Instant Pot Balsamic Apple Pork Tenderloin: A Culinary Delight
The Instant Pot has revolutionized home cooking, making complex dishes accessible and quick. Our Balsamic Apple Pork Tenderloin recipe truly showcases its capabilities, delivering a meal that’s both effortless and intensely flavorful. This dish stands out not only for its speed but also for the incredible depth of its sweet and tangy balsamic apple gravy, lightly infused with aromatic herbs. It’s a testament to how simple ingredients, when cooked with precision, can create something truly extraordinary.
I’ve experimented with numerous cooking times and methods for pork tenderloin in a pressure cooker, and I firmly believe this recipe yields the most tender and moist results you’ll ever achieve. It’s no wonder this particular rendition has quickly become one of the top-rated and most cherished recipes among my readers. The lean, delicate nature of pork tenderloin makes it a favorite cut for many, and when transformed into succulent medallions coated in an irresistible sauce, it becomes a dish that truly sings.
Pork tenderloin, often referred to as pork fillet or pork tender, is a remarkably versatile cut. Its inherent tenderness means it cooks quickly and absorbs flavors beautifully. However, this same characteristic also means it can easily be overcooked, leading to dry and tough meat. My method, refined over countless trials, specifically addresses this challenge, ensuring that each bite is melt-in-your-mouth tender and bursting with the savory-sweet notes of the balsamic apple glaze.
Crafting delicious meals that are also time-efficient is a constant goal in my kitchen. While smaller, quicker meals can sometimes be challenging to develop without sacrificing flavor, this recipe hits all the right notes. It’s a perfect example of how strategic ingredient pairing and the right cooking technique can create a significant impact with minimal fuss.

Pork Tenderloin vs. Pork Loin: Knowing the Difference is Key
Before you embark on this culinary adventure, it’s crucial to understand the distinction between pork tenderloin and pork loin. Although their names sound similar, they are distinctly different cuts of meat that require different cooking approaches. Misidentifying them can lead to disappointing results.
A pork tenderloin is characterized by its long, thin, and tubular shape, typically weighing between 1 to 2 pounds. It’s an incredibly lean and tender cut, ideal for quick cooking methods like searing, grilling, roasting, or, in this case, pressure cooking. Its delicate texture benefits greatly from short cooking times to prevent drying out.
Conversely, a pork loin roast (sometimes just called pork loin) is a much larger, thicker, and flatter rectangular cut. It often includes a bone, although boneless versions are also common. Pork loin is less tender than tenderloin and typically benefits from longer, slower cooking methods, such as traditional roasting, to achieve tenderness. If you attempt to cook a pork loin roast using tenderloin timing, it will likely be undercooked or tough.
For this Instant Pot Balsamic Apple Pork Tenderloin recipe, we specifically use the long, thin, tubular cut of pork tenderloin. This ensures the rapid cooking time and the tender, juicy medallions that are the hallmark of this dish. Always double-check the label when purchasing your pork to ensure you have the correct cut!

The Irresistible Balsamic Apple Sauce: A Flavor Powerhouse
The star of this dish, beyond the perfectly cooked pork, is undoubtedly the incredible balsamic apple sauce. This rich, aromatic gravy is where the magic truly happens, transforming simple ingredients into a complex and comforting flavor profile. The combination of sweet apples and tart balsamic vinegar is a classic pairing with pork, creating a dynamic balance that is both sophisticated and incredibly appealing.
The apples, whether a crisp variety like Honeycrisp or a sweeter one like Fuji, lend a natural sweetness and subtle fruitiness to the sauce. This recipe offers a fantastic opportunity to utilize apples that might be a little past their prime for raw eating – perhaps they’re a bit too ripe or have developed a mealy texture. While a mealy apple might not be your favorite snack, its softened flesh and concentrated sugars are perfect for cooking, dissolving into the sauce and enriching its texture and flavor profile. Don’t let those slightly soft apples go to waste!
Beyond the apples, high-quality balsamic vinegar is essential. Its deep, complex flavor, with notes of fruit and wood, forms the tangy backbone of the sauce. Paired with a touch of honey, which enhances the natural sweetness of the apples and adds a lovely glaze-like quality, the sauce becomes truly irresistible. Fresh rosemary and thyme are then introduced to elevate the aroma and add an herbaceous counterpoint, cutting through the richness and brightening the overall taste.
This harmonious blend of sweet, tangy, and savory elements creates a gravy that is not just a condiment but an integral part of the meal. After the pork is cooked, you’ll slice it into elegant medallions, allowing each piece to be generously drenched in this incredible, lightly spiced sauce. It’s a combination that promises to delight your palate and leave a lasting impression.

Ingredients
- 1 Tablespoon Cooking Oil, neutral, such as canola or sunflower
- 1 ½ lbs Pork Tenderloin* (not loin roast)
- 1 small Onion, cut in half and thinly sliced
- 2 cloves Garlic, pressed or finely minced
- 2 ½ Tablespoons Balsamic Vinegar (good quality vinegar makes a big difference)
- ½ cup Apple Juice or Chicken Broth, low sodium
- 2 Apples, chopped (any variety)
- ½ teaspoon Coarse Salt, or ¼ tsp table salt
- 1 sprig Rosemary, about a 3″ sprig
- 3 sprigs Thyme, fresh
To Finish
- 2 Tablespoons Honey
- 1 Tablespoon Butter
- 2 ½ teaspoons Corn Starch
Instructions
- Turn on Instant Pot to Sauté function (Normal/Medium heat). When the display reads Hot, add the oil.
- Place the tenderloin in the pot and let it cook for 2-4 minutes (depending on thickness), undisturbed. Then flip it over and do the same on that side. Brown all sides of the pork tenderloin.
- Remove the tenderloin to a plate and set aside.
- Add the onion to the pot and cook until tender, stirring frequently. Deglaze the pot by scraping up all of the brown bits (fond) from the bottom. You might need to add a small splash of broth to help loosen these bits.
- Add the garlic and stir.
- Add the balsamic vinegar and stir.
- Add the apple juice/broth, chopped apples, salt, rosemary, and thyme. Stir everything well to combine.
- Return the browned tenderloin to the pot and nestle it down into the broth mixture.
- Secure the lid on the pot and lock it in place. Ensure the steam release knob is set to the Sealing position.
- Cancel the Sauté function.
- Select Pressure Cook (Manual) and adjust the pressure to Low Pressure. Set the timer to 2 minutes (for smaller tenderloins, approximately 1 pound, use 1 minute).
- Once the cooking cycle ends, turn off or unplug the pot (to prevent warming) and allow a natural pressure release for 15 minutes. After 15 minutes, carefully turn the steam release knob to the Venting position to release any remaining pressure/steam. (It’s okay if there’s no steam left).
- When the pin in the lid drops, open the lid. Use a meat thermometer to check the internal temperature of the tenderloin. If it reads 137°F or more, remove the tenderloin to a plate and cover it loosely with foil to rest. The temperature will continue to rise to the desired 145°F as it rests, ensuring maximum juiciness.
- If the tenderloin has not reached the desired temperature, remove it from the pot. Proceed with the next three steps to prepare the sauce. Once the sauce is simmering, return the tenderloin to the mixture and let it cook for a few minutes, turning once, until it reaches the correct temperature. Check the temperature again before removing and covering with foil, then continue with thickening the sauce.
- Turn the Sauté function back on (Normal/Medium heat).
- Add the honey to the pot and stir well to incorporate it into the sauce.
- Add the butter and stir until melted.
- Allow the sauce mixture to simmer for about 5 minutes, letting it reduce slightly and the flavors to concentrate.
- Scoop out about ⅓ cup of the liquid into a separate cup and whisk in the corn starch until smooth. Pour this mixture back into the simmering sauce in the Instant Pot and stir continuously until the sauce thickens to your desired consistency.
- Turn off the Instant Pot.
- Slice the rested pork tenderloin into medallions and serve immediately with a generous portion of the rich balsamic-apple sauce.
- Garnish as desired for an extra touch of elegance (our photo features fresh thyme and vibrant pomegranate arils).
