Why the Instant Pot is Your Soup-Making Hero
The Instant Pot isn’t just a kitchen gadget; it’s a game-changer for soup lovers. Its ability to create rich, deeply flavored broths and tender meats in a fraction of the time is unparalleled. For this Instant Pot Lemon Chicken Orzo Soup, the pressure cooking environment ensures that the chicken remains incredibly juicy and succulent, while the orzo pasta cooks perfectly without turning mushy. The sealed environment also locks in all the aromatic flavors from the herbs and vegetables, resulting in a more intense and satisfying soup experience. Plus, it’s a one-pot wonder, significantly reducing cleanup time—a benefit everyone can appreciate after a delicious meal.
Choosing Your Chicken for the Best Orzo Soup
The success of any chicken soup often hinges on the quality and cut of chicken used. For this lemon chicken orzo soup, we highly recommend using skinless, boneless chicken thighs. Their inherent fat content ensures they remain incredibly juicy and tender even under pressure, imparting a richer flavor to the broth. However, if chicken breasts are your preference, they can certainly be used. The key is to cut them into slightly larger than bite-sized pieces to prevent them from drying out during the quick cooking process. Whichever you choose, rest assured, your soup will be absolutely delicious and packed with flavor.

Expert Tips for a Flawless Instant Pot Lemon Chicken Orzo Soup
Achieving soup perfection is all about understanding a few key techniques. Here are some insights to elevate your Instant Pot Lemon Chicken Orzo Soup:
- **Chicken Choice and Preparation:** As mentioned, boneless-skinless chicken thighs are excellent for their tenderness and flavor. If opting for chicken breasts, cut them into pieces slightly larger than bite-sized. This simple trick, combined with the Instant Pot’s short cooking time, helps them retain moisture and prevents them from becoming dry or stringy.
- **Orzo Pasta Varieties:** Orzo, a rice-shaped pasta, is not only economical but also versatile. While regular orzo works wonderfully, you can also find whole wheat orzo for a whole-grain alternative. Both cook beautifully in the Instant Pot, absorbing the flavorful broth and adding a delightful texture to the soup. Remember to use uncooked orzo directly in the pot.
- **Lemon’s Freshness Factor:** Fresh lemon zest and juice are crucial for the bright, invigorating flavor profile of this soup. The zest, added before pressure cooking, infuses the broth with deep lemony aromatics, while fresh juice, stirred in at the end, provides a burst of tangy freshness without cooking off its delicate notes. If fresh lemons aren’t available, bottled lemon juice can be used in a pinch, but for the best results, always go fresh.
- **Prepping Your Ingredients (Mise en Place):** The Instant Pot cooks quickly, so having all your vegetables chopped and chicken cut before you start the sautéing process will make the cooking experience smooth and stress-free. This preparation step, known as “mise en place,” is vital for any fast-paced recipe.
- **Controlled Quick Release (CQR):** For soups, especially those with starchy ingredients like orzo, a controlled quick release of pressure is essential. This technique involves releasing steam in short bursts initially, then longer bursts, to prevent any hot liquid from spewing out of the vent. Once you’re sure no sauce is coming out, fully open the vent. This method ensures safety and helps maintain the soup’s integrity.
Freezing and Storage: Enjoying Your Soup Later
This chicken orzo soup is fantastic for meal prep and freezes remarkably well. The main consideration when freezing is the orzo pasta, which tends to soften considerably upon thawing and reheating. If a softer pasta texture doesn’t bother you, feel free to freeze the soup as made. For those who prefer their orzo al dente, an excellent workaround is to freeze portions of the soup broth and chicken without the orzo. Then, when ready to serve, simply thaw, reheat the soup, and cook a fresh batch of orzo separately to stir in.
For shorter-term storage, keep this delicious soup in an airtight container in the refrigerator for up to 3-4 days. It makes for a wonderful grab-and-go lunch or a quick dinner on a busy evening. Reheat gently on the stovetop or in the microwave.

Ingredients
- 2 Tablespoon Olive Oil
- 1 Onion, chopped (about 1 cup)
- 1-2 stalks Celery, chopped (about ½ cup)
- 2 Carrots, chopped (about 1 cup)
- 3 cloves Garlic, minced
- 2 Chicken Thighs or Breasts, skinless/boneless (cut in larger than bite sized pieces)
- 1 sprig Fresh Rosemary (about 1½ tsp chopped leaves)
- ½ teaspoon Kosher Salt (or ¼ tsp table salt) or to taste
- ¼ teaspoon Pepper
- 5 cups Chicken Broth, low sodium
- 1 teaspoon Lemon Zest
- ½ cup Orzo Pasta, uncooked
After Pressure Cooking
- ¼ cup Lemon Juice, fresh
- 2-3 cups Baby Spinach Leaves
Garnish
- Grated Parmesan Cheese
- Lemon Wedges
- Fresh Parsley
Instructions
-
Have all of your ingredients prepped before starting to cook the soup. Veggies chopped, etc.
-
Turn pot on to the Sauté setting. When the pot is hot, add the olive oil. Then add the onions and cook, stirring occasionally, until turning translucent.
-
Add the celery, carrots, and garlic and cook, stirring constantly, for about 20 seconds.
-
Add the chicken, rosemary, salt & pepper. Stir to combine.
-
Add the chicken broth, lemon zest, and orzo pasta. Stir everything together.
-
Place the lid on your Instant Pot and set the steam release knob to the Sealing position.
-
Press the Pressure Cook or Manual button, then use the +/- button to select 3 minutes of cook time.
-
When the cook time is finished, perform a Controlled Quick Release of the steam/pressure. This means releasing steam in short bursts initially, then longer bursts, until no sauce spews out. Then, fully open the vent and let it release completely.
-
Once the float valve (pin) drops down, carefully open the lid. Stir in half of the fresh lemon juice and the baby spinach leaves. Taste the soup and adjust salt if needed. Add the remaining lemon juice if you desire a stronger lemon flavor. (We suggest adding half first in case you find it too lemony; you can always add more!)
-
Serve your Instant Pot Lemon Chicken Orzo Soup hot, garnished with grated Parmesan cheese, fresh parsley, or alongside lemon wedges and crusty bread.
Notes
Storage
Store this soup in an airtight container in the fridge for up to 3-4 days. For freezing, consider freezing the broth and chicken without the orzo, then cooking fresh orzo when reheating to maintain its best texture.
