  • 4 Tbsp Olive Oil (or lard)
  • 2 cups Long Grain White Rice (or Basmati) unrinsed
  • 1 small Onion, diced
  • 2 Jalapeños, deseeded and diced

  • ½ tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Coarse Salt
  • ¼ tsp Pepper
  • ¼ tsp Smoked Paprika
  • 1 ¼ cups Chicken Broth, low sodium

  • 1 (7 oz) can Diced Mild Green Chiles or 2 (4 oz) cans
  • 1 (14 oz) can Diced Tomatoes (fire roasted or regular) with juice
  • 1 cup Tomato Sauce
