Ingredients
- 1 lb Lean Ground Beef or Turkey (93% lean is ideal)
- 1 (1 oz) Taco Seasoning Packet (or 2 Tablespoons of my Homemade Taco Seasoning)
- 1 ½ cups Refried Beans
- ⅓ cup Salsa
- (4) 8-inch Flour Tortillas (can use corn, but they are more fragile)
- ¼ cup Enchilada Sauce (optional)
- 2 ½ cups Shredded Cheese or more if desired. (I use sharp cheddar and Monterey Jack).
Garnish
- Sour Cream
- Cilantro
- Extra Salsa
- Hot Sauce
Instructions
- Use the Sauté setting on your pressure cooker (or use a frying pan) to brown the meat. Stir in the taco seasoning about halfway through. Cook meat until done. Set aside. Cancel the sauté setting.
- Wash/Rinse out the Instant Pot inner pot and add 1 ½ cups of water to it.
- In a separate bowl, mix the refried beans with the salsa until well combined.
- Spray a 7″x3″ springform or push pan with cooking spray. Place one of the tortillas at the bottom of the pan and spread ½ cup of the refried bean mixture evenly over it.
- Sprinkle on 1 cup of the cooked taco meat evenly. If using, drizzle ¼ cup of enchilada sauce over the meat, then top with 1 cup of the shredded cheese.
- Place a second tortilla in the pan. Follow with ½ cup of the refried bean mixture, then 1 cup of the meat, and finally ½ cup of the cheese (note: the first layer receives 1 cup of cheese, this is correct for an extra cheesy base).
- Add a third tortilla. Layer with the remaining ½ cup refried bean mixture, 1 cup of the meat, and another ½ cup of cheese.
- Place the final tortilla on top and gently press it down to slightly compress the layers.
- Cover the pan tightly with aluminum foil to keep moisture out. Place the covered pan onto the trivet/rack. Use the trivet handles (or a foil sling) to carefully lower the pan and trivet into the Instant Pot inner pot containing 1 ½ cups of water.
- Secure the Instant Pot lid in place and ensure the steam release knob is set to the Sealing position.
- Press the Pressure Cook/Manual button (or dial) and set the cooking time to 17 minutes on High pressure using the +/- buttons (or dial).
- Once the cooking cycle finishes, allow the pot to naturally release pressure for 10 minutes (10-minute Natural Release). After 10 minutes, carefully turn the steam release knob to the Venting position to release any remaining steam/pressure.
- When the float valve (pin) on the lid drops, it’s safe to open the lid. Using silicone mitts or oven mitts, carefully remove the hot pan and trivet from the pot. Transfer the pan to a cooling rack. Be extremely cautious as both the pan and the water in the pot will be very hot.
- Preheat your broiler to 425°F. Remove the foil from the pan and sprinkle the remaining ½ cup of cheese (or more, up to 1 cup, if desired) over the top of the pie.
- Place the pan on the middle oven rack and broil for 2-5 minutes, or until the cheese is melted, bubbly, and lightly browned to your liking. Keep a close eye on it to prevent burning!
- Carefully remove the pan from the oven and transfer it to a plate. Let it sit for a few minutes to allow the pie to set up and cool slightly before serving.
