Ingredients

  • 1 lb Lean Ground Beef (or 97% lean ground turkey)
  • 2 ½ Tbsp Homemade Taco Seasoning (or 1 (1 oz) packet store bought)
  • ½ tsp Onion Powder
  • 1 tsp Garlic Powder
  • 16 oz Salsa
  • 1 (4 oz) can Mild Diced Green Chiles (optional)
  • 3 cups Water (or low sodium broth)
  • 1 (15 oz) can Black Beans, drained and rinsed
  • 12 oz Medium Shells (or 12 oz other shape pasta)
  • 1 (15 oz) can Corn Kernels (or 2 cups frozen kernels)
  • 2 cups Cheddar Cheese, shredded

Instructions

Brown the Meat

  1. Turn the Instant Pot to the Sauté setting. When the display reads “Hot,” add your ground beef (or a little olive oil if using ground turkey). Cook, breaking up the meat with a spoon, until it’s mostly browned.
  2. Drain any excess fat from the pot. Add the taco seasoning, onion powder, and garlic powder. Stir everything together and continue cooking until the meat is fully cooked through.
  3. Pour in the salsa, optional green chiles, and water or broth. Stir well, making sure to scrape up any browned bits from the bottom of the pot to prevent a “burn” notice. This step is crucial for deglazing and adding flavor.
  4. Add the drained and rinsed black beans and the pasta to the pot. Gently stir and press the pasta down into the liquid to ensure it’s mostly submerged.
  5. Cancel the Sauté setting.

Pressure Cook

  1. Secure the pressure cooker lid and set the steam release knob to the “Sealing” position.
  2. Press the “Pressure Cook” (or “Manual”) button and use the +/- buttons to select a cooking time of 4 minutes. (For other pasta shapes, set the timer to half the lowest cooking time listed on the pasta package directions for an al dente result).
  3. Once the cooking cycle finishes, turn off the Instant Pot. Allow it to naturally release pressure for 1 minute. This brief natural release helps prevent foaming and pasta breakage.
  4. Carefully perform a controlled Quick Release of the remaining pressure/steam. I recommend starting with short bursts by gently turning the knob, ensuring no sauce spews out. Once safe, turn the knob fully to “Venting” until all steam is released and the float valve drops down.
  5. When the pin in the lid drops down, indicating all pressure is released, open the lid and gently stir the pasta to combine all ingredients.
  6. Stir in the corn kernels. Then, add the shredded cheddar cheese. Stir again until the cheese is fully melted and creamy. If using frozen corn, let the pasta sit for a couple of minutes after stirring to ensure the corn heats through.
  7. Serve immediately with your favorite garnishes, or enjoy it as is!
