Instant Pot Black-Eyed Peas

Instant Pot Black-Eyed Peas are so delicious, and they are a fast cooking bean! Don’t even bother soaking them, just season them with great ingredients. Don’t forget the collard greens, this recipe has them as a tasty option!

Ingredients

  • 1 Tbsp Olive Oil
  • 1 small Onion, chopped
  • 2 Celery Ribs (Stalks), diced
  • 1 Bell Pepper, red or green
  • 2 small Bay Leaves
  • 2 sprigs Fresh Thyme, or 1/2 tsp dried
  • 3 tsp Smoked Paprika
  • ½ tsp Black Pepper
  • 1 tsp Coarse Salt, or 3/4 tsp table salt
  • 4 cloves Garlic, pressed or minced
  • 1 Jalapeño Pepper, seeded and diced small
  • 3 ½ cups Chicken Broth, low sodium
  • 2 tsp Balsamic Vinegar
  • 1-2 slices Bacon, chopped
  • 1 small Ham Hock (or meaty ham bone)
  • 1 ¼ cups Black-Eyed Peas, dry*
  • 2 cups Collard Greens, (optional) chopped in 2″ pieces

Instructions

  • To begin, turn your Instant Pot or pressure cooker to the Sauté function. Allow it to heat up until the display indicates “Hot” or about 3-5 minutes. Once hot, carefully add the olive oil to the pot.
  • Next, add the chopped onion, diced celery, bell pepper (red or green for a pop of color and flavor), and the bay leaves to the hot oil. Sauté these aromatics, stirring occasionally to prevent sticking, until the onion softens and becomes translucent, typically taking about 5-7 minutes. This step builds the foundational flavor of your dish.
  • Now, it’s time to add the spices! Stir in the fresh thyme (or dried, if using), smoked paprika for that characteristic smoky depth, black pepper, and coarse salt. Continue to stir for about 30 seconds to allow the spices to bloom and release their aromas.

This is for perfectly tender beans. If you prefer a slightly firmer texture, reduce the cook time to 14 minutes. Ensure the pressure is set to High.
  • Once the cooking cycle has completed and the Instant Pot beeps, resist the urge to immediately release the pressure. Allow the pot to sit undisturbed for 15 minutes for a natural pressure release. This crucial step helps the beans finish cooking gently and prevents them from bursting. After 15 minutes, carefully turn the steam release knob to the “Venting” position to quick release any remaining steam/pressure.
  • When the floating pin on the lid drops down, indicating all pressure has been released, carefully open the lid. Give the contents of the pot a gentle stir. At this point, you should discard the bay leaves. The ham hock is primarily for flavor, and while it likely won’t be falling-off-the-bone tender in this short cook time, you can remove any meat that easily comes off the bone and stir it back into the pot for extra flavor and texture.
