Erin’s Spritz Cookie Highlights

Dive into why these gluten-free spritz cookies are destined to become your new holiday favorite:

  • Effortlessly Simple to Create: Forget the tedious process of rolling dough or painstakingly cutting out shapes. Our gluten-free spritz cookies are designed for ease, allowing your cookie press to do all the heavy lifting. The result? Beautifully uniform cookies that look like they required hours of intricate work, but are incredibly simple to achieve. This makes them a fantastic choice for busy holiday schedules or for involving little helpers in the kitchen.
  • A Timeless Holiday Tradition: Spritz cookies are synonymous with the holiday season, evoking nostalgic memories and festive cheer. This gluten-free version ensures that everyone can partake in this beloved tradition. They are absolutely perfect for any festive occasion, whether you’re hosting a grand holiday party, participating in a friendly cookie exchange, preparing thoughtful edible gifts for neighbors, or even shipping a taste of home to loved ones far away. These cookies truly embody the spirit of the season.
  • Exquisitely Buttery and Sweet: Prepare your taste buds for a delightful experience. These cookies strike an impeccable balance between rich, buttery flavor and a delicate sweetness that is never overwhelming. Each bite offers a satisfying crispness that yields to a tender, melt-in-your-mouth texture. This harmonious blend of flavors and textures will undoubtedly make them a standout on your holiday dessert table and quickly establish them as a go-to recipe year after year.
  • Essential Baking Insights: Through extensive testing, I’ve discovered the secrets to perfect spritz cookies. The surface you press your cookies onto makes a significant difference. While parchment paper and unlined baking sheets have their uses, a silicone baking mat consistently provides the best adhesion and ensures your cookies maintain their intricate shapes. Furthermore, chilling your baking sheets for a few minutes before pressing helps the dough adhere beautifully, preventing spreading and ensuring those crisp, well-defined edges we all love in a spritz cookie. This small step makes a huge impact on the final presentation.
  • Selecting the Ideal Gluten-Free Flour: The foundation of exceptional gluten-free baking lies in the quality of your flour blend. For these spritz cookies, I highly recommend using a premium gluten-free flour blend that already contains xanthan gum. This ingredient is crucial for mimicking the elasticity and texture of traditional wheat flour, providing a lovely chewiness and preventing crumbly cookies. My personal favorite, and the one I’ve found to deliver consistent, outstanding results, is King Arthur Measure-for-Measure Baking Flour. Its reliability ensures your spritz cookies are every bit as delightful as their conventional counterparts.

Essential Ingredients for Perfect Spritz Cookies

Crafting these delectable gluten-free spritz cookies begins with a careful selection of ingredients. Each component plays a crucial role in achieving the desired buttery flavor, crisp texture, and beautiful form. Below, you’ll find detailed notes on the key ingredients, ensuring you have everything you need for baking success. For precise quantities, please refer to the full recipe card at the bottom of this page.

Carefully measured and labeled ingredients for gluten-free spritz cookies, ready for mixing.
  • Gluten-Free Flour: The cornerstone of these amazing cookies is a high-quality gluten-free flour blend. It’s vital to choose a blend that includes xanthan gum, as this ingredient is what provides the necessary structure and elasticity often missing in gluten-free baking. Xanthan gum helps to bind the dough, preventing it from crumbling and giving the cookies a pleasant chewiness akin to those made with traditional all-purpose flour. My top recommendation, and the blend I consistently rely on for its excellent performance, is King Arthur Measure-for-Measure Baking Flour. Its consistent results make it ideal for this recipe.
  • Butter: For these spritz cookies, I almost exclusively opt for salted butter. The subtle saltiness enhances the overall depth of flavor, creating a richer, more complex taste that truly elevates these holiday treats. Using good quality butter makes a noticeable difference. If you’re looking to make these cookies dairy-free, you can successfully substitute vegan butter. Be aware that this might slightly alter the flavor profile, but the cookies will still be wonderfully delicious and suitable for those with dairy sensitivities. Ensure your butter (or vegan butter) is at room temperature for optimal creaming.
  • Almond and Vanilla Extract: The magical combination of almond and vanilla extracts is what gives these holiday cookies their signature, irresistible aroma and taste. The hint of almond adds a sophisticated, nutty undertone that perfectly complements the classic sweetness of vanilla, making each bite truly special. I strongly encourage using both extracts for the most authentic and delightful flavor. When it comes to vanilla, always choose real vanilla extract over imitation for superior flavor and a noticeable difference in your baked goods.

Step-by-Step: Crafting Gluten-Free Spritz Cookies

Making these gorgeous spritz cookies is a surprisingly straightforward process, ensuring a rewarding baking experience even for beginners. Here’s a comprehensive overview of how to bring these buttery delights to life. Pro Tip: The Importance of Chilled Baking Sheets

Before you even begin mixing, prepare your baking setup. Line two baking sheets with high-quality silicone baking mats. Then, if your refrigerator or freezer has ample space, it’s incredibly beneficial to chill these lined baking sheets for a few minutes. The reason? Spritz cookie dough adheres significantly better to a cold surface as it emerges from the cookie press. This simple trick prevents the dough from spreading excessively and helps maintain the intricate shapes, ensuring your cookies look as perfect as they taste.

The initial stages of gluten-free spritz cookie dough preparation: butter, sugar, eggs, and extracts expertly combined in a glass mixing bowl.
  • Creaming the Foundation: Begin by combining the softened butter, granulated sugar, and kosher salt in the bowl of a stand mixer. Using a paddle attachment, cream these ingredients together until the mixture is light, fluffy, and well-aerated. If you don’t have a stand mixer, a reliable electric hand mixer will work just as effectively to achieve this crucial texture. This step incorporates air into the butter, which contributes to the cookies’ delicate structure.
  • Incorporating Liquid Flavors: Next, add the large egg, pure vanilla extract, and flavorful almond extract to the creamed butter and sugar mixture. Mix thoroughly until all ingredients are just combined. It’s important not to overmix at this stage. Afterward, take a moment to scrape down the sides of the bowl with a spatula to ensure everything is fully incorporated and no unmixed ingredients are left behind.

  • Adding the Dry Ingredients: With the wet ingredients perfectly blended, it’s time to introduce the gluten-free flour. Add the measured flour to the bowl and mix on the lowest speed setting. Continue mixing only until the flour is fully incorporated and a cohesive dough forms. Overmixing gluten-free dough can sometimes lead to a tougher texture, so mix just enough to bring everything together.
  • Brief Chill for Optimal Pressing: Once your dough is ready, cover the mixing bowl tightly with plastic wrap. Place it in the refrigerator for precisely 20 minutes. This brief chilling period is essential: it firms up the dough just enough to make it manageable and ensures it presses out cleanly from the cookie press. However, be cautious not to refrigerate for longer than 20 minutes, as an overly firm dough will be difficult to press and could strain your cookie press. While the dough is chilling, preheat your oven to 350°F (175°C).

  • Preparing the Cookie Press: Refer to your cookie press manufacturer’s instructions for guidance on how to correctly assemble it and insert the desired decorative plate or disc. This is where the fun begins, as you get to choose your festive shapes! Once assembled, carefully fill the barrel of the cookie press with your chilled dough, ensuring it’s packed without large air pockets for smooth operation.
  • Pressing Out the Cookies: Hold the filled cookie press perpendicular (straight up and down) to your chilled, silicone-lined baking sheet. With a firm, steady motion, press out the cookies onto the mat. You’ll notice the dough adhering beautifully to the cold surface, holding its intricate shape. Since spritz cookies generally do not spread significantly during baking, you can place them fairly close together on the baking sheet, maximizing your batch per sheet.

Creative Ways to Decorate Your Spritz Cookies

Once your beautiful spritz cookies are pressed onto the baking sheet, it’s time to unleash your creativity! If you desire, you can immediately top the unbaked cookies with colorful sprinkles, or gently press a miniature chocolate chip into the center of each. For sprinkles to adhere optimally, especially if your kitchen is warm and the dough is less sticky, you can very lightly brush the cookies with a tiny bit of water before applying the sprinkles. This helps them bond securely during baking.

It’s important to monitor the dough’s consistency as you work. If, at any point, the cookie dough becomes too soft and difficult to press or hold its shape, simply pop the entire baking sheet with the shaped cookie dough into the refrigerator for about 10 minutes. This quick chill will firm up the dough, allowing for easier handling and better baking results.

Baking to Golden Perfection: Place your decorated (or plain) spritz cookies into the preheated oven. Bake them for approximately 7–9 minutes, or until the edges are just barely golden brown. This light browning indicates they are perfectly cooked without being overdone, preserving their tender interior. Once baked, remove the sheets from the oven and allow the cookies to cool on the baking sheet for about 5 minutes. This brief cooling period helps them set and firm up before you gently transfer them to a wire rack to cool completely. Now, enjoy the fruits of your labor!

Storage and Freezing Guidelines

Ensuring your delicious gluten-free spritz cookies remain fresh and enjoyable is simple with these storage tips:

To Store: Once completely cooled, place your gluten-free spritz cookies in an airtight container. They will maintain their crispness and delightful flavor when stored at room temperature for up to 5 days. For optimal freshness, consider placing a slice of bread in the container to help absorb excess moisture and keep them soft, if that’s your preference.

To Freeze: Spritz cookies are excellent candidates for freezing, making them perfect for advance preparation during the busy holiday season. To freeze, arrange the fully cooled cookies in a single layer on a baking sheet and flash freeze them for about 30 minutes until solid. Then, transfer the frozen cookies to an airtight freezer-safe container or a heavy-duty freezer bag, layering them between sheets of parchment paper to prevent sticking. They will stay fresh in the freezer for up to 3 months. When ready to enjoy, simply thaw them at room temperature for a few hours. They’ll taste just as fresh as the day they were baked!

FAQ: Can These Cookies Be Made Dairy-Free?

Absolutely! These gluten-free spritz cookies can be easily adapted for dairy-free diets. The simple substitution involves replacing the traditional butter with a high-quality vegan butter alternative. Most vegan butters perform exceptionally well in baking, maintaining a similar texture and consistency in the dough. While the buttery flavor profile might shift ever so slightly from the original, depending on the brand of vegan butter you choose, the cookies will still be incredibly delicious, rich, and perfect for sharing with everyone, regardless of dietary restrictions. Just ensure your vegan butter is at room temperature for best results.

FAQ: Troubleshooting Your Cookie Press Dough

If you’re encountering difficulty getting the dough to extrude smoothly from your cookie press, the most common culprit is dough that is too cold or too firm. Spritz dough requires a specific consistency – firm enough to hold its shape, but pliable enough to pass through the intricate designs of the press. If your dough feels hard or resists pressing, allow it to sit at room temperature for a few minutes. This brief period will soften it slightly, making it much more cooperative. However, be vigilant! If the dough becomes too warm or soft, it will lose its structural integrity and may spread excessively when baked. If you notice it getting too soft, a quick chill back in the refrigerator for 5-10 minutes will firm it up again. Finding this sweet spot of dough temperature is key to spritz cookie success!

FAQ: Exploring Different Flavor Extracts

While I wholeheartedly adore the classic combination of vanilla and almond extract in these spritz cookies – a blend that creates a truly irresistible and festive flavor – you certainly have the flexibility to experiment with other extracts or stick solely to vanilla. If almond extract isn’t to your liking, simply use an equal amount of vanilla extract to ensure the cookies still have a delightful aroma and taste. Alternatively, if you’re feeling adventurous, you can try other extracts like peppermint for a minty twist, lemon for a bright citrus note, or even a touch of rum extract for a more sophisticated flavor. When substituting, always proceed with caution: add other extracts gradually, a small amount at a time, as some can be quite potent and easily overpower the delicate flavor of the cookie. The goal is to enhance, not mask, the inherent deliciousness of the spritz cookie!

Advanced Gluten-Free Spritz Cookie Tips for Perfection

  • Invest in a Quality Cookie Press: The right tools can make all the difference in baking, and a good cookie press is paramount for spritz cookies. A reliable press will operate smoothly, create consistent shapes, and last for many holiday seasons. This is the cookie press I personally use and highly recommend for its durability and ease of use. A quality press ensures a frustration-free experience and perfectly formed cookies every time.
  • The Unsung Hero: A Silicone Baking Mat: I cannot overstate the importance of using a silicone baking mat for these spritz cookies. Through numerous trials, I’ve experimented with baking them in three different ways: on parchment paper, directly on an unlined cookie sheet, and on a silicone baking mat. My findings are conclusive: a silicone baking mat is by far the superior choice. Parchment paper, while convenient for other baking, is too slippery for spritz dough, often leading to excessive spreading and loss of shape. When pressed onto an unlined baking sheet, the dough struggles to adhere properly, resulting in messy or malformed cookies. The silicone mat provides the ideal non-stick, slightly grippy surface that encourages the dough to stick just enough to hold its shape beautifully as it comes out of the press, and prevents spreading during baking.
  • Adding Color with Gel Food Coloring: If you wish to add a touch of festive color to your spritz cookies, such as vibrant green Christmas trees or cheerful red stars, gel food coloring is your best friend. Set aside a small portion of your dough before adding any coloring. Gel food coloring is highly concentrated, so a very tiny drop is usually all you need for a quarter of the cookie dough. Use it sparingly, mixing it in thoroughly until the desired hue is achieved. Be aware that mixing in food coloring might warm the dough slightly, so you may need to chill the colored dough for another few minutes in the refrigerator to restore its optimal pressing consistency.
  • Unleash Your Creativity with Decorations: Spritz cookies are a fantastic canvas for holiday decorating! Don’t hesitate to get creative and personalize each batch. Beyond the simple sprinkles or chocolate chips, consider drizzling cooled cookies with melted white or dark chocolate, creating intricate patterns with royal icing, or dusting them with sparkling colored sugars for an extra festive touch. Edible glitter, mini candies, or even finely chopped nuts can also add wonderful flair. The possibilities are truly endless, allowing you to tailor your cookies to any holiday theme or personal preference. Have fun and let your imagination run wild!

These gluten-free spritz cookies look beautiful and impressive, but are actually fun and easy to make! They’re buttery and so delicious.

This is my fool-proof gluten-free recipe that’s easy to press out and makes cookies that hold their shape while baking. You’ll need a cookie press and a silicone mat to line your baking sheet.

Ingredients

  • 1 cup (226g) butter at room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 ¼ cup (338g) gluten-free measure-for-measure flour
  • optional: gel food coloring, sprinkles, chocolate chips, and melted chocolate for decorating

Instructions

  1. Line 2 baking sheets with silicone baking mats. While the cookie dough is chilling and the oven is preheating, and if your refrigerator or freezer has room, it’s helpful to chill your lined baking sheets. The dough coming out of the cookie press adheres much better to a cold surface.
  2. Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter, sugar and salt together. Add the egg, vanilla extract, and almond extract and mix until combined, then scrape down the bowl.
  3. Add the gluten-free flour and mix on low speed until fully combined.
  4. Cover the bowl with plastic wrap and refrigerate for 20 minutes while the oven preheats. (Do not refrigerate longer than 20 minutes!)
  5. Preheat the oven to 350°F (175°C).
  6. Follow cookie press manufacturer’s directions to fit your cookie press with a decorative plate. Fill the cookie press with dough. Hold the cookie press perpendicular to the cookie sheet and press out the cookies. They can be fairly close together, since they don’t really spread.
  7. DECORATE: If desired, top the cookies with sprinkles or press a chocolate chip into the center. If needed, you can very lightly brush the cookies with water before topping with sprinkles so they will adhere to the cookies.
  8. If the cookie dough becomes too soft as you work, chill the shaped cookie dough in the refrigerator for 10 minutes before baking.
  9. Bake until very lightly browned on the edges, 7–9 minutes. Let cool on a cooling rack for 5 minutes before transferring to a wire rack to cool completely. Enjoy!

Notes

Use a good cookie press: This is the cookie press I use and love! It makes the process so much smoother and ensures consistent, beautiful shapes.

Use a silicone mat: For optimal results, I strongly recommend baking these spritz cookies on a silicone baking mat. This prevents spreading and ensures the intricate designs hold perfectly.

Use gel food coloring (if desired): For vibrant colors, opt for gel food coloring. Remember, a tiny drop goes a long way! You might need to briefly chill the dough again after coloring.

Get creative: Have endless fun decorating these Christmas cookies! Options include melted chocolate drizzle, a variety of sprinkles, dark chocolate chips, intricate icing, or shimmering colored sugar.

To Store: Keep these gluten-free spritz cookies fresh by storing them in an airtight container at room temperature for up to 5 days.

To Freeze: These cookies freeze exceptionally well! For extended freshness, store them in an airtight container or a robust freezer bag for up to 3 months.
