  • 2 tablespoons freshly squeezed orange juice
  • ½ teaspoon orange zest

Instructions 

  • In the bowl of a stand mixer fitted with the paddle attachment, add the gluten-free bread flour, sugar, instant yeast, salt and baking powder. Mix to combine thoroughly.
  • With the mixer running on low speed, slowly add the warm water, warm milk, eggs and melted butter. Increase the speed to medium and mix for 3 minutes. The dough will have a thick, cookie dough-like consistency; this is perfectly normal for gluten-free yeast dough.
  • Using an oiled rubber spatula, scrape down the bottom and sides of the bowl to ensure all ingredients are fully incorporated, then mix again briefly until well-combined.
  • Form the dough into a ball. Cover the bowl tightly with plastic wrap and refrigerate for 20 minutes. (This essential refrigeration step makes the dough much easier to roll out and work with.)
