This recipe has been carefully refined to guarantee a perfect outcome every time. We understand the frustration of the dreaded “BURN” message that can sometimes appear on older Instant Pot models. To address this common issue and ensure flawless, fluffy rice, we’ve updated our method to utilize the “Pot-in-Pot” (PIP) technique for cooking the rice. This ingenious approach separates the rice from the main chicken and sauce mixture, preventing scorching and allowing both components to cook to perfection simultaneously. This simple modification has made all the difference, transforming a potentially finicky recipe into a consistently successful and highly recommended dish.
Why You’ll Love This Instant Pot French Onion Chicken and Rice
For us, and we’re sure for many of you, finding a quick, delicious, and filling meal after a long day is a top priority. This Instant Pot French Onion Chicken and Rice ticks all those boxes and more. There’s a certain comfort in knowing you can walk in the door and have a piping hot, gourmet-tasting meal on the table in less than sixty minutes, especially when paired with a fresh, crisp salad. What truly sets this dish apart is its meticulous layering of onion flavors. We don’t just add a single type of onion; we incorporate fresh onions, condensed French onion soup, and dry onion soup mix to create a complex, deeply savory profile that’s reminiscent of a slow-cooked classic.
The Instant Pot truly shines here, expertly infusing these onion flavors into every morsel of chicken and grain of rice, creating a symphony of taste that will have everyone asking for seconds. It’s an incredibly satisfying meal that feels both sophisticated and wonderfully approachable.

Choosing Your Chicken: Thighs vs. Breasts
One of the beauties of this recipe is its flexibility, especially when it comes to your choice of chicken. You can absolutely make this dish with either boneless, skinless chicken thighs or breasts. While I personally lean towards chicken thighs for their richer flavor and tendency to stay juicier under pressure, chicken breasts also work wonderfully, offering a leaner alternative. The key is to prepare them correctly.
If you opt for chicken breasts, I recommend thawing them first. This allows for a quick browning step in the Instant Pot before pressure cooking, which adds an extra layer of flavor and a lovely golden hue to the chicken. Even a brief sear can make a significant difference in the final taste and texture of the dish. For frozen chicken thighs, you might find they work well without thawing, though browning is always a beneficial step if time allows. This small initial effort ensures your chicken is not only tender but also packed with flavor, complementing the robust onion sauce beautifully.

The Cheesy Crown: Perfecting Your Topping
No French onion dish is complete without a gooey, melted cheese topping, and this chicken and rice casserole is no exception. While traditional French onion soup often features Gruyère, this recipe shines with the creamy melt of Swiss or Provolone cheese. These cheeses offer a fantastic balance of flavor and melt beautifully, creating that irresistible cheesy crust we all crave.
For that classic bubbly, golden-brown finish, a quick trip under the broiler is recommended. However, if you prefer not to use your broiler, or simply want an alternative method, there’s a fantastic trick: once your chicken and rice are cooked, transfer half of the hot rice to your serving dish. Lay a generous layer of cheese slices over it, then top with the remaining hot rice and chicken. Finally, pour the steaming, savory soup mixture over everything. The residual heat from the dish will gently melt the cheese into a luxurious, creamy layer, achieving a similar delightful effect without the broiler. It’s a simple hack for an equally delicious result, ensuring every spoonful is packed with cheesy, oniony goodness.

Ingredients
- 3-4 Boneless-Skinless Chicken Breasts or Thighs*
- Salt (to season chicken)
- Pepper (to season chicken)
- Garlic Powder (to season chicken)
- Onion Powder (to season chicken)
- 1 ½ cups Long Grain White Rice (rinsed very well)
- 1 ½ cups Water
- 1 Tbsp Olive Oil
- 1 Tbsp Butter
- 1 Small Onion (Cut in half and thinly sliced into half rings)
- 2 Garlic Cloves (pressed or finely minced)
- 1 (10 oz) Can Condensed French Onion Soup
- 2 cups Beef Broth
- 2 Tbsp Soy Sauce (low sodium)
- 1 Packet Onion Soup Mix, dry (one envelope)
- 4-6 slices Swiss Cheese (or provolone)
Instructions
- Season the chicken on both sides by sprinkling with salt, pepper, garlic powder, and onion powder. Set aside.
- Rinse the rice very well under cold water until the water mostly runs clear. Strain thoroughly and add to a 7″ or 6″ heat-safe pan suitable for Pot-in-Pot (PIP) cooking (e.g., an Ekovana stackable stainless pan). Add 1 ½ cups of water to the rice in the pan and set aside.
- Turn the Instant Pot on Sauté mode (Normal heat). When the display reads “Hot,” add the olive oil and butter to the inner pot.
- Add the seasoned chicken to the hot pot and brown it lightly on both sides for 2-3 minutes per side. Remove the browned chicken to a plate.
- Add the thinly sliced onion to the pot and cook, stirring occasionally, until it becomes translucent and softened, about 5-7 minutes.
- Stir in the minced garlic and cook for just a few seconds, stirring constantly, until you start to smell its fragrance. Be careful not to let it burn.
- Pour in the condensed French onion soup, beef broth, soy sauce, and dry onion soup mix. Stir everything well, making sure to scrape any brown bits from the bottom of the pot (this crucial step, known as deglazing, prevents the “BURN” warning).
- Allow the contents to heat up and just begin to simmer.
- Carefully place the browned chicken back into the pot, arranging it in a single layer as much as possible to ensure even cooking. It’s okay if the chicken is partially submerged in the liquid.
- Place a tall-legged trivet (such as a steaming rack) into the pot over the chicken and liquid. Set the prepared pan of rinsed rice and water on top of the trivet, leaving it uncovered.
- Secure the lid on the Instant Pot and ensure the steam release knob is set to the Sealing position.
- Cancel the Sauté mode. Press the Manual (or Pressure Cook) button, then use the + or – buttons to select a cook time of 6 minutes on High Pressure. The pot will take several minutes to come to pressure before the cooking cycle begins.
- Once the cooking cycle ends and the Instant Pot beeps, allow the pot to perform a Natural Pressure Release (NPR) for 7 minutes. After 7 minutes, carefully manually release any remaining pressure by turning the steam release knob to Venting. Turn off the Instant Pot.
- While the Instant Pot is releasing pressure, preheat your oven broiler to 375 degrees F (190 C).
- Once the floating pin drops, indicating all pressure has been released, open the lid and carefully remove the pan of cooked rice (it will be hot!).
- Transfer the perfectly cooked rice to a casserole dish suitable for broiling.
- Arrange the cooked chicken pieces on top of the rice. Gently press the chicken down into the rice slightly so that it is relatively even with the top surface.
- Pour the savory soup mixture from the Instant Pot over the chicken and rice, ensuring everything is well coated. Then, lay the Swiss or Provolone cheese slices evenly across the top in a single layer.
- Place the casserole dish under the preheated broiler for just long enough to melt the cheese until it’s bubbly and creamy, about 1-2 minutes. Be watchful to prevent it from browning excessively or drying out the chicken. You want melty, not crispy, cheese.
- Serve immediately and enjoy your delicious Instant Pot French Onion Chicken and Rice!
Notes
*Frozen boneless-skinless chicken thighs have worked well for me using the same cooking times. I haven’t made this with frozen breasts as I prefer to brown them first for added flavor, which isn’t feasible when they’re frozen.

Tips for Instant Pot Success
- Deglazing is Key: Don’t skip the step where you scrape the bottom of the pot after sautéing the onions and adding liquids. This removes any browned bits that might stick, which is often the cause of the “BURN” warning on Instant Pots.
- Rinse Your Rice: Rinsing the rice thoroughly removes excess starch, which helps prevent the rice from becoming gummy and ensures separate, fluffy grains when cooked using the Pot-in-Pot method.
- Pot-in-Pot for Perfection: While some recipes cook rice directly, the PIP method ensures your rice is perfectly cooked and separate from the savory chicken and sauce, preventing any potential burn warnings or overcooked rice.
- Natural Release Time: Allowing for a 7-minute natural pressure release (NPR) is crucial. This helps the chicken stay tender and juicy and allows the pressure to drop slowly, preventing a sudden release of steam that can toughen meat.
- Broiler Watch: When broiling the cheese, keep a close eye on it. Broilers can vary greatly, and cheese can go from perfectly melted to burnt in a matter of seconds. You want creamy, bubbly cheese, not crispy or overly browned.
- Seasoning: Feel free to adjust the seasoning on your chicken to your preference. A little extra garlic powder or a pinch of dried thyme can enhance the savory notes.
Variations & Customizations
This Instant Pot French Onion Chicken and Rice recipe is wonderfully adaptable. Here are a few ideas to customize it to your taste:
- Mushroom Boost: Sauté sliced mushrooms along with the onions for an even deeper umami flavor. Cremini or button mushrooms would be excellent additions.
- Vegetable Additions: Stir in some frozen peas, diced carrots, or green beans into the chicken and sauce mixture after cooking, just before broiling, for added nutrition and color.
- Different Cheeses: While Swiss and Provolone are recommended, feel free to experiment with other cheeses like Gruyère for a more traditional French onion flavor, or even mozzarella for a milder, stretchier melt.
- Spice It Up: For those who like a little heat, a pinch of red pepper flakes can be added to the sauce.
- Herbacious Twist: A sprinkle of fresh parsley or chives after plating can add a fresh, vibrant finish and brighten the rich flavors.
- Creamier Texture: For an even richer, creamier sauce, stir in a splash of heavy cream or a tablespoon of cream cheese after the pressure cooking cycle, before transferring to the casserole dish.
Serving Suggestions
This Instant Pot French Onion Chicken and Rice is a complete meal on its own, but it pairs beautifully with a few simple sides:
- A crisp green salad with a light vinaigrette to cut through the richness.
- Crusty bread or baguette slices, perfect for soaking up any extra savory sauce.
- Steamed or roasted green vegetables like asparagus or broccoli.
Storage and Reheating
Leftovers of this Instant Pot French Onion Chicken and Rice are just as delicious, if not more so, the next day. Store any remaining portions in an airtight container in the refrigerator for up to 3-4 days. To reheat, you can use the microwave for individual servings, or for larger portions, gently warm in the oven at 300°F (150°C) until heated through. Add a splash of broth or water if it seems a bit dry.
Frequently Asked Questions (FAQs)
- Can I use brown rice instead of white rice?
- While technically possible, brown rice requires a different cooking time and liquid ratio. For this recipe’s perfect execution, we recommend sticking with long-grain white rice using the Pot-in-Pot method. Adjustments would be needed for brown rice, and it might not cook perfectly alongside the chicken in the same timeframe.
- What if I don’t have soy sauce?
- Soy sauce adds a wonderful depth of umami. If you don’t have it, you can omit it, but the flavor profile might be slightly less complex. A dash of Worcestershire sauce could be a decent substitute for some of the savory notes, if available.
- My Instant Pot says “BURN.” What do I do?
- The most common reason for a “BURN” message is food sticking to the bottom of the pot. Ensure you thoroughly deglaze the pot after sautéing the onions and adding the liquids, scraping up all browned bits. Also, make sure your liquid-to-solids ratio is correct. Our Pot-in-Pot method for rice helps prevent this by keeping the rice separate.
- Can I double the recipe?
- You can often double the ingredients in an Instant Pot, but ensure you do not exceed the max fill line. The cooking time for pressure cooking usually remains the same, but the time it takes for the pot to come to pressure will be longer.
- Can I freeze this dish?
- Yes, this dish freezes quite well. Store cooled leftovers in freezer-safe containers for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
