Swamp Potatoes with Chicken Broth
Slow cookerServes 8Prep 10 minutes5 hours

Serves 8 in about 5 hours. Cajun seasoning goes in first, and butter finishes the pot.
Ingredients
- 3 pounds potatoes
- 1 medium yellow onion (or sweet onion)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 ½ teaspoons cajun seasoning (try my homemade blend)
- 2 teaspoons garlic powder (or 1 tablespoon minced garlic)
- 1 ½ tablespoons olive oil
- 1 pound fresh green beans (trimmed, cut in 2” pieces)
- 1 pound smoked sausage (cut in bite-sized pieces)
- 1 packet onion soup mix
- 1 stick unsalted butter
- ¾ cup chicken broth (use more if you want extra potlikker)
Method
- Cut the potatoes in bite-sized pieces (not too small). Chop the onion, trim and cut the green beans in about 2-inch pieces, and slice the smoked sausage into bite-sized rounds or pieces.
- Stir in the potatoes and onion to the bottom of the slow cooker.
- Stir in the salt, pepper, Cajun seasoning, garlic powder, and olive oil. Stir well to coat the potatoes.
- Layer the green beans over the potatoes & onion (don't stir).
- Tip in the sausage over the green beans in a layer (don't stir).
- Scatter the packet of onion soup mix over the sausage (don't stir).
- Set the stick of butter on top (you can slice it if you want to), then pour in the chicken broth (don't stir).
- Cover the slow cooker and cook on Low for 5-6 hours or High for 3-4 hours, or until the potatoes and onion are tender to your liking. Mix once halfway through cook time, and once again about 30 minutes before serving.
