential Tips for Your Moroccan Chicken
While this recipe is incredibly forgiving, a few simple tips can elevate your Slow-Cooker Moroccan Chicken from delicious to truly unforgettable:
- Prioritize Chicken Thighs for Tenderness: We can’t stress this enough! Chicken thighs are the secret weapon for slow cooking. Their higher fat content ensures they remain incredibly juicy and succulent, practically melting in your mouth, unlike chicken breasts which can sometimes dry out over longer cooking periods. If you’ve been hesitant, give thighs a try in this recipe – you’ll be amazed by the fall-apart tenderness and rich flavor they impart. That being said, if chicken breasts are all you have on hand, they will still work; just be mindful not to overcook them.
- Perfect Timing for Dried Fruits: The dried apricots and cherries are a hallmark of Moroccan cuisine, adding a beautiful sweet and tangy counterpoint to the savory spices. To ensure they’re perfectly plump and flavorful without becoming overly mushy, add them during the last 1-2 hours of cooking. This allows them to soften and infuse the sauce with their sweetness while retaining a pleasant texture.
- Avoid Overcooking the Chicken: Unlike some tougher cuts of meat that benefit from extremely long slow-cooking times, chicken is more delicate. This Moroccan chicken recipe is typically ready in 4-6 hours on low, or 2-3 hours on high. Overcooking chicken in a slow cooker, even thighs, can eventually lead to a less desirable texture. Always check for tenderness around the 4-hour mark and add the fruits then.
- Don’t Skip the Searing Step: While tempting to dump everything into the slow cooker, searing the chicken thighs and sautéing the onions first makes a huge difference. Browning the chicken creates a deeper, richer flavor profile through the Maillard reaction, and caramelizing the onions adds a foundational sweetness and aroma to the sauce. These steps are worth the extra few minutes!
- Adjust Spices to Your Liking: The blend of cumin, ginger, coriander, and cinnamon creates an authentic Moroccan flavor. Feel free to adjust the amount of cayenne pepper based on your preference for heat. A pinch adds a subtle warmth, while a bit more can bring a gentle kick.

Ideal Accompaniments: What to Serve with Moroccan Chicken
One of the beauties of this Slow-Cooker Moroccan Chicken recipe is that it’s almost a complete meal on its own, with the carrots cooking directly in the sauce. However, pairing it with the right sides can elevate the dining experience even further. Here are some fantastic suggestions:
- Fluffy Quinoa: Our top recommendation! Quinoa is a superfood grain that perfectly soaks up the rich, aromatic sauce, providing a light yet satisfying base. For quick preparation, try making Instant Pot Quinoa.
- Couscous: A classic Moroccan accompaniment, couscous is light, fluffy, and absorbs flavors beautifully. It’s quick to prepare and adds an authentic touch.
- Brown Rice or Basmati Rice: For a more familiar option, serve it alongside steaming brown rice or fragrant basmati rice.
- Gluten-Free Flatbread: Perfect for scooping up every last bit of that delicious sauce! Warm gluten-free flatbread (try this recipe) adds a wonderful textural contrast.
- Fresh Salad: Balance the rich flavors with a crisp, refreshing side salad. A simple Cucumber Tomato Salad with a light vinaigrette is an excellent choice, adding a bright, zesty contrast.
- Steamed Green Beans or Asparagus: If you desire an extra green vegetable, lightly steamed green beans or asparagus make a fresh and healthy addition.
Meal Prep Magic: Can I Freeze This Moroccan Chicken?
Absolutely! This Slow-Cooker Moroccan Chicken recipe is not only delicious but also incredibly freezer-friendly, making it an ideal choice for meal prepping or preparing a thoughtful “take-in” meal for friends or family. It reheats beautifully, retaining all its wonderful flavors and tender texture.
To prepare for freezing:
- Follow the recipe instructions up to Step 4 (before adding everything to the slow cooker).
- Allow the browned chicken, sautéed aromatics, and prepared sauce to cool completely to room temperature. This is crucial for food safety and preventing freezer burn.
- Once cooled, transfer everything into a large, freezer-safe bag or an airtight container. If using a bag, press out as much air as possible before sealing. Label clearly with the recipe name and date. It can be stored in the freezer for up to 3 months.
To cook from frozen:
- Transfer the frozen contents directly into your slow cooker.
- Add the baby carrots.
- Cook on low for 6-7 hours. The longer cooking time accounts for the frozen ingredients.
- During the last hour of cooking, stir in the dried apricots and cherries, allowing them to plump up and meld with the flavors.
- Shred the chicken and serve as usual.

Ingredients
For the Chicken:
- 3 tablespoons olive oil or avocado oil
- 2-3 pounds boneless skinless chicken thighs
- salt & pepper
- 1 onion thinly sliced
- 3 cloves garlic minced
- 3 tablespoons almond butter
- 3/4 cup chicken stock
- 1/2 teaspoon salt
Everything Else:
- 1 teaspoon brown sugar or coconut sugar
- 1/2 teaspoon cumin
- 1/2 teaspoon ginger
- 1/2 teaspoon coriander
- 1/4 teaspoon cinnamon
- pinch of cayenne pepper
- 1 pound baby carrots
- 1/2 cup dried apricots
- 1/4 cup dried cherries
Instructions
-
Season the chicken on both sides with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. When hot, add 1/2 the chicken thighs and cook on each side for 3-4 minutes. The chicken doesn’t need to be cooked through, just browned on the outside for flavor. Transfer the chicken to the slow-cooker then repeat with the remaining chicken thighs.
-
Over medium heat, add the sliced onions to the now-empty skillet. Cook, scraping up the brown bits off the bottom of the pan until softened, about 3-4 minutes. Add the garlic and cook for 30 seconds.
-
Add the chicken stock and scrape the bottom of the pan. Whisk in the almond butter and salt, sugar and spices.
-
Add the onion/stock mixture to the slow-cooker. Stir to combine then place the carrots on top. Cook for 4 hours on low.
-
After 4 hours, add the apricots and cherries and cook for another 1-2 hours.
-
Shred the meat slightly and serve over cooked quinoa. Enjoy!
Notes
Use Chicken thighs. Chicken thighs are great to use in the slow-cooker recipes because they won’t dry out. If you’re skeptical give it a try! The thighs turn out juicy and fall-apart tender. Chicken breasts will also work if that’s what you have on hand.
Add the apricots/cherries 1 hour before serving. The dried apricots and cherries taste so delicious cooked in the juice of the chicken! Be sure to add the dried fruit no more than 1-2 hours before you plan on serving this meal or they will be very soft.
Don’t overcook. This is a slow-cooker recipe that’s done in 4-6 hours rather than 6-8. The chicken doesn’t need as long of a cook time as other meats in the slow-cooker.
How to Freeze: Follow up to step 4 in the recipe (stopping before you add everything to the slow-cooker) and let everything cool before transferring to a freezer bag. To cook from the freezer you can add everything to the slow-cooker and cook on low for 6-7 hours. Add the apricots/cherries an hour before you want to serve the meal.
