Essential Ingredients for Your Gluten-Free Pumpkin Donuts

Overhead shot of all the ingredients to make gluten-free pumpkin donuts laid out on a table, including flour, spices, pumpkin puree, eggs, and sugars.

One of the best aspects of this recipe is that it relies on readily available pantry staples. You won’t need to hunt for obscure ingredients to create these delightful fall treats. Here are a few important notes on the key components to ensure your donuts turn out perfectly. Should you have any questions, feel free to leave a comment below!

  • Gluten-Free 1:1 Baking Flour: The choice of gluten-free flour blend is crucial for the texture of your donuts. I highly recommend using a high-quality “measure-for-measure” or “1:1” gluten-free flour blend. Brands like King Arthur Flour or Bob’s Red Mill have excellent options. For the best results, look for a blend that explicitly states it contains xanthan gum, as this helps with binding and gives baked goods a more pliable, less crumbly texture, mimicking traditional wheat flour.
  • Canned Pumpkin Puree: This is the star of the show! Always make sure you’re selecting 100% pure pumpkin puree, not canned pumpkin pie filling. Pie filling contains added spices and sugars that will alter the flavor and sweetness balance of your donuts. Check the ingredient list carefully.
  • Oil: You have flexibility here. Both vegetable oil (such as canola or sunflower) or melted coconut oil work wonderfully in this recipe. They contribute to the moistness and tender crumb of the donuts. Choose whichever you prefer or have on hand.
  • Pumpkin Pie Spice: This blend of warm spices is what gives these donuts their signature autumnal flavor. If you don’t have a pre-made pumpkin pie spice blend, you can easily create your own. A good substitute is 3/4 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon ground ginger. You can also add a pinch of ground cloves for extra depth.
  • Sugars (Brown and White): The combination of brown and white sugar contributes to both the sweetness and the texture. Brown sugar adds moisture and a subtle caramel note, while white sugar provides clean sweetness and helps with browning.
  • Eggs: Large eggs are standard in baking and provide structure and richness. Ensure they are at room temperature for better incorporation into the batter.
  • Vanilla Extract: A touch of pure vanilla extract enhances all the other flavors and adds a lovely aromatic quality to the donuts.

Step-by-Step Guide: How to Make Irresistible Gluten-Free Pumpkin Donuts

Creating these delightful baked donuts is a straightforward process, even for beginner bakers. Follow these simple steps for perfectly moist and fluffy results every time.

Two glass bowls, one with dry ingredients and one with wet ingredients, being mixed separately for gluten-free pumpkin donuts.
  1. Prepare Your Pan and Oven: Begin by preheating your oven to 375°F (190°C). Lightly grease two 6-cavity non-stick donut pans with cooking spray or butter to prevent sticking. A well-greased pan ensures your donuts release easily and maintain their shape.
  2. Combine Dry Ingredients: In a medium-sized mixing bowl, whisk together all your dry ingredients: the gluten-free 1:1 baking flour, baking powder, pumpkin pie spice (or your homemade blend), and salt. Whisking ensures all ingredients are evenly distributed, which is crucial for a consistent texture.
  3. Mix Wet Ingredients: In a separate, larger bowl, combine the wet ingredients. Whisk together the pumpkin puree, large eggs, vegetable or coconut oil, brown sugar, white sugar, and vanilla extract. Continue whisking until the mixture is completely smooth and well combined. This ensures there are no lumps and the sugars are fully dissolved.

  1. Combine Wet and Dry: Pour the dry ingredient mixture into the wet ingredient mixture. Whisk them together until just combined. Be careful not to overmix the batter; overmixing can lead to tough donuts. A few small lumps are perfectly fine.

  1. Fill the Donut Pans: This step is often the trickiest, but with the right method, it’s simple.

TIP: The easiest and cleanest way to fill the donut pans is to use a large Ziploc bag or a piping bag. Place the bag in a tall measuring cup, folding the edges over the rim. Spoon the donut batter into the bag. Once filled, snip off one corner of the bag (about 1/2 inch opening) and pipe the batter evenly into each cavity of your prepared donut pans. Fill each cavity about two-thirds full to allow for rising.

  2. Bake to Golden Perfection: Place the filled donut pans into your preheated oven. Bake for approximately 20-25 minutes. The exact baking time may vary slightly depending on your oven. To check for doneness, insert a toothpick into the center of a donut; if it comes out clean, they are ready.
  3. Cooling: Once baked, carefully remove the donut pans from the oven. Let the donuts cool in the pans for a few minutes before gently turning them out onto a wire cooling rack to cool completely. Cooling on a wire rack allows air circulation, preventing the bottoms from becoming soggy.

Delightful Topping Ideas for Your Pumpkin Donuts

While these gluten-free pumpkin donuts are absolutely divine on their own, adding a topping can elevate them to a whole new level of deliciousness. You have a few fantastic options:

  • Simple & Sweet: Plain: Sometimes, less is more. The rich pumpkin and spice flavors truly shine when the donuts are enjoyed plain, perhaps with a cup of coffee or tea.
  • Classic Cinnamon Sugar: A timeless favorite! For this topping, combine 1/4 cup white sugar with 1 tablespoon of ground cinnamon in a shallow bowl or a Ziploc bag. While the donuts are still slightly warm (but firm enough to handle without breaking), gently roll or shake them in the cinnamon sugar mixture until evenly coated. The warmth helps the sugar adhere.
  • Rich Brown Sugar Glaze: For a more decadent finish, a luscious brown sugar glaze is perfect. To make it, combine 3/4 cup brown sugar, 1/4 cup milk (dairy or almond), 1 tablespoon butter, and 1/4 teaspoon salt in a medium saucepan over medium heat. Stir continuously until the butter melts and the mixture is smooth. Bring it to a gentle simmer for 1 minute, then remove from heat. Whisk in 1 teaspoon vanilla extract and 1 1/2 cups sifted powdered sugar until completely smooth. Let the glaze cool for about 5 minutes to thicken slightly. Dip the tops of the *completely cooled* pumpkin donuts into the warm glaze. If the glaze becomes too thick during dipping, warm it briefly in the microwave or on the stovetop with a tiny bit more milk to thin it out. Place glazed donuts on a wire rack set over a baking sheet to catch any drips. For an extra touch, sprinkle with chopped nuts or festive sprinkles before the glaze sets.

Mini Pumpkin Donuts? If you want to make smaller, bite-sized treats, simply use a mini muffin pan instead of a donut pan. Reduce the baking time to 15-20 minutes. These mini versions are perfect for rolling in cinnamon sugar or dipping in the brown sugar glaze. They are utterly irresistible!

Storage and Make-Ahead Tips for Freshness

To ensure your delicious gluten-free pumpkin donuts remain fresh and enjoyable, proper storage is key. Here’s how to keep them at their best, and even prepare them in advance:

STORAGE: Once cooled, store any leftover donuts in an airtight container. They will stay fresh at room temperature for 1-2 days, maintaining their soft texture. For extended freshness, you can also store them in the refrigerator for up to 1 week. If refrigerated, allow them to come to room temperature or gently warm them before serving for the best taste.

MAKE-AHEAD/FREEZING: These donuts freeze beautifully! If you want to prepare them in advance or save some for later, freeze the plain, unglazed donuts for up to 2-3 months. Wrap them individually in plastic wrap, then place them in a freezer-safe bag or container to prevent freezer burn. When you’re ready to enjoy them, thaw the donuts overnight in the refrigerator. For a warm, freshly baked taste, heat them gently in the microwave for about 10 seconds. If desired, add your preferred glaze or cinnamon sugar topping just before serving after they’ve thawed and warmed.

Yield: 12 donuts

Ingredients

Dry Ingredients:

  • 1 ½ cups gluten-free 1:1 baking flour (230g)
  • 2 teaspoons baking powder
  • 1 ½ teaspoons pumpkin pie spice (or 3/4 teaspoon cinnamon, 1/4 teaspoon nutmeg and 1/4 teaspoon ginger)
  • 1 ¼ teaspoon salt

Other:

  • 1 ½ cups pumpkin purée (340g)
  • 3 large eggs
  • ½ cup vegetable oil (100g)
  • ½ cup brown sugar (100g)
  • ½ cup white sugar (100g)
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Topping:

  • ¼ cup white sugar (50g)
  • 1 tablespoon cinnamon

For the Brown Sugar Glaze:

  • ¾ cup brown sugar (150g)
  • ¼ cup milk (or almond milk)
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar (175g, sifted)
  • Nuts or sprinkles for topping (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease two 6-cavity non-stick donut pans with cooking spray.
  2. In a medium bowl, whisk together the dry ingredients (flour, baking powder, pumpkin pie spice, and salt).
  3. In a large bowl, whisk together the pumpkin puree, eggs, oil, brown sugar, white sugar, and vanilla extract until smooth and well combined.
  4. Add the dry ingredients to the wet ingredients and whisk until just combined. Be careful not to overmix; a few small lumps are okay.
  5. Fill the donut pans with the batter. The easiest way to do this is to place a large Ziploc bag in a measuring cup, fill it with batter, then snip off a corner of the bag to pipe the batter into the donut pans. Fill each cavity about two-thirds full.
  6. Bake the donuts for 20-25 minutes, or until a toothpick inserted into the center of a donut comes out clean.
  7. Empty the donuts out onto a wire cooling rack to cool completely before glazing or topping.

For Cinnamon Sugar Donuts:

  1. In a shallow bowl or Ziploc bag, mix together the white sugar and cinnamon.
  2. While the doughnuts are still warm (but no longer fragile), gently roll or shake them in the cinnamon-sugar mixture until evenly coated.

For Brown Sugar Glazed Donuts:

  1. Combine the brown sugar, milk, butter, and salt in a medium saucepan over medium heat. Stir until the butter has melted and the mixture is smooth.
  2. Bring the mixture to a simmer. Allow to simmer for 1 minute, then remove from heat.
  3. Whisk in the vanilla extract and sifted confectioners’ sugar until the glaze is smooth and combined.
  4. Let the icing cool for 5 minutes to slightly thicken.
  5. Dip the tops of the completely cooled pumpkin donuts into the warm icing. If the icing gets too thick as you’re dipping, add a little more milk or warm it briefly in the microwave or on the stove to thin it out.
  6. Place dipped donuts on a wire rack placed on a baking sheet so any excess icing can drip off. Top with chopped nuts or sprinkles before the glaze sets.
