Ingredients

  • 1 cup Water, for the Pressure Cooker

For the Peppers

  • 4 med-large Bell Peppers (any color, I like red)
  • 1 cup Cooked Rice (or parboiled rice)
  • ½ lb Lean Ground Turkey or Beef (85% to 93% lean)
  • 1 Egg, beaten
  • 1 teaspoon Garlic Powder
  • ½ small Onion, diced (or 1/2 tsp Onion Powder)
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 3 Tbsp Bread Crumbs
  • 2 teaspoons Italian Seasoning
  • 2 teaspoons Paprika (optional)
  • 2 teaspoons Worcestershire Sauce
  • 1 cup Shredded Cheese, divided in half
  • 1 (14 oz) can Tomato Sauce, divided in half

Instructions

  • Pour 1 cup of water into the inner liner of your Instant Pot. Place the trivet inside the pot for the peppers to sit on.
  • Rinse the bell peppers. Carefully slice off the tops, then deseed and remove the white membrane from inside each pepper.
  • In a large mixing bowl, add the cooked rice.
  • To the bowl with the rice, add the raw ground turkey or beef, the beaten egg, garlic powder, diced onion (or onion powder), salt, pepper, bread crumbs, Italian seasoning, paprika (if using), Worcestershire sauce, and half of the shredded cheese and half of the tomato sauce. Mix all ingredients thoroughly until well combined.
  • Carefully fill each prepared bell pepper with the meat and rice mixture. Fill them generously, slightly above the top of the pepper, but do not pack them too tightly. This allows the filling to cook evenly.
  • Place the stuffed peppers upright on the trivet in the Instant Pot. They should be sitting above the water. *If using the “Pot-in-Pot” method, place the stuffed peppers into an oven-safe dish first, then place that dish on the trivet.
  • Pour the remaining half of the tomato sauce over the tops of the stuffed peppers.
  • Secure the Instant Pot lid, making sure it’s properly sealed, and turn the steam release knob to the Sealing position.
  • Press the “Pressure Cook” (or “Manual”) button, and then use the +/- buttons to select 9 minutes of cook time. Ensure it is set to High Pressure. (Note: Cook time may vary slightly depending on the size of your peppers and how densely they are stuffed. Add 2 minutes if using the Pot-in-Pot method).
  • Once the cooking cycle finishes, immediately turn the steam release knob to the “Venting” position to perform a Quick Release of the pressure. Be cautious of escaping steam.
  • Once the float valve (pin) on the lid drops completely and all pressure has been released, you can safely open the lid.
  • To ensure safety, check the internal temperature of the meat filling using an instant-read thermometer. The temperature should be at least 165°F (74°C) for ground turkey, and 160°F (71°C) for ground beef.
  • If the peppers or filling are not fully cooked to temperature, replace the lid and allow them to sit for an additional 2 to 5 minutes with the Instant Pot off and sealed (Natural Pressure Release), then check again.
  • Sprinkle the remaining reserved shredded cheese evenly over the top of each hot pepper. Place the lid back on the Instant Pot (no need to seal or turn on) for a few minutes to allow the residual heat to melt the cheese until it’s bubbly and delicious.
