Instructions

  1. Prepare your pan: Place 2 corn tortillas at the bottom of your 6-inch round pan, stacking them.
  2. First layer: Sprinkle about 2 tablespoons of shredded cheese over the tortillas. Add ⅓ of the grated zucchini, then sprinkle ⅓ of the prepared spice mixture. Distribute ⅓ of the black beans, ⅓ of the corn kernels, and ⅓ of the salsa evenly over the zucchini.
  3. Add another tortilla: Place one corn tortilla on top of the first layer and gently press down to compact the ingredients.
  4. Second layer: Repeat the filling process. Add another ⅓ of the zucchini, sprinkle ⅓ of the spice mixture, then add ⅓ of the black beans, ⅓ of the corn kernels, and ⅓ of the salsa. Sprinkle ⅓ of the remaining cheese over this layer.
  5. Another tortilla: Place the third corn tortilla on top and gently press down.
  6. Third layer: Add the final ⅓ of the zucchini, sprinkle the remaining ⅓ of the spice mixture, then add the final ⅓ of the black beans, ⅓ of the corn kernels, and ⅓ of the salsa. Sprinkle half of the remaining cheese over this layer (you will reserve the very last bit for later).
  7. Top tortilla: Place the last corn tortilla on top and gently press down. It’s perfectly fine if the tortilla slightly extends above the rim of the pan as it will settle during cooking.
  8. Cover the pan: Cover the entire pan tightly with aluminum foil, crimping the edges well to prevent any moisture from entering during pressure cooking.
  9. Set up Instant Pot: Pour 1 cup of water into the inner liner of your pressure cooker. Place the pan, now covered with foil, onto the trivet with handles, and carefully lower it into the Instant Pot.
