  • Add Protein: For a more robust meal, consider adding cooked ground beef, diced ham, a smoked ham hock, crispy bacon pieces, or savory sausage. Add these during the initial cooking phase if they require simmering for flavor, or stir in cooked meats at the end.
  • Global Flavors: For a completely different culinary journey, swap pinto beans for white beans, incorporate Italian seasoning, and add a can of diced tomatoes for a Mediterranean-inspired dish. The possibilities are truly boundless.
  • Thicken It Up: If you prefer a creamier, thicker consistency, simply mash some of the cooked beans directly in the pot using a potato masher or the back of a spoon. This releases their natural starches and creates a wonderfully rich texture.
  • Spice Level Adjustment: Love heat? Add an extra jalapeño or a pinch of cayenne pepper. Prefer milder flavors? Reduce the amount of jalapeño or omit the chipotle in adobo.
  • Herbaceous Freshness: Stir in fresh cilantro or parsley at the end for a burst of vibrant flavor and color.

Instant Pot Mexican Pinto Beans are easy to make from dry beans. They have lots of flavor!

Prep: 15 mins
Cook: 50 mins
NPR: 15 mins
Total: 1 hr 20 mins
Servings: 6

Ingredients

  • 1 lb Dry Pinto Beans, rinsed & picked over
  • 1 lg Onion, chopped
  • 2 Bay Leaves
  • 1 Tbsp Olive Oil, (or bacon fat, or lard)
  • 3 cloves Garlic, minced
  • 3 tsp Chili Powder
  • 2 tsp Cumin
  • 2 Jalapeños, seeded and diced
  • 3 ½ cups Water (or low sodium chicken broth)
  • 1 Chipotle in Adobo, chopped (optional, but add a smoky flavor and a touch of spiciness)
  • ¾ tsp Salt (add after cooking)

Instructions

  1. Add everything except the salt to the pot in order. Do not stir, but do push the beans gently into the liquid.
  2. Close the lid and set the steam release knob to the Sealing position.
  3. Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 50 minutes. Ensure it’s set to High Pressure. The pot will take several minutes to come to pressure.
  4. When the cook cycle has finished, turn off the pot and let it sit undisturbed for 15 minutes (15 minute natural release). This natural release period is crucial for tender beans. Then turn the steam release knob to the Venting position to release any remaining steam/pressure.
  5. When the pin in the lid drops back down, open the lid and stir the beans thoroughly. Remove and discard the bay leaves.
  6. Add the salt, if using, and stir well to combine. Taste the beans and adjust seasoning as needed – you might want a little more salt, chili powder, or cumin.
  7. Serve these delicious Instant Pot Mexican Pinto Beans as is, or with your favorite toppings such as sour cream, fresh cilantro, diced red onion, creamy avocado, or a squeeze of lime. They are perfect alongside rice, in burritos, or as a flavorful base for a hearty bowl.

Frequently Asked Questions About Instant Pot Pinto Beans

Here are answers to some common questions about making pinto beans in your Instant Pot:

Do I really not need to soak the dry pinto beans?

That’s the beauty of the Instant Pot! For most bean varieties, including pinto beans, you absolutely do not need to pre-soak them. The high-pressure environment tenderizes them perfectly without the extra step. Just make sure to rinse and pick over your beans to remove any small stones or debris.

Can I use chicken broth instead of water?

Yes, absolutely! Using low-sodium chicken broth (or vegetable broth for a vegan option) will add an extra layer of savory depth to your pinto beans. Just be mindful of the salt content in the broth and adjust the added salt in the recipe accordingly.

What if my beans are still hard after cooking?

If your beans are still a bit firm for your liking after the 50 minutes and natural release, don’t worry! This can sometimes happen due to bean age (older beans take longer to cook) or slight variations in Instant Pot models. Simply close the lid again, set the steam release knob to sealing, and pressure cook for an additional 5-10 minutes. Allow for another 10-minute natural release before checking again. They’ll soften up!

Can I freeze leftover Mexican Pinto Beans?

Yes, cooked pinto beans freeze beautifully! Once they’ve cooled completely, transfer them to freezer-safe containers or bags. They can be stored in the freezer for up to 3-4 months. Thaw them in the refrigerator overnight or gently reheat from frozen on the stovetop or in the microwave, adding a splash of water or broth if needed.

How can I make these beans spicier?

For extra heat, you have a few options: add an additional jalapeño (or two!), leave some of the seeds in the jalapeños (where most of the heat resides), include a pinch of cayenne pepper, or use a second chipotle in adobo. You can also serve with a dash of your favorite hot sauce.

Can I add cheese?

While the base recipe is vegan, a sprinkle of cotija cheese, Monterey Jack, or even cheddar cheese can be a delicious addition when serving. Stir it in gently just before serving to allow it to melt slightly, or sprinkle on top as a garnish.
