Why the Instant Pot is Your Best Friend for Corned Beef and Cabbage

Cooking corned beef and cabbage in an Instant Pot transforms a traditionally time-consuming dish into an effortless culinary feat. The pressure cooking method not only drastically reduces cooking time but also infuses the meat with incredible flavor and ensures unparalleled tenderness.

Forget standing over a simmering pot for hours; the Instant Pot handles all the heavy lifting, allowing you to enjoy a hands-off approach to meal preparation. The result is a rich, buttery, and melt-in-your-mouth corned beef brisket that’s impossible to achieve with conventional cooking methods in such a short timeframe. When combined with tender-crisp cabbage, potatoes, and carrots, this becomes a hearty, complete one-pot meal that’s perfect for feeding a crowd or providing delicious leftovers.

Beyond the time-saving benefits, the Instant Pot excels at creating a deeply flavorful broth. While some recipes suggest simple water, our approach combines aromatic ingredients like garlic and onion with a robust liquid base like Guinness beer or beef broth. This creates a more complex and satisfying flavor profile, echoing the richness of a New England Boiled Dinner while retaining the simplicity of Instant Pot cooking.

Choosing Your Brisket: Flat Cut vs. Point Cut

When selecting your corned beef brisket, you’ll typically encounter two main cuts: the flat cut and the point cut. Both will yield delicious results, but they have distinct characteristics that might influence your choice:

  • Flat Cut Brisket: This cut is leaner and more uniform in shape. Its consistent thickness makes for more even cooking and easier slicing, leading to a more aesthetically pleasing presentation. While it does have a layer of fat on one side, it generally contains less overall fat than a point cut. Many home cooks prefer the flat cut for its ease of preparation and elegant finish.
  • Point Cut Brisket: The point cut is typically thicker and has more marbling and connective tissue, which can result in an even richer, more succulent texture. However, it’s less uniform in shape, which can make slicing a bit more challenging. Point cuts are often less expensive, making them an excellent budget-friendly option for those who prioritize flavor and tenderness over perfect presentation. If you’re looking for a slightly fattier, incredibly moist result, the point cut is a fantastic choice.

Ultimately, the choice between flat and point cut depends on your personal preference for fat content, presentation, and budget. Both will become wonderfully tender in the Instant Pot.

Common Questions Answered

What if My Corned Beef Brisket is Frozen?

While thawing your corned beef brisket beforehand is ideal for achieving the most consistent results, you can certainly cook it from frozen in the Instant Pot. The key difference will be the time it takes for your Instant Pot to come up to pressure. A large, frozen piece of meat acts like a giant ice cube, requiring more energy and time for the pot to reach the desired pressure. Rest assured, the cooking time once under pressure will remain the same as for a thawed brisket, and the final outcome will still be incredibly delicious and tender.

If cooking from frozen, be prepared for the pressure-building phase to take an additional 15-25 minutes. Ensure your brisket fits comfortably in the pot, and always confirm that the liquid level is adequate to prevent a burn notice.

Do I Need to Use the Spice Packet?

  • Absolutely! The spice packet that accompanies most corned beef briskets is essential for its distinctive and delicious flavor. This blend, typically a pickling spice, contains a medley of whole spices like mustard seeds, peppercorns, bay leaves, cloves, and allspice. These spices penetrate the meat during the cooking process, imparting that classic, aromatic taste we all associate with corned beef.
  • If your brisket somehow didn’t come with a spice packet, don’t fret! You can easily find a pre-made pickling spice blend at most major grocery stores in the spice aisle. Alternatively, you can create your own blend using common whole spices for a truly custom flavor.

Mastering Instant Pot Corned Beef and Cabbage: A Step-by-Step Guide

Achieving perfectly cooked corned beef and tender vegetables in your Instant Pot is a simple two-step process that guarantees exceptional results. The secret lies in cooking the brisket and the vegetables separately, ensuring neither is overcooked.

Step 1: The Flavorful Brisket Cook

This initial phase is wonderfully straightforward – a true “dump and start” method. You’ll layer the foundational flavors directly into your Instant Pot with minimal effort:

  • Begin by adding your roughly chopped garlic and quartered onion to the bottom of the Instant Pot. These aromatics will create a fragrant base for your broth.
  • Next, place the rinsed corned beef brisket into the pot, ideally with the fat side facing up. As the brisket cooks, the fat will render down, basting the meat and contributing to its rich, moist texture.
  • Generously sprinkle the contents of the spice packet (or your pickling spice blend) over and around the brisket. Try to keep as much as possible on the meat for maximum flavor infusion.
  • Pour in a bottle of Guinness Beer or another stout beer. The dark, malty notes of stout complement the savory beef beautifully, adding depth to the broth. If you prefer not to use beer, low-sodium beef broth or even plain water are excellent substitutes.
  • Finally, add 2-3 cups of water, adjusting the amount based on the size of your brisket (2 cups for smaller, 3 for larger) to ensure adequate liquid without fully submerging the meat. Try to pour the liquid gently to avoid washing off all the spices.
  • Secure the lid on your Instant Pot, ensuring it’s locked into place, and set the steam release knob to the “Sealing” position.
  • Select the “Pressure Cook” or “Manual” setting and set the cooking time to 90 minutes on high pressure.
  • Once the cooking cycle is complete, allow a 15-minute natural pressure release. This crucial step helps the meat reabsorb its juices, resulting in a more tender and moist brisket. After 15 minutes, carefully perform a manual quick release for any remaining steam.
  • Once the float valve drops, open the lid and carefully remove the brisket to a cutting board. Spoon some of the hot cooking liquid over it, cover it loosely with foil, and let it rest for at least 10-15 minutes. This resting period is vital for juicy, tender meat.

Step 2: Perfectly Tender Vegetables

Cooking the vegetables separately is the secret to preventing them from turning into mush. The residual heat and flavor-packed cooking liquid from the brisket will cook them perfectly:

  • While the brisket is resting, add your carrots (cut into 3″ pieces), potatoes (quartered or cut into sixths), and a small head of cabbage (quartered or cut into sixths) directly into the Instant Pot with the flavorful cooking liquid.
  • Close the lid, set the steam release knob to “Sealing,” and cook on high pressure for just 3 minutes.
  • Immediately perform a controlled quick release once the cooking cycle finishes. This prevents the vegetables from overcooking and becoming too soft.

That’s all there is to it! No browning, no extensive prep—just simple, efficient pressure cooking for a fantastic meal.

Serving Your Instant Pot Corned Beef and Cabbage

Once your brisket has rested, slice it against the grain. This is a crucial step for achieving the most tender, easy-to-eat meat. Arranged beautifully on a platter with the vibrant cooked carrots, potatoes, and cabbage, this meal is a feast for the eyes as well as the palate.

Before serving, spoon a generous amount of the rich cooking liquid over the meat and vegetables. This flavorful broth is integral to the dish, keeping everything moist and adding another layer of savory goodness. Don’t forget to serve it with some crusty bread—it’s perfect for soaking up every last drop of that incredible broth!

For an extra touch, consider a dollop of horseradish sauce or a sprinkle of fresh parsley. This dish is hearty enough on its own, but a simple green salad can add a refreshing contrast.

Customization and Storage Tips

Flavor Variations:

  • Beer Alternatives: While Guinness adds a fantastic depth, feel free to experiment with other dark beers, hard cider, or even apple juice for a slightly sweeter note. Beef broth or even vegetable broth are excellent non-alcoholic options.
  • Additional Aromatics: Enhance the flavor further by adding a few bay leaves, a sprig of fresh thyme, or a tablespoon of whole black peppercorns directly to the pot with the brisket.
  • Vegetable Choices: While cabbage, carrots, and potatoes are traditional, feel free to add parsnips, turnips, or even Brussels sprouts during the vegetable cooking phase for extra variety. Ensure they are cut to a similar size to cook evenly.

Storing and Reheating:

Leftover corned beef and cabbage are just as delicious, if not more so, the next day! Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, the cooked brisket can be frozen for up to 2-3 months. Reheat gently in the microwave or on the stovetop with a splash of broth to maintain moisture.

Leftovers also lend themselves well to creative meal ideas. Consider making corned beef hash for breakfast, delicious corned beef sandwiches, or even adding shredded corned beef to a hearty soup.

Equipment

  • 6-quart or larger Electric Pressure Cooker

Ingredients

  • 6 cloves Garlic, roughly chopped
  • 1 Yellow Onion, quartered
  • 2-4 lb Corned Beef Brisket, rinsed (with the spice packet). If larger than 3 lbs, cut in half.
  • 1 12-ounce bottle Guinness Beer, or other Stout Beer (or 2 cups Beef Broth, or Water)
  • 2-3 cups Water (2 for a small brisket, and 3 for a larger one)
  • 3 med Carrots, cut in 3″ pieces
  • 2 med Potatoes, cut into fourths or sixths
  • 1 small head Cabbage, cut in fourths or sixths

Instructions

  1. Add the garlic and onion to the pot.
  2. Place the brisket in the pot with the fat side up.
  3. Sprinkle spice packet over and around the brisket.
  4. Pour the beer (or other liquid), and water in the pot, trying not to wash off all of the spices from the meat.
  5. Place the lid on the pot and lock in place. Set the steam release knob to sealing.
  6. Press the Pressure Cook/Manual button, or dial, and then the +/- button or dial to select 90 minutes, and make sure it is set to High pressure.
  7. When cooking cycle is finished, turn off the pot and let it sit undisturbed for 15 minutes (15 minute natural release). Then manually release the remaining steam (slowly at first, in short bursts so you know only steam will spew from the vent) until the pin in the lid drops down. Then open the lid and use tongs to carefully remove the meat to a dish, spoon some of the hot cooking liquid over it and cover to let it rest.
  8. Add the carrots, potatoes, and cabbage to the pot and close the lid, set it to sealing, and set the cook time for 3 minutes. When done, do a controlled Quick Release (slowly at first, in short bursts so you know only steam will spew from the vent) when the cook cycle is finished.
  9. Slice the brisket against the grain for the most tender and easy to eat meat. Then place the meat and vegetables in a dish with enough cooking liquid poured over to make it nice and juicy.
  10. Serve with some crusty bread to sop up that wonderful broth!
