To Thicken After Cooking:

- Ensure the stainless inner liner is in the base of your Instant Pot. Add the broth, red wine, red wine vinegar, and Worcestershire sauce. Stir these liquids well to combine.
- Add all other ingredients for the stew (chuck roast, onion, garlic, celery, carrots, mushrooms, potatoes, fresh thyme, fresh rosemary, bay leaf, kosher salt, and sugar) to the pot. Stir gently to mix them with the liquid. (Refer to notes if you wish to brown the meat first.)
- Carefully add the tomato paste on top of the other ingredients. Do not stir it in; just let it sit. This helps prevent a “BURN” error.
- Place the lid on the Instant Pot and ensure the sealing vent is set to “Sealing.”
- Press the “Pressure Cook” (or “Manual”) button, then use the +/- buttons to set the cooking time to 35 minutes.
