  • 1 packet Ranch Dressing Mix (optional, for extra flavor)
  • 1 (10 oz) can Rotel (diced tomatoes with green chiles)
  • 1 (7 oz) can Diced Green Chiles (with juice)
  • 4 cups Chicken Broth (low sodium recommended)
  • 1 (14 oz) can Black Beans (rinsed & drained)
  • 1 (14 oz) can Garbanzo Beans (rinsed & drained)
  • 1 (14 oz) can Red Kidney or Pinto Beans (rinsed & drained)
  • 1 (14 oz) can Diced Tomatoes (with juice)

To Finish

  • 4 (5-inch) Corn Tortillas (cut in thin strips; optional, but adds a nice masa flavor)
  • 1 cup Frozen Corn (or 1 can of corn, drained)

Instructions

  1. Turn your Instant Pot to the “Sauté” setting. Add the ground beef or turkey (add a little oil if using leaner turkey). Cook for a few minutes, breaking up the meat.
  2. Add the taco seasoning, garlic powder, onion powder, oregano, salt, and pepper to the pot. Continue cooking, stirring occasionally, until the meat is fully cooked and browned. Drain any excess grease.
  3. Stir in the Ranch packet (if using), Rotel, diced green chiles, and chicken broth. Ensure any browned bits are scraped from the bottom of the pot to prevent a “Burn” notice.
  4. Add all the rinsed and drained beans to the pot and stir well to combine with the liquid.
  5. Pour the can of diced tomatoes over the top of the other ingredients. Do not stir the diced tomatoes into the mixture; leave them layered on top.
  6. Secure the lid on the Instant Pot and turn the steam release knob to the “Sealing” position.
  7. Cancel the “Sauté” setting, then press the “Pressure Cook” or “Manual” button (or dial) and set the cooking time to 6 minutes on HIGH pressure. The pot will take several minutes to build pressure before the timer begins.
  8. Once the cooking cycle is complete, allow the pot to naturally release pressure for 15 minutes. After 15 minutes, perform a controlled Quick Release by turning the knob towards the “Venting” position in short bursts. Use a wooden spoon handle or utensil to avoid direct contact with steam. Once all the steam is released and the float valve drops, you can carefully open the lid away from your face.
