Essential Ingredients for Your Gluten-Free Wreath

Crafting the perfect Gluten-Free Cinnamon Roll Wreath begins with understanding the precise role of each ingredient. Here’s a closer, more detailed look at what you’ll need and why these specific choices are vital for gluten-free baking success, especially when aiming for a tender, bread-like texture. For exact, precise measurements, please refer to the comprehensive recipe card below.

All the dry and wet dough ingredients for the gluten-free cinnamon roll wreath, precisely measured and neatly labeled on a kitchen counter, ready for mixing.

Key Ingredients for the Dough:

  • King Arthur Gluten-Free Bread Flour: This is unequivocally the star ingredient and non-negotiable for achieving the recipe’s intended results. This particular gluten-free bread flour contains a specially processed wheat starch that, while derived from wheat, is certified gluten-free (below 20ppm). This unique characteristic provides the dough with an impressive level of elasticity and structure, making it remarkably easy to handle, roll, shape, and ultimately achieve a texture that closely mimics traditional wheat-based bread. It’s my absolute top recommendation for any sweet breads, rolls, or yeast-based gluten-free dough where a robust structure, excellent rise, and a tender crumb are desired.
  • Whole Milk: Using whole milk (or a dairy-free equivalent, discussed further below) adds a rich depth of flavor and significantly contributes to the dough’s tender crumb. Its higher fat content enriches the dough, resulting in a more luxurious, moist, and flavorful final product. For those seeking a dairy-free option, Elmhurst Unsweetened Cashew Milk is an outstanding substitute. It boasts a fat content strikingly similar to whole milk and, crucially, avoids the added gums or stabilizers often found in many plant-based milks. These additives can sometimes negatively impact the delicate rise and final texture of sensitive gluten-free doughs.
  • Granulated Sugar: Beyond merely sweetening the dough, granulated sugar plays a multifaceted and vital role. It is essential for activating and feeding the instant yeast, ensuring a vigorous and consistent rise. Additionally, it contributes to the beautiful golden-brown crust of the baked rolls and helps tenderize the dough.
  • Instant Yeast: For this specific recipe, instant yeast is the preferred and essential leavening agent. Unlike active dry yeast, instant yeast doesn’t require pre-proofing in warm water before being added to the dry ingredients. It can be mixed directly with your other dry components, significantly streamlining the preparation process and ensuring efficient and consistent leavening for a wonderfully light and airy dough structure.
  • Large Eggs & Salted Butter: These two foundational ingredients are crucial for creating a rich, flavorful, and incredibly tender dough. Eggs add essential moisture, contribute to the dough’s structure, and impart a beautiful golden hue to the baked rolls. Salted butter, on the other hand, contributes extensively to the luxurious taste, deep richness, and exceptionally soft texture. For the best results, always use large, room-temperature eggs for optimal emulsification, and ensure your butter is of good quality. For dairy-free bakers, high-quality vegan butter substitutes perform wonderfully in both the dough and filling, maintaining crucial richness and moisture.
  • Kosher Salt & Baking Powder: Salt is more than just a seasoning; it enhances the overall flavor of the rolls, balancing the sweetness and enriching the taste profile. Baking powder, while the primary leavener is yeast, provides an additional boost or “lift.” It works in conjunction with the yeast to ensure a remarkably light, airy, and fluffy result, preventing the rolls from becoming dense.
The filling ingredients, brown sugar, ground cinnamon, and melted butter, are carefully measured and labeled, prepared for assembling the gluten-free cinnamon roll wreath.

Crafting the Irresistible Cinnamon-Sugar Filling:

  • Melted Butter: The filling process begins with a generous layer of melted butter, which serves as the perfect adhesive. It ensures that the subsequent cinnamon-sugar mixture adheres beautifully and evenly to the rolled-out dough. Make sure it’s fully melted and easily spreadable for uniform coverage. Using salted butter here further complements the sweet spices and enhances the overall flavor. Again, vegan butter is a perfectly suitable alternative for dairy-free versions.
  • Brown Sugar: Brown sugar offers a distinct, deeper, and more complex caramel-like sweetness compared to granulated sugar, providing that characteristic warmth and richness to the cinnamon roll filling. Its inherent moist texture also contributes to creating that wonderfully gooey, irresistible center that everyone loves in a good cinnamon roll.
  • Ground Cinnamon: The star spice of any cinnamon roll! High-quality ground cinnamon is paramount for that classic, inviting aroma and robust, comforting flavor that truly defines a perfect cinnamon roll. Don’t skimp on fresh, fragrant cinnamon for the absolute best taste and aromatic experience.

For the Simple Yet Elegant Glaze:

A final touch of sweetness and shine elevates this wreath into a true masterpiece. The glaze is straightforward yet essential.

  • Powdered Sugar: This superfine sugar forms the smooth, creamy foundation of our sweet glaze, dissolving easily for a perfect consistency.
  • Milk (of choice): Just a small amount of milk (dairy or plant-based) is needed to achieve the ideal pourable consistency for coating the warm rolls. Adjust according to your desired thickness.
  • Vanilla Extract: A hint of pure vanilla extract elevates the overall sweetness and adds another layer of comforting, aromatic flavor to the glaze, complementing the cinnamon beautifully.
  • Optional Garnish: To make your wreath truly holiday-ready and visually stunning, consider adding fresh pomegranate seeds for a burst of jewel-toned color and tartness, or sparkling sugared cranberries for a festive crunch and sweet-tart contrast.

Step-by-Step Guide: How to Bake a Gluten-Free Cinnamon Roll Wreath

Creating this festive Gluten-Free Cinnamon Roll Wreath is an incredibly enjoyable and rewarding process. With these clear, detailed instructions, you’ll be baking like a seasoned pro in no time, even if gluten-free yeast dough is new to you. Below is a comprehensive overview of each step; for a complete, printable guide with all measurements, you can always jump directly to the recipe card.

Preparing the Dough for Optimal Success:

Step-by-step images showing the combination of dry ingredients in a stand mixer, followed by the addition of wet ingredients to form the gluten-free dough.
  • Step 1: Combine Dry Ingredients. Begin by assembling your stand mixer, fitted with the paddle attachment (we’ll explain why the paddle is superior for gluten-free dough later!). Into the mixer bowl, add the King Arthur Gluten-Free Bread Flour, granulated sugar, instant yeast, kosher salt, and baking powder. Mix these dry ingredients on low speed for about 30 seconds to ensure everything is thoroughly and evenly distributed. This prevents pockets of unmixed ingredients.
  • Step 2: Incorporate Wet Ingredients. With your mixer still running on a low speed, gradually and slowly add the room-temperature water, whole milk (or dairy-free alternative), large eggs, and melted butter. This slow addition helps the dry ingredients absorb the liquids evenly. Once all wet ingredients are added, increase the mixer speed to medium and continue to mix vigorously for a full 3 minutes. Do not be alarmed by the dough’s consistency at this stage; it will resemble a thick, somewhat sticky cookie dough rather than a traditional elastic bread dough, which is perfectly normal and expected for gluten-free bread doughs. This mixing time is crucial for properly hydrating the flour and developing the necessary structure.
  • Step 3: Chill the Dough. After mixing, use an oiled rubber spatula to carefully scrape down the sides and bottom of the mixer bowl, gathering the dough into a cohesive mass in the center. Cover the bowl tightly with plastic wrap, ensuring an airtight seal, and then transfer it to the refrigerator to chill for at least 30 minutes. This chilling period is a vital “top tip” for working with gluten-free dough; it significantly firms up the dough, making it much easier to handle, roll out, and shape without excessive sticking or tearing. This step truly sets you up for success in the subsequent shaping process.

Assembling Your Festive Wreath with Precision:

Images demonstrating the chilled dough being rolled out into a large square, then covered with melted butter and sprinkled generously with the cinnamon-sugar filling.
  • Step 4: Prepare the Filling. While your dough is happily chilling in the refrigerator, take a small separate bowl and whisk together your brown sugar and ground cinnamon until they are fully combined and there are no lumps. This aromatic mixture is what gives the cinnamon rolls their signature irresistible flavor and scent.
  • Step 5: Roll Out the Dough. Prepare a clean work surface by lightly dusting it with a small amount of additional gluten-free bread flour. Turn the chilled dough out onto this floured surface and gently shape it into a loose ball. Sprinkle a little more flour over the dough and onto your rolling pin. Then, using steady, even pressure, roll the dough out evenly into a 16×16-inch square. Aim for a consistent thickness across the entire square to ensure even baking of your rolls.
  • Step 6: Add Butter and Cinnamon-Sugar. Now for the delicious layering! Spread the melted butter designated for the filling evenly over the entire surface of the rolled-out dough square, extending almost to the very edges. This buttery layer acts as a crucial binder. Next, generously sprinkle your prepared cinnamon-sugar mixture all over the buttered dough, ensuring every inch is coated for a rich burst of flavor in every bite.

Shaping, Rising, Baking, and Glazing Your Masterpiece:

Sequential images depicting the dough being cut into strips, rolled into individual cinnamon rolls, arranged into a wreath shape, allowed to rise, baked to golden perfection, and finally decorated with glaze and optional garnishes.

Step 7: Create the Individual Cinnamon Rolls. Using a pizza cutter (which is excellent for straight, clean cuts) or a sharp knife, carefully cut the 16×16-inch dough square into sixteen equally sized 1-inch wide strips. Next, take each individual strip and carefully roll it up tightly into a spiral to form a classic cinnamon roll shape. The chilled and firmer dough from earlier steps will make this process much easier and cleaner, helping you achieve neat, consistent rolls.

Step 8: Form the Festive Wreath. Prepare a large baking sheet by lining it with parchment paper or a silicone baking mat. This prevents sticking and makes cleanup a breeze. Arrange your neatly rolled cinnamon rolls on this prepped baking sheet, placing them edge-to-edge in an even circular pattern to form a beautiful wreath shape. Ensure the rolls are touching slightly, as they will expand during both the rising process and baking to create a cohesive, impressive wreath.

Step 9: Allow to Rise. Cover the entire baking sheet containing your cinnamon roll wreath tightly with plastic wrap. This creates a warm, humid environment ideal for yeast activation. Place the covered sheet in a warm, draft-free spot in your kitchen and allow the rolls to rise for 45-60 minutes. During this crucial time, the rolls will visibly puff up, becoming lighter and airier, thanks to the active yeast. This second rise is absolutely critical for their final light, fluffy, and tender texture.

Step 10: Bake to Golden Perfection. While your rolls are rising, preheat your oven to 350°F (175°C). Once preheated and the rolls have completed their rise, gently remove the plastic wrap. Carefully transfer the baking sheet to the preheated oven and bake for 30-35 minutes, or until the rolls achieve a lovely, inviting, slightly golden-brown finish on top and are thoroughly cooked through in the center. The warm, sweet scent filling your kitchen will be absolutely incredible and a true sign of success!

Step 11: Prepare the Glaze and Decorate. While your magnificent cinnamon roll wreath bakes and then cools slightly (allow about 15 minutes after baking), prepare your simple yet essential glaze. In a small bowl, whisk together the powdered sugar, your chosen milk (dairy or plant-based), and vanilla extract until the mixture is completely smooth, lump-free, and has a pourable consistency. Once the wreath has cooled slightly but is still wonderfully warm to the touch, generously pour the prepared glaze over the entire wreath, allowing it to drip beautifully into the crevices and coat each roll. For an extra festive touch and a burst of color, scatter fresh pomegranate seeds or sparkling sugared cranberries over the glaze. Serve your stunning Gluten-Free Cinnamon Roll Wreath immediately and savor every soft, sweet, and comforting bite!

Make-Ahead, Storage, and Freezing Tips for Your Wreath

Efficiently planning ahead for holiday baking can significantly save you precious time and reduce stress, especially during busy seasons. This Gluten-Free Cinnamon Roll Wreath is wonderfully versatile, offering excellent options for preparing it in advance, storing any delicious leftovers, or even freezing portions for future enjoyment. Here’s how to ensure your rolls are perfectly fresh and delicious whenever you’re ready to serve them.

Make-Ahead Instructions (Overnight Preparation):

If your goal is to enjoy freshly baked rolls on Christmas morning or for an early holiday brunch without the rush, you can easily assemble the wreath the day before. Follow the recipe precisely through step 10 (which involves forming the wreath on the baking sheet). At this point, instead of allowing the rolls to rise at room temperature, cover the wreath tightly with several layers of plastic wrap, ensuring an airtight seal. Then, transfer it to the refrigerator for a cold proof of 8–12 hours. This slow, cold proofing not only helps develop a deeper flavor but also makes managing your baking schedule much easier. While 8–12 hours is considered ideal for optimal texture and rise, the dough can be safely refrigerated for up to 16 hours if absolutely necessary; however, avoid exceeding this time to prevent potential over-proofing. The next morning, simply remove the wreath from the refrigerator and let it sit on the counter in a warm spot for 45-60 minutes to allow it to come to room temperature and complete its final rise (mimicking step 11). Once risen, proceed directly with baking (steps 12-14) and glazing. This make-ahead method guarantees warm, fresh-baked rolls with minimal morning effort!

Storage for Leftovers:

Should you be fortunate enough to have any delectable leftovers from your Gluten-Free Cinnamon Roll Wreath (a truly rare occurrence, I assure you!), proper storage is key to maintaining their freshness. Store the wreath in an airtight container or tightly covered with several layers of plastic wrap at room temperature. When stored correctly, the rolls will remain wonderfully fresh, soft, and moist for up to 3 days. To best enjoy them warmed again, a quick reheat in the microwave for 15-30 seconds, or a few minutes in a low oven (around 250°F/120°C), will revive their freshly baked appeal and gooey center.

Freezing for Long-Term Enjoyment:

This recipe is also exceptionally freezer-friendly, allowing you to enjoy homemade Gluten-Free Cinnamon Rolls weeks or even months after baking! Once your wreath is baked, ensure it cools completely to room temperature, but do NOT apply the glaze before freezing. Wrap the un-glazed wreath tightly in several layers of plastic wrap, followed by a layer of heavy-duty aluminum foil, or place it securely in a freezer-safe airtight container. Freeze for up to 2 months for best quality. When you’re ready to serve, thaw the wreath either at room temperature for several hours or overnight in the refrigerator. For the most delicious results, warm the thawed wreath in a preheated oven at 300°F (150°C) for 10-15 minutes, or until it’s heated through and soft. Once warmed, prepare and add the fresh glaze and any desired decorations (like pomegranate seeds or sugared cranberries) just before serving. This is a fantastic and convenient way to have a special breakfast or dessert ready for unexpected guests or busy holiday mornings.

Can This Gluten-Free Cinnamon Roll Wreath Be Made Dairy-Free?

Absolutely! Making this delightful Gluten-Free Cinnamon Roll Wreath dairy-free is quite straightforward, making it an inclusive and delicious treat that more people can enjoy during the holidays. For the milk component, I highly recommend using Elmhurst Unsweetened Cashew Milk. What makes it an ideal substitute? It boasts a fat content that closely resembles whole dairy milk, which is a crucial factor for achieving a rich dough texture and a tender, moist crumb in baked goods. Furthermore, Elmhurst’s cashew milk is commendably free from added gums or stabilizers, common in many other plant-based milks. These additives can sometimes interfere with the delicate rise and final texture of sensitive gluten-free dough, potentially leading to a gummy or dense result. For the butter called for in both the dough mixture and the flavorful filling, simply swap it out for your favorite high-quality vegan butter alternative. Many excellent vegan butter sticks are readily available on the market that perform beautifully in baking, delivering the same luxurious richness and essential moisture without any dairy components.

King Arthur Gluten-Free Bread Flour and Celiac Safety: Understanding Wheat Starch

This is a very common and incredibly important question for anyone managing celiac disease or a severe gluten sensitivity. It’s a point of confusion for many, but rest assured, King Arthur Gluten-Free Bread Flour, despite containing wheat starch, is generally considered safe for individuals with celiac disease. The key distinction lies in the processing: the wheat starch undergoes a highly specialized purification process specifically designed to remove gluten, which is the protein responsible for triggering celiac reactions and symptoms.

This flour is rigorously tested and adheres to stringent gluten-free certification standards, ensuring it consistently contains less than 20 parts per million (ppm) of gluten. This specific threshold is widely accepted as safe for the vast majority of people with celiac disease globally, as determined by food safety authorities. It is, however, crucial to understand that this is different from a wheat allergy. If you suffer from a wheat allergy, this flour would unfortunately not be safe for you to consume, as it still contains components derived from wheat, even though the gluten protein has been removed to safe levels for celiacs. Speaking from personal experience, as someone with celiac disease, I consume this flour regularly without any adverse effects, which allows for the creation of delicious, truly bread-like gluten-free baked goods that were once thought impossible. Always look for clear “gluten-free certified” labeling to confidently confirm a product’s safety for celiac dietary needs.

Stand Mixer Secrets: Dough Hook vs. Paddle Attachment for GF Dough

When it comes to working with traditional wheat-based doughs, the dough hook attachment is typically the indispensable tool for kneading, as its design is optimized to develop the complex gluten strands that give conventional bread its characteristic chewiness and structure. However, for gluten-free bread doughs, which inherently lack these gluten-forming proteins, the dynamics of mixing and kneading completely change. In this specific recipe for our Gluten-Free Cinnamon Roll Wreath, I strongly recommend using the paddle attachment with your stand mixer, rather than the conventional dough hook.

Why the paddle? Gluten-free doughs are often considerably stickier, softer, and notably less elastic than their wheat counterparts. A dough hook can sometimes struggle to properly “knead” or thoroughly mix these unique, softer doughs effectively; it might just push the dough around the bowl, or worse, cause it to climb up and tangle around the hook. The paddle attachment, with its broader surface area and scraping action, is far more effective at incorporating all the ingredients evenly and thoroughly blending the dough into a consistent mass. It creates a smooth, cohesive dough without the risk of overworking it, which is essential for achieving the incredibly light and fluffy texture we aim for in these delicate cinnamon rolls. The paddle ensures that all components, including the King Arthur Gluten-Free Bread Flour, are fully hydrated and seamlessly blended, ultimately leading to a superior and more uniform final product.

Common Gluten-Free Baking Questions Answered

Baking gluten-free can sometimes present unique challenges and bring forth specific questions, particularly for those new to it. Here are a few more insights and answers to common queries to help you master this and other gluten-free recipes:

  • Can I use a different gluten-free flour blend? As extensively emphasized throughout this guide, this recipe is meticulously formulated and tested specifically for King Arthur Gluten-Free Bread Flour. Generic “gluten-free all-purpose flour” blends, or other brands of gluten-free bread flour, often have vastly different compositions (e.g., varying starch-to-flour ratios, different types or amounts of hydrocolloid gums like xanthan gum) and will almost certainly yield vastly different and often disappointing results. This can often lead to a denser, drier, or crumbly product that doesn’t resemble the soft, fluffy rolls intended. For the best outcome and a texture closest to traditional cinnamon rolls, it is crucial to stick with the recommended King Arthur Gluten-Free Bread Flour.
  • My dough is too sticky/too dry – what went wrong? Gluten-free doughs can be particularly sensitive to hydration levels, making precise measurements critical. Ensure you’re measuring your ingredients as accurately as possible, ideally by weight for flour (gram measurements are provided in the recipe card for this reason). Environmental factors like humidity can also significantly affect dough consistency. If your dough feels excessively sticky after chilling, you can add a very small amount of extra gluten-free flour (start with a tablespoon at a time) until it’s manageable. Conversely, if it appears too dry or crumbly, a teaspoon of extra milk or water might help, but often sticking to the recipe’s specified chilling time helps manage stickiness without needing to adjust the flour-to-liquid ratio.
  • How do I ensure a good rise for my gluten-free dough? Achieving a good rise is vital for light, fluffy gluten-free baked goods. Beyond using fresh instant yeast and the correct flour blend, providing a consistently warm, draft-free environment for the dough to rise is paramount. Excellent options include a slightly warmed oven (turned off, with just the oven light on), a dedicated proofing box, or simply finding the warmest, coziest spot in your kitchen. Avoid cold, drafty areas, as these will inhibit yeast activity. Most importantly, don’t rush the rise; allow the full 45-60 minutes, or until the rolls are visibly puffy and have increased significantly in volume. Patience is key!
  • Can I customize the filling with other ingredients? Absolutely! While the classic cinnamon-sugar filling is undeniably divine, feel free to personalize your wreath and make it even more unique. Finely chopped nuts such as pecans or walnuts can add a delightful crunch and nutty flavor. Dried fruits like finely diced cranberries, raisins, or chopped apricots can introduce an extra layer of sweetness and chewiness. Mix these additions into the cinnamon-sugar mixture before sprinkling it onto the buttered dough for an extra special touch, making your holiday wreath truly your own masterpiece.

Ingredients

Dough

  • cups (680g) King Arthur Gluten-Free Bread Flour
  • cup (65g) granulated sugar
  • teaspoons instant yeast (1 packet)
  • 2 teaspoons kosher salt
  • 1 teaspoon baking powder
  • cup (295ml) water, at room temperature
  • 1 cup (236ml) whole milk, at room temperature
  • 2 large eggs
  • 6 tablespoons (85g) butter, melted

Filling

  • 1 cup (213g) brown sugar
  • 2 tablespoons ground cinnamon
  • 8 tablespoons (113g) butter, melted

Glaze

  • 1 cups (120g) powdered sugar
  • 1-2 tablespoons milk of choice
  • ¼ teaspoon vanilla extract
  • Pomegranate seeds or sugared cranberries for garnish (optional)

Instructions

Make the dough:

  • In the bowl of a stand mixer fitted with the paddle attachment, add the gluten-free bread flour, granulated sugar, instant yeast, salt and baking powder. Mix to combine thoroughly for about 30 seconds.
  • With the mixer running on low speed, slowly add the water, milk, eggs, and melted butter. Once all wet ingredients are incorporated, increase the speed to medium and mix for 3 minutes. The dough will have a thick, cookie-dough-like consistency; this is correct for gluten-free bread doughs.
  • Using an oiled rubber spatula, scrape down the bottom and sides of the bowl to gather the dough. Cover the bowl tightly with plastic wrap and refrigerate for 30 minutes. This chilling process makes the dough much easier to handle and roll out.
  • In a small separate bowl, mix together the brown sugar and cinnamon to create your aromatic filling.
  • Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure easy cleanup.
  • Turn the chilled dough out onto a lightly floured surface (using more gluten-free flour). Shape the dough into a ball, sprinkle with a little more flour, then roll it out evenly into a 16×16-inch square. Aim for a consistent thickness.
  • Spread the melted butter for the filling evenly over the entire rolled-out dough square, almost to the edges. Then, generously sprinkle the cinnamon-sugar mixture over the buttered surface, ensuring rich coverage.
  • Using a pizza cutter or a sharp knife, cut the dough square into sixteen 1-inch wide strips.
  • Carefully roll each individual dough strip up into a tight spiral to form a classic cinnamon roll shape. The chilled dough will make this process much easier.
  • Arrange the rolled cinnamon rolls on the prepared baking sheet, placing them edge-to-edge in an even circle to form your festive wreath. Ensure they are touching so they bake together beautifully.
  • Cover the baking sheet loosely with plastic wrap and place it in a warm, draft-free place. Allow the rolls to rise for 45-60 minutes, or until visibly puffy and expanded.
  • Preheat your oven to 350°F (175°C). Bake the wreath for 30-35 minutes, or until the rolls are beautifully golden brown and cooked through.
  • Remove the wreath from the oven and let it cool on the baking sheet for about 15 minutes before applying the glaze.

Make the glaze & serve:

  • In a small bowl, whisk together the powdered sugar, your milk of choice, and vanilla extract until the mixture is completely smooth and free of lumps. Generously pour the prepared glaze over the slightly cooled wreath. For an extra festive touch, garnish with fresh pomegranate seeds or sparkling sugared cranberries if desired. Serve your stunning Gluten-Free Cinnamon Roll Wreath immediately and savor every delicious bite!

Notes

Gluten-Free Bread Flour Important: This gluten-free bread flour is absolutely essential for this gluten-free cinnamon roll wreath to achieve its proper texture and rise. Substituting with other gluten-free flour blends will not yield the same successful results.

Dairy-Free Option: To make this recipe dairy-free, use Elmhurst Unsweetened Cashew milk. It has a similar fat content to whole milk and avoids added gums/stabilizers that could affect dough structure. Replace dairy butter with a high-quality vegan butter alternative.

Make-Ahead (Overnight): Prepare the wreath up through step 10. Cover tightly and refrigerate for 8–12 hours (up to 16 hours if needed, but not longer). The next morning, remove from fridge, let rise on counter for 45-60 minutes (step 11), then proceed with baking (steps 12-14).

Storage: Store any leftover wreath in an airtight container or covered in plastic wrap at room temperature for up to 3 days to maintain freshness.

Freezing Instructions: Bake and cool the wreath completely, but do NOT glaze it. Wrap it tightly in plastic wrap, then foil, or use an airtight container. Freeze for up to 2 months. Thaw at room temperature or in the fridge, then warm in a 300°F (150°C) oven for 10-15 minutes. Add fresh glaze and decorations before serving.
