Instant Pot French Dip Sandwiches: A Timeless Classic Made Easy

Growing up, certain meals held a special place in my memory, and the French Dip sandwich from a beloved local restaurant called Frosty’s was definitely one of them. Frosty’s wasn’t just any diner; it was a place brimming with nostalgic charm, serving up everything from their legendary meatloaf to the coldest, frothiest root beer you could imagine. But their French Dip? It was pure perfection. Even as a child, I remember marveling at the sheer delight of a sandwich so hearty and flavorful, completely capable of devouring a whole one myself! The tender beef, the perfectly soft roll, and that irresistible savory dipping sauce – it was an experience etched into my culinary soul. Sadly, Frosty’s closed its doors years ago, but the exquisite memory of their French Dips has lingered, inspiring me to recreate that unforgettable taste.

That longing for the quintessential French Dip experience eventually led me on a quest to develop my own version. I knew I had to capture that same blend of tender beef and deeply savory au jus, but with a modern twist for today’s busy kitchens. The solution became clear: the Instant Pot. This versatile kitchen appliance allows us to achieve the slow-cooked tenderness typically associated with braised dishes, but in significantly less time. The pressure cooker method not only halves the cooking time compared to traditional Dutch oven braising, but it also locks in moisture and infuses the beef with an unparalleled depth of flavor, creating a rich au jus simultaneously. This adaptation has allowed me to bring a cherished childhood favorite back to life, right in my own home, and now I’m excited to share this simplified, yet incredibly delicious, recipe with you.

Unlocking Flavor and Tenderness: The Instant Pot Advantage for French Dip

Making French Dip sandwiches traditionally involves hours of slow cooking or braising to achieve that melt-in-your-mouth beef. However, the Instant Pot completely revolutionizes this process, delivering fork-tender roast beef and a robust au jus in a fraction of the time. Here’s why the Instant Pot is your secret weapon for the best homemade French Dip:

  • Speed and Efficiency: A beef roast that would typically braise for 3-4 hours can be perfectly cooked in about 70 minutes of active pressure cooking time, plus release. This makes a seemingly elaborate meal accessible even on a weeknight.
  • Unmatched Tenderness: The high-pressure environment of the Instant Pot quickly breaks down the connective tissues in tougher cuts of beef, such as a bottom round or chuck roast. This results in beef that is incredibly tender and easy to shred or slice thinly, perfect for sandwiches.
  • Deeply Infused Flavors: Pressure cooking traps all the aromatic steam and spices within the pot, intensifying the flavors of the beef and the accompanying au jus. The result is a concentrated, savory dipping sauce that complements the beef beautifully.
  • One-Pot Convenience: From browning the roast to sautéing the aromatics and then pressure cooking, the entire process can often happen in one pot, minimizing cleanup and making the cooking experience seamless.

Here are the step-by-step instructions to create truly amazing Instant Pot French Dip Sandwiches:

Four process images showing the addition of seasonings like bay leaf, garlic, thyme, and liquids like beef broth, soy sauce, and French onion soup to the Instant Pot
Four process images showing the meat placed back into the Instant Pot, the setting of the pressure cooker cook time, straining the juice, and pouring the au jus into a ramekin
Four process images showing the toasting of rolls in a cast iron skillet, and then placing meat, onions, and cheese onto rolls before broiling

Assembling Your Perfect French Dip Sandwich

Once your beef is perfectly tender and your au jus is rich and ready, the final step is assembling these masterpieces. The warmth of the meat is often enough to gently melt the cheese, but for those who prefer a beautifully browned, extra-gooey topping, a quick broil in the oven is a fantastic optional step. Keep the meat covered and warm until serving to ensure maximum tenderness and to aid in cheese melting without needing the broiler. The contrast of the toasted roll, the savory beef, the sweet caramelized onions, and the creamy provolone all comes together in a symphony of flavors and textures.

Tips for Success and Variations

To truly elevate your Instant Pot French Dip Sandwiches, consider these tips:

  • Choosing Your Roast: While bottom round roast is specified, a chuck roast is an excellent alternative. Its higher fat content can lead to an even more tender and flavorful result. Look for good marbling to ensure a juicy outcome.
  • Slicing vs. Shredding: For a classic French Dip, thin slices are preferred. Allow the roast to cool slightly before slicing against the grain for the most tender pieces. If you prefer a more rustic, pulled-beef style sandwich, shred the beef with two forks.
  • The Perfect Au Jus: The condensed French onion soup, beef broth, and soy sauce create a robust foundation for your au jus. Don’t skip the deglazing step – those browned bits at the bottom of the pot are packed with flavor (fond) that will enrich your dipping sauce. Using a fat separator ensures a cleaner, less greasy au jus.
  • Toasting the Rolls: Toasting your hoagie or French rolls is crucial. It adds a delightful crispness that holds up to the juicy beef and au jus, preventing sogginess. A little butter on the rolls before toasting adds extra flavor and a golden crust.
  • Cheese Choices: While provolone is a classic choice, don’t hesitate to experiment. Swiss cheese offers a slightly nutty flavor that also pairs wonderfully with beef. Other options like mozzarella or even a sharp white cheddar could be interesting variations.

Serve these incredible sandwiches with classic sides like crispy French fries, a fresh green salad, or a creamy coleslaw. They’re also fantastic alongside a bowl of potato chips or a cup of warm tomato soup for an extra layer of comfort.

So, get ready to impress your family and friends (or just treat yourself!) with this simple yet sensational recipe. Find a nicely marbled beef roast, gather your hoagie rolls, and prepare a fabulous batch of Instant Pot French Dip Sandwiches. It’s a meal that promises tender, juicy beef and a rich, savory au jus that will transport you straight back to those beloved diner days, but with the convenience and ease of modern cooking.

Ingredients

  • 1 Tbsp Cooking Oil
  • 1-2 tsp Salt
  • 1 tsp Pepper
  • 3-6 lb Bottom Round Roast (or Chuck roast) cut in half
  • 1 Onion, sliced
  • 1 Bay Leaf
  • 2 cloves Garlic, minced
  • 3 sprigs Fresh Thyme (or 1/4 tsp dried)
  • 2 cups Beef Broth
  • 2 Tbsp Soy Sauce
  • 1 10.75 oz can French Onion Soup, condensed
  • French or Hoagie Rolls
  • Butter, for rolls
  • 3 slices per sandwich Provolone Cheese (or Swiss, etc.)

Instructions

  • Lightly season both halves of the beef roast with salt and pepper, ensuring an even coating. Set the seasoned meat aside while you prepare the pot.
  • Activate the Instant Pot’s Sauté function on normal or high setting. Once the inner pot is hot, add the cooking oil. Carefully place the seasoned roast halves into the hot oil and brown them for several minutes on each side until a rich, golden-brown crust forms. This step is crucial for developing deep flavor. Remove the browned roast to a plate and set it aside.
  • Add the sliced onions to the pot. If the pot appears too dry, you can add a splash of beef broth to help. Sauté the onions, stirring occasionally and scraping the bottom of the pot with a wooden spoon or spatula to release any browned bits (this process is called deglazing), until the onions become soft and translucent.
  • Stir in the bay leaf, minced garlic, and fresh thyme. Continue to sauté for about a minute, allowing the aromatics to become fragrant. Add another splash of broth if the pot becomes too dry to prevent scorching.
  • Pour in the beef broth, soy sauce, and condensed French onion soup. Stir well, ensuring all the ingredients are combined and any remaining browned bits are scraped from the bottom of the pot.
  • Return the browned roast beef halves to the Instant Pot, nesting them into the liquid and onions. Secure the lid on the pot and ensure the steam release knob is set to the Sealing position.
  • Cancel the Sauté function. Select the Pressure Cook (or Manual) button or dial, and adjust the cooking time to 70 minutes on High Pressure. Once the cooking cycle is complete, allow the pot to naturally release pressure for 15 minutes (15 minute Natural Release). This helps keep the meat extra tender.
  • After the 15-minute natural release, carefully turn the steam release knob to the Venting position to quick release any remaining steam/pressure. Exercise caution, as steam will be hot.
  • Open the lid and check the tenderness of the roast. It should be easily pierced with a fork. If it’s not as tender as you’d prefer, replace the lid and pressure cook for an additional 10 minutes, followed by another 10-minute natural release.
  • Carefully remove the tender beef to a cutting board. Allow it to rest for a few minutes before slicing it very thinly against the grain, or shredding it using two forks.
  • Strain the cooking liquid (au jus) through a fine-mesh sieve into a fat separator. Discard the bay leaf and thyme sprigs. Reserve the cooked onions. Once the fat has separated from the au jus, pour the defatted, flavorful liquid into small ramekins or dipping dishes for serving.
  • Prepare your rolls by spreading butter generously on the cut sides. Toast them lightly in a frying pan, toaster oven, or conventional oven until golden brown and slightly crisp. This adds texture and prevents sogginess.
  • Pile a generous amount of the sliced or shredded roast beef onto the toasted roll. Add some of the saved cooked onions, then layer 2-3 slices of provolone cheese (or your preferred cheese) on top of the beef. If desired, place the assembled sandwiches under a broiler for a minute or two until the cheese is bubbling and melted.
  • Serve each delicious Instant Pot French Dip sandwich immediately with a ramekin of the warm, rich au jus for dipping. Enjoy!
