  • 1 lb Ground Beef* (85%-90% lean)
  • ½ lb Ground Pork
  • ½ cup Panko Bread Crumbs

  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • ¼ teaspoon Allspice
  • ¼ teaspoon Nutmeg
  • 1 teaspoon Garlic Powder
  • 1 Egg, beaten
  • ¼ cup Fresh Parsley, finely chopped, divided

Sauce

  • 2 Tablespoons Olive Oil
  • 6 Tablespoons Butter, divided
  • 2 10-ounce cans Beef Consommé (or good beef broth, 2½ cups)
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Worcestershire Sauce
  • 2 cups Heavy Cream, divided
  • ¼ cup Flour
  • Salt & Pepper to taste

Instructions 

  • In a large mixing bowl, combine the ground beef, ground pork, panko bread crumbs, milk (pour over the crumbs to soften), grated sweet onion, salt, pepper, allspice, nutmeg, garlic powder, beaten egg, and 2 tablespoons of the fresh parsley. Mix thoroughly with your hands until all ingredients are well combined, but be careful not to overmix, which can lead to tough meatballs.
  • Using a small scoop or your hands, form the mixture into approximately 30 evenly sized meatballs. Place them on a sheet of parchment paper while you work to prevent sticking.
  • Activate the Instant Pot’s “Sauté” setting (adjust to “Normal” or “Medium” if available). Once the pot is hot (the display will typically show “Hot”), add the olive oil and 2 tablespoons of the butter to the inner pot. Allow the butter to melt and swirl to coat the bottom.

  • Carefully remove the cooked meatballs from the pot using a slotted spoon and transfer them to a serving plate. Cover loosely with foil to keep them warm. Turn on the “Sauté” setting again (Med – Normal temperature). Bring the sauce to a gentle simmer. Gradually whisk in the prepared flour/cream mixture, stirring continuously, until the sauce thickens to your desired consistency. This should take a few minutes. Once thickened, press “Cancel” to turn off the Sauté setting.
