Essential Ingredients for Your Pressure Cooker Cabbage and Sausage

One of the beauties of this Instant Pot Cabbage and Kielbasa recipe lies in its simplicity, requiring only a few key ingredients that pack a major flavor punch. You’ll be amazed at the depth of taste achieved with such a straightforward list:

  • Polish Kielbasa: The star of the show, bringing a distinctive smoky and savory flavor. While traditional pork kielbasa is excellent, turkey kielbasa offers a lighter, yet equally delicious, alternative.
  • Green Cabbage: The humble backbone of the dish, transforming into a tender, buttery delight under pressure. A medium head is usually perfect.
  • Sweet Onion: Adds a foundational layer of sweetness and aromatic depth that complements the other ingredients beautifully.
  • Garlic: Essential for any savory dish, fresh garlic cloves provide a pungent, aromatic kick.
  • Vegetable Broth: Provides the necessary liquid for pressure cooking and infuses the dish with even more flavor. Chicken broth or beef broth can also be used for varying flavor profiles.
  • Butter: For sautéing and adding a rich, decadent finish to the cabbage.
  • Caraway Seeds: A secret weapon! These tiny seeds introduce a warm, slightly peppery, and anise-like flavor that is classically paired with cabbage and sausages, elevating the dish significantly.
  • Salt & Black Pepper: Basic seasonings to enhance all the natural flavors.

Each ingredient plays a vital role in creating a harmonious blend of textures and tastes, making this Cabbage and Kielbasa a truly satisfying meal.

Mastering Instant Pot Sausage and Cabbage: A Step-by-Step Guide

Making this Instant Pot Cabbage and Kielbasa is incredibly straightforward, even for novice pressure cooker users. Follow these easy steps to create a flavorful meal:

All ingredients for Instant Pot Cabbage and Kielbasa laid out on a kitchen counter: butter, kielbasa, cabbage, onion, garlic, caraway seeds, salt, pepper, and vegetable broth.
Gathering your ingredients ensures a smooth cooking process.
  1. Preparation is Key: Begin by gathering all your ingredients. This mise en place approach ensures a smooth cooking experience. Chop the entire head of green cabbage into manageable 2-inch, bite-sized pieces. Slice the kielbasa sausage into ½-inch rounds, and dice the sweet onion into 1-inch pieces.
  2. Chopped cabbage in a bowl, with kielbasa sausage slices browning in an Instant Pot on the sauté setting.
Sautéing the kielbasa to develop rich flavors.
  3. Sauté the Sausage: Turn on your Instant Pot’s Sauté setting. Once the pot is hot, add the butter. When melted, carefully place the kielbasa sausage pieces in a single layer if possible. Brown the sausage on both sides just enough to develop a little color and enhance its smoky flavor. Remember, kielbasa is already a cooked smoked sausage, so you’re not cooking it through, just adding a delicious crust.
  4. Kielbasa sausage browning in the Instant Pot, followed by adding chopped onions to the pot.
Sautéing onions after browning the kielbasa.
  5. Soften the Onions: Add the chopped sweet onion to the pot with the browned sausage. Stir well and cook, stirring occasionally, until the onion pieces begin to soften and become translucent. This step builds another layer of flavor.
  6. Deglaze and Season: Pour a splash of the vegetable broth into the Instant Pot. Immediately use a wooden spoon to scrape up any browned bits stuck to the bottom of the pot. This process, known as deglazing, is crucial for preventing a “Burn” notice on your Instant Pot and adds immense flavor to the dish. Stir in the caraway seeds, salt, and black pepper, ensuring they are well distributed.
  7. Pouring vegetable broth into the Instant Pot and using a wooden spoon to scrape the bottom, then adding caraway seeds and pressing garlic.
Deglazing the pot adds depth of flavor and prevents sticking.
  8. Add the Garlic: Press in the fresh garlic cloves using a garlic press (or add minced garlic). Stir vigorously for about 30 seconds. Be mindful not to burn the garlic, as burnt garlic can impart a bitter taste.
  9. Adding caraway seeds, salt, and pepper to the Instant Pot, followed by pressing fresh garlic into the pot.
Infusing the dish with fragrant garlic and caraway seeds.
  10. Liquid Foundation: Pour in the remaining vegetable broth and give it a good stir to combine all the ingredients at the bottom of the pot.
  11. Pouring the remaining vegetable broth into the Instant Pot and stirring with a wooden spoon.
Ensuring all ingredients are mixed with the broth before pressure cooking.
  12. Introduce Cabbage: Turn off the Sauté setting. Now, add the chopped cabbage to the pot. Stir it gently to mix it with the sausage and other ingredients. It might seem like a lot of cabbage, but it will cook down significantly.
  13. Adding chopped green cabbage to the Instant Pot and stirring it with a wooden spoon.
The cabbage will tenderize beautifully under pressure.
  14. Pressure Cook: Secure the lid on your Instant Pot and ensure the steam release knob is set to the Sealing position (if it doesn’t self-seal). Select the “Pressure Cook” or “Manual” button/dial and set the cooking time to 3 minutes for perfectly tender-crisp cabbage, or 5 minutes for softer cabbage. Ensure it’s set to High Pressure. The Instant Pot will take a few minutes to come to pressure before the actual cooking time begins.
  15. Quick Release and Serve: Once the cooking time concludes, immediately perform a Quick Release by turning the steam release knob to the Venting position. Stand clear of the steam. When the pin in the lid drops down, it’s safe to open the lid. Stir the contents of the pot gently. Dish up the fragrant cabbage and sausage using a slotted spoon, as there will be some delicious liquid left in the pot – don’t discard it, it’s full of flavor! Serve hot and enjoy this comforting meal.

Serving Suggestions and Perfect Pairings

Instant Pot Cabbage and Kielbasa is a complete meal on its own, offering a balanced blend of protein and vegetables. However, you can elevate the dining experience with a few thoughtful additions:

  • Crusty Bread: A warm, crusty loaf of bread is perfect for soaking up the flavorful juices left in the pot.
  • Potatoes: Mashed potatoes, roasted potatoes, or even simple boiled potatoes are classic companions to this Eastern European-inspired dish.
  • Apple Sauce: A dollop of unsweetened apple sauce can provide a refreshing contrast to the savory notes of the sausage and cabbage.
  • Mustard: A side of dijon or whole-grain mustard offers a sharp, tangy kick that complements the kielbasa beautifully.
  • Fresh Herbs: A sprinkle of fresh chopped parsley or dill just before serving adds a burst of color and freshness.

Creative Substitutions and Delicious Additions

One of the joys of cooking is customization, and this Instant Pot Cabbage and Kielbasa recipe is incredibly versatile. Feel free to experiment with these additions and substitutions to make it truly your own:

Flavor-Boosting Additions:

  • Small Red Potatoes: For a heartier meal, quartered small red potatoes can be added along with the cabbage. They will cook perfectly under pressure and absorb the wonderful flavors.
  • Chopped Fennel Bulb: Fennel adds a delicate anise flavor and a lovely texture. Add it with the onions for a unique twist.
  • Spice It Up: A pinch of red pepper flakes or a dash of cayenne pepper (or your favorite hot sauce) can add a welcome kick for those who enjoy a bit of heat.
  • Different Broths: While vegetable broth works wonderfully, feel free to use chicken broth, beef broth, or even just a cup of water if that’s what you have on hand. Each will subtly alter the final flavor profile.
  • Carrots: Sliced carrots can add natural sweetness and a pop of color.

Smart Substitutions:

  • Olive Oil: If you prefer to avoid butter or want a lighter option, a tablespoon of olive oil can be used for sautéing.
  • Alternative Sausages: While kielbasa is traditional, Italian sausage (sweet or hot), smoked chicken sausage, or even small ground turkey sausage patties can be excellent substitutes. If using raw sausage, ensure it is fully cooked during the browning step.
  • Garlic Powder: No fresh garlic? No problem. Use 1 teaspoon of garlic powder in place of the fresh cloves. Add it with the other dry spices.

Equipment

  • 6-quart Electric Pressure Cooker

Ingredients

  • 2 Tablespoons Butter
  • 13 ounces Polska Kielbasa Smoked Sausage (I use Turkey)
  • 1 Sweet Onion, chopped
  • 1 teaspoon Caraway Seeds
  • ½ teaspoon Coarse Salt
  • ½ teaspoon Black Pepper
  • 3 cloves Garlic
  • ¾ cup Vegetable Broth
  • 1 medium head Green Cabbage

Instructions

  1. Gather all of the ingredients together.

Chop the whole head of cabbage into 2-inch bite-sized pieces. Cut the kielbasa sausage into ½-inch rounds. Chop the onion into 1-inch pieces.

  2. Turn on the Sauté setting. When the pot is hot, add the butter and the sausage pieces in a layer, if possible.
  3. Brown the sausage on both sides, just enough to get some color, as kielbasa is a cooked smoked sausage.
  4. Add the chopped onion and stir well. Cook, stirring occasionally, until the onion starts to soften.
  5. Add in the garlic using a garlic press (or use minced garlic) and stir well. Cook, stirring, about 30 seconds, being careful not to burn the garlic.
  6. Add the caraway seeds, salt, and pepper. Stir well.
  7. Add a splash of the broth and use a wooden spoon to scrape up the browned bits off of the bottom of the Instant Pot (deglazing the bottom of the pot).
  8. Pour in the remaining broth and stir.
  9. Turn off the Sauté setting and then add the cabbage and stir.
  10. Close the lid and set the steam release knob to the Sealing position, if not self-sealing.
  11. Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 3 minutes (5 minutes for softer cabbage). High Pressure. The pot will take a couple of minutes or so to come to pressure.
  12. When the cook time has finished, immediately turn the steam release knob to the Venting position to Quick Release the steam/pressure. When the pin in the lid drops back down, open the lid.
  13. Stir the contents of the pot and dish up the cabbage and sausage using a slotted spoon. There will be liquid left in the pot (it’s very tasty!).
  14. Serve hot.
